Do you just love filled cookies but hate the fussiness of making them? These are dropped and you don't have to roll them out. The filling is even dropped on top of the drop. Easy and good.

1 cup shortening
2 cups brown sugar
1/2 cup water
3 1/2 cups flour
1/8 teaspoon cinnamon
1 teaspoon baking soda
2 eggs
1 teaspoon salt
1 teaspoon vanilla
2 cups finely chopped dates
3/4 cup sugar
1/2 cup chopped walnuts
3/4 cup water

Steps:

  • Make the filling first by putting the dates, sugar, and water in a saucepan and cook slowly,stirring constantly till thickened; add the nuts and cool.
  • COOKIE BATTER:.
  • Mix shortening, sugar, and eggs thoroughly.
  • Stir in water and vanilla.
  • Add the flour, salt, soda, and cinnamon; mix well.
  • Drop by teaspoons on ungreased sheet.
  • Place a teaspoon of the date filling on top of the dropped dough and then a tiny bit of dough on top of the filling.
  • Bake till lightly browned and done in a 375 degree oven for 8-10 minutes.

This recipe is from my sister. Our family requests them every holiday season, and it wouldn't be Christmas without them! They are a great addition to your cookie trays and cookie tins to give as gifts to the neighbors, co-workers, friends and family. I hope you will try them, as they truly are fantastic! Word of warning::: These go fast, so make plenty!!! To avoid burning my hands from the hot mixture, I pick up the mixture with a piece of saran wrap, then squeeze it together with my hands and form the log, then roll the log in the coconut. Works great!

1/2 cup butter or 1/2 cup margarine
1 cup sugar
3 cups dates, chopped
1 egg
1 teaspoon vanilla
1/2 cup walnuts, chopped
3 cups Rice Krispies
1 (7 ounce) bag sweetened flaked coconut

Steps:

  • Put butter, sugar, dates, and eggs in a heavy bottomed pan. Bring to boil over medium heat, and stir. When it starts to boil, stir constantly (about 10 minutes) until the liquid starts pulling away from the sides of the pan while you are stirring it, then remove from heat.
  • Add vanilla, walnuts and Rice Krispies, and mix in well.
  • Butter your hands and put enough mixture in the palm of your hand (about 2 T.). Roll into logs with your hands.The logs should be about 3" long by 1/2" wide. (The mixture will be hot, so be careful and work quickly).
  • Roll each log in flaked coconut and place on waxed paper until completely cool. Store in a plastic container with cover.

MIX THE FOLLOWING INGREDIENTS; STIRRING IN WATER AND VANILLA LAST.
3 1/2 c flour
2 c light brown sugar
2 eggs, regular not large size
1 c soft shortening
1 tsp baking soda
1/8 tsp cinnamon
1/2 c water
1 tsp vanilla
TO MAKE THE FILLING:
IN A DOUBLE BOILER, HEAT AND STIR THE FOLLOWING INGREDIENTS:
2 c dates
3/4 c sugar
3/4 c water
1/3 c finely chopped walnuts

Steps:

  • 1. Although they seem time consuming to make, there is something very special about them, soft and sweet!
  • 2. Sift ingredients and mix together dough. Make the filling, stirring until quite thick, add a little more water if needed; and cool a short while. Roll the dough and cut rounds, as small as you like with 1/2 tsp.of the date filling on one layer of dough, cover and pinch the top layer to seal.
  • 3. Grease a baking sheet, and preheat the oven to 350 degrees. They bake for 10 to 12 minutes. Watch them for the last couple of minutes, so they don't get too brown.

1 cup sugar
3/4 cup shortening
1/4 cup butter
4 cups flour
1 teaspoon vanilla
1 teaspoon salt
1 cup brown sugar
3 eggs

1 lb dates, chopped
1/2 cup sugar
1/2 cup water
1 tablespoon cornstarch

Steps:

  • Make the date filling by heating the ingredients in a saucepan until thick, stirring the entire time to prevent scorching.
  • Mix the dough ingredients in the order given and divide into two balls. Roll out each ball to 1/2 inch thick. Spread with the date filling and roll up like a jelly roll. Put the rolls in the refrigerator overnight or for at least several hours.
  • Heat oven to 350 degrees. Working with one roll at a time, slice 1/4" to 1/2" slices and place on a greased baking sheet.
  • Bake 12 - 15 minutes until cookies are a light golden brown. Cool on cookie sheets for several minutes, then move to racks to cool completely.

1 cup dates, pitted and chopped
½ cup white sugar
¾ cup water
½ cup butter, softened
½ cup packed brown sugar
1 ½ cups all-purpose flour
¼ teaspoon baking soda
1 ¼ cups rolled oats
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small saucepan over low heat, mix dates, sugar and 1/2 cup of water. Bring to a boil, and cook for 15 minutes, or until thick and smooth. Set aside to cool.
  • Cream butter and brown sugar together until smooth. Gradually mix in flour, baking soda, and salt. Add the oatmeal and mix well. Stir in 2 to 4 tablespoons of water. Form the dough into a ball and refrigerate for 15 minutes.
  • On a floured surface, roll dough to 1/8 inch thickness and cut into 2 inch rounds. Place 1/2 of the rounds on cookie sheets. Spoon date mixture in the center of each round and top with another round. Press edges firmly together.
  • Bake 15 minutes in the preheated oven, or until browned.

1/2 cup butter
1 cup brown sugar, firmly packed
1 egg, well beaten
2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 (12 ounce) can date filling (or use Date Filling for Hamentaschen)
1/2 cup finely chopped nuts
confectioners' sugar, to taste

Steps:

  • Preheat oven to 400°F.
  • Mix together butter and sugar in a mixing bowl until creamy.
  • Blend in the egg.
  • Sift together the flour, salt and baking soda.
  • Add to the wet mixture and blend until stiff.
  • Shape dough into 4 logs about 10x3-inches each.
  • Place logs on a baking sheet.
  • Using the side of your hand, create a narrow well into the top of each log, running all the way across.
  • Spread about 1/4 cup of the date filling evenly into each hollow.
  • Top the date filling with chopped nuts.
  • Bake the logs for 12-15 minutes, or until set and gloden.
  • Allow to cool until just warm, then slice the baked dough at an angle into 3/4-inch thick cookies.
  • Allow to cool then dust liberally with confectioners sugar.

2 cups pitted dates, chopped
½ cup water
¼ cup brown sugar
1 tablespoon cider vinegar
½ cup milk
2 cups all-purpose flour
1 teaspoon baking soda
2 ½ cups regular rolled oats
1 ½ cups brown sugar
½ cup melted butter
½ cup butter-flavored shortening (such as Crisco®), melted

Steps:

  • Heat dates, water, and 1/4 cup brown sugar in a saucepan over medium heat; cook until dates are very soft, about 5 minutes. Set aside to cool to room temperature.
  • Stir vinegar into milk in a bowl; set aside to curdle, about 10 minutes.
  • Whisk flour and baking soda together in a large bowl; stir in oats and 1 1/2 cups brown sugar. Stir butter, shortening, and milk mixture into flour mixture; cover dough and refrigerate until firm, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  • Roll dough out on a lightly floured surface about 1/8-inch thick; cut dough circles with a round cookie cutter. Place about 1 tablespoon date mixture in the center of each circle; fold circle in half and press edges together tightly to seal. Place cookies on the prepared baking sheets.

4 oz cream cheese (half an 8-oz package), softened
1/2 cup butter, softened
1 tablespoon sugar
1 cup Gold Medal™ all-purpose flour
1 egg white
1 tablespoon water
4 teaspoons coarse white sparkling sugar
1 box (8 oz) chopped dates
1/2 cup water
2 tablespoons sugar
1 teaspoon orange peel
1/2 teaspoon vanilla
1/4 cup chopped walnuts

Steps:

  • Line 2 cookie sheets with cooking parchment paper, set aside.
  • In large bowl, beat cream cheese, butter and 1 tablespoon sugar with electric mixer on medium speed until fluffy. On low speed, gradually beat in flour. On large piece of plastic wrap, form dough into 10x5-inch rectangle. Wrap in plastic wrap; refrigerate until firm, about 1 hour.
  • Meanwhile, in 2-quart saucepan, stir together chopped dates, 1/2 cup water and 2 tablespoons sugar. Heat to boiling. Reduce heat to low; cook 5 to 8 minutes, stirring constantly, until thickened. Cool 5 minutes. Stir in orange peel, vanilla and walnuts; set aside.
  • Heat oven to 325°F. Cut dough in half into 2 squares. On floured surface, roll out 1 square of dough into 10-inch square. Using fluted pastry wheel, trim edges; cut into twenty-five 2-inch squares. Spoon 1 teaspoon date mixture onto center of each 2-inch square. Bring 2 opposite corners of dough together, partially overlapping and covering date mixture. Using fingers dipped in water, press dough to seal. Arrange 1 inch apart on cookie sheets. Repeat with other half of dough.
  • In small bowl, beat egg white and 1 tablespoon water; brush onto dough wraps. Sprinkle with coarse white sparkling sugar.
  • Bake 13 to 15 minutes or until edges begin to turn golden brown. Cool 2 to 3 minutes. Remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.

1 1/2 cups dates, cut up fine (You may use a combination of figs, raisins and dates -l/2 cup each- if you prefer)
1/2 cup sugar
1 tablespoon flour
1/2 cup water
2 teaspoons lemon juice
1/2 cup shortening
1 cup sugar
2 eggs
2 tablespoons heavy cream or 2 tablespoons canned milk
1 teaspoon vanilla
2 1/2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
  • Mix together the shortening, sugar, and eggs.
  • Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
  • Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
  • Chill dough for at least 1 to 2 hours.
  • Roll out dough in thin layers in small batches and cut with round cookie cutter.
  • Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
  • Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

1 tablespoon granulated sugar
2 1/2 tablespoons water
Dash salt
1/2 cup butter or margarine, softened
1/3 cup granulated sugar
1 cup plus 2 tablespoons Gold Medal™ all-purpose flour
3/4 teaspoon ground cinnamon
1/2 teaspoon vanilla
Powdered sugar, if desired

Steps:

  • In 1-quart saucepan, cook dates, 1 tablespoon granulated sugar, the water and salt over medium heat 3 to 5 minutes, stirring constantly, until thickened. Cool completely.
  • In medium bowl, beat butter with electric mixer on medium speed until creamy. Add 1/3 cup granulated sugar; beat until light and fluffy. Add flour, cinnamon and vanilla; beat well. Shape dough into a ball.
  • On lightly floured surface, roll dough to 1/8-inch thickness. Cut with 1 1/2- or 2-inch round cookie cutter. Using 1/2-inch star-shaped cookie cutter, cut out star in center of half of the cookies. Pierce solid cookies with fork. Place cookies on ungreased cookie sheets. Freeze 10 minutes.
  • Heat oven to 300°F. Remove cookies from freezer. Bake 20 to 25 minutes or until very lightly browned. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely.
  • For each sandwich cookie, spread about 1/2 teaspoon date filling on bottom of 1 solid cookie. Top with cutout cookie, bottom side down; gently press together. Sprinkle with powdered sugar.
