Grandma's Date-Filled Cookies image

Relish these date-filled cookies that are baked to perfection-a great dessert to serve at your party.

1 cup butter, softened
1 1/2 cups packed brown sugar
1 teaspoon vanilla
3 eggs
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 3/4 cups chopped dates (from 8-oz bag)
3/4 cup granulated sugar
3/4 cup water

Steps:

  • In large bowl, beat softened butter and brown sugar with electric mixer on medium speed until light and fluffy, scraping bowl occasionally. Beat in vanilla and eggs until well blended. On low speed, beat in flour and baking soda until well combined, scraping bowl occasionally. Dough will be soft. Divide dough into 4 pieces; flatten each piece, and wrap in plastic wrap. Refrigerate about 3 hours or until dough is firm and cold.
  • Meanwhile, in 2-quart saucepan, mix Filling ingredients. Heat to boiling; boil 1 minute, stirring constantly. Reduce heat to low; simmer about 10 minutes, stirring occasionally, until mixture is darkened in color and thickens slightly. Pour filling mixture into small bowl; refrigerate uncovered until ready to use (mixture will thicken as it cools).
  • Heat oven to 375°F. Remove 1 piece of chilled dough from refrigerator, and unwrap. On work surface generously sprinkled with flour, roll out dough with floured rolling pin to 1/8 inch thick. Using floured 2 1/2-inch round cutter, cut out rounds. In half of the rounds, cut out and remove 1-inch round or desired shape of hole from center. Place whole rounds on ungreased cookie sheet.
  • Spoon 1 generous teaspoonful cooled filling onto center of each round; top with cut out dough round. With fingertips or floured fork, press edges of dough to seal. Return dough centers and leftover dough to refrigerator for rerolling.
  • Bake 7 to 9 minutes or until light golden brown. Cool 1 minute; remove from cookie sheet to cooling rack.
  • Meanwhile, repeat steps on assembling and baking with each portion of refrigerated dough, refrigerated leftover dough and remaining filling.
  • Cool cookies completely, about 1 hour. Store covered in airtight container.

2 cups butter or 2 cups margarine, softened
2 cups brown sugar, packed
1 cup milk
4 cups all-purpose flour
4 cups rolled oats
5 teaspoons baking powder
1 teaspoon salt
1/2 lb chopped dates
1/3 cup granulated sugar
2/3 cup water

Steps:

  • Cream butter and sugar together well.
  • Slowly mix in milk.
  • Add remaining ingredients.
  • Mix well.
  • Chill for 1 hour.
  • Roll out fairly thin on lightly floured board.
  • Cut into 2 1/2-inch rounds.
  • Place on ungreased baking sheets.
  • Bake in 350°F oven for 8-10 minutes.
  • Cool.
  • Fill with Date Filling, to form a sandwich.
  • For date filling: combine dates, sugar and water in saucepan.
  • Bring to a boil.
  • Simmer, stirring often, until mushy and thickened.
  • Add more water if too dry, or simmer longer if too runny.
  • Cool and spread between cookies.

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and baking soda; gradually add to creamed mixture and mix well. Refrigerate for 1 hour or until easy to handle., On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a floured 2-1/2-in. cookie cutter. Place 1 in. apart on greased baking sheets. Bake at 350° for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool completely., In a small saucepan, combine filling ingredients. Cook over medium heat for 3 minutes or until thickened and bubbly. Cool to room temperature. Spread on the bottoms of half of the cookies; top with remaining cookies.

1/2 cup granulated sugar
1 cup brown sugar
1 cup butter, room temperature
2 cups rolled oats (quick oats)
2 eggs, at room temperature
1 tsp. vanilla
2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
Date Filling
2 cups chopped dates
1 cup water
1/2 cup granulated sugar

Steps:

  • In a large mixing bowl, or stand mixer fitted with paddle attachment, beat butter, granulated sugar and brown sugar until light and fluffy.
  • Add in eggs and vanilla and beat until well combined.
  • In a small mixing bowl, combine flour, baking powder, baking soda, cinnamon and salt, stirring well to combine.
  • Gradually add flour mixture to butter/sugar mixture and beat on low speed just until combined.
  • and blend on low speed just until combined. The mixture will be thick. Scrape down the sides well with a spatula and stir to combine.
  • Using a heaping tablespoon, shape and roll dough into balls, then press down to flatten. Cookies should be about 2 and 1/2 to 3 inches in diameter.
  • Place on ungreased or parchment paper lined baking sheet.
  • Cookies will still be slightly soft in the middle.
  • Cool on baking sheet for two minutes, then transfer to wire rack and cool.
  • Combine 2 cups of chopped dates, 1 cup water and 1/2 cup of granulated sugar together in a small saucepan.
  • Bring to boil, reduce heat to low and cook for about 5 to 7 minutes, stirring often. Mixture will be thick and smooth. Cool.
  • Turn one of the cookies upside down with the flat side facing up. Spread a layer of the date filling to cover the entire cookie. Place a second cookie over the date filling with the flat side towards the date filling, creating a sandwich cookie. Press very lightly down on the cookies.

2 cups pitted dates, chopped
½ cup water
¼ cup brown sugar
1 tablespoon cider vinegar
½ cup milk
2 cups all-purpose flour
1 teaspoon baking soda
2 ½ cups regular rolled oats
1 ½ cups brown sugar
½ cup melted butter
½ cup butter-flavored shortening (such as Crisco®), melted

Steps:

  • Heat dates, water, and 1/4 cup brown sugar in a saucepan over medium heat; cook until dates are very soft, about 5 minutes. Set aside to cool to room temperature.
  • Stir vinegar into milk in a bowl; set aside to curdle, about 10 minutes.
  • Whisk flour and baking soda together in a large bowl; stir in oats and 1 1/2 cups brown sugar. Stir butter, shortening, and milk mixture into flour mixture; cover dough and refrigerate until firm, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  • Roll dough out on a lightly floured surface about 1/8-inch thick; cut dough circles with a round cookie cutter. Place about 1 tablespoon date mixture in the center of each circle; fold circle in half and press edges together tightly to seal. Place cookies on the prepared baking sheets.

3 cups all-purpose flour
1 tsp baking soda
1 tsp Kosher salt
1 cup butter (at room temperature)
1 cup cane sugar
½ cup of packed light brown sugar
3 eggs (at room temperature)
1 tsp vanilla
1 ½ cups roughly chopped pecans (toasted)
1 ½ cups chopped pitted dates

Steps:

  • Preheat oven to 350ºF. Line baking sheets with parchment paper.
  • In a medium bowl combine the flour, baking soda, and salt.
  • In the bowl of an electric mixer, beat the butter, granulated sugar and brown sugar until well combined, about 2 minutes.
  • Add the eggs one at a time, then add the vanilla. Gradually add the flour mixture. Mix on low speed until the flour is well incorporated. Stir in the pecans and dates.
  • If time permits, cover the dough with plastic and chill for 2 hours or overnight. This allows the cookies to be thicker more chewy.
  • Scoop the chilled dough using a spring-loaded cookie scoop onto the prepared baking sheet, leaving about 2 inches between each cookie. It should make about 48 cookies
  • Bake 8-11 minutes, or until golden brown and cookie is puffed.
  • Cool for 5 minutes before removing to wire racks to cool completely.

1/2 teaspoon baking soda

1 cup water

Steps:

  • Cook the dates in sugar and water, until tender. Cool before using.

1/2 tsp. baking soda
1/4 tsp. salt
1 cup quick oats
1 cup packed brown sugar
1/2 cup sugar
1 cup butter (softened)
2 Tbsp. honey
2 tsp. vanilla extract
2 large eggs
1 1/2 cups diced Sunsweet Dates
1/2 cup pecans (chopped)

Steps:

  • Preheat oven to 300ºF.
  • In a medium bowl, combine flour, soda, salt and oats. Mix with a wire whisk and set aside.
  • In an electric mixer bowl, combine sugars and mix to combine. Add in butter and blend until a creamy, grainy paste.
  • Scrape down sides of bowl then add honey, vanilla and eggs. Mix at medium speed until light and fluffy.
  • Add the flour mixture, dates and pecans and blend at low speed until just combined. Don't overmix!
  • Drop by rounded tablespoons onto ungreased cookie sheets. Bake for 18-22 minutes or until cookies are light golden brown. Immediately transfer cookies with a spatula to a cooling rack. Eat and enjoy!

  • Preheat oven to 350°F.
  • Coarsely chop dates. In a 3-quart saucepan melt butter over low heat and remove pan from heat. Add brown sugar, stirring until smooth, and sift flour, baking soda, and salt over butter mixture. In a cup lightly beat egg and stir into flour mixture with vanilla, oats, and dates until combined well.
  • Onto 2 large ungreased baking sheets spoon slightly rounded tablespoons dough about 2 inches apart. Roll dough into balls with floured hands, returning to sheets. Bake cookies in upper and lower thirds of oven, switching position of sheets halfway through baking, until golden brown, about 18 minutes total. Transfer cookies to racks to cool. Cookies keep in an airtight container about 1 week.
