WINNING CRANBERRY DATE BARS

Steps:
- Preheat oven to 350°. In a large saucepan, combine cranberries and dates. Cover and cook over low heat until berries pop, 15 minutes, stirring often. Remove from the heat and stir in vanilla; set aside., In a large bowl, combine the flour, oats, brown sugar, baking soda and salt. Stir in butter until crumbly. Press half into an ungreased 13-in. x 9-in. baking pan. Bake 8 minutes. Spoon cranberry mixture over the crust; spread gently. Sprinkle with remaining crumb mixture; pat down gently., Bake until golden brown, 20-25 minutes. Cool on a wire rack. Combine glaze ingredients; drizzle over bars.

CRANBERRY DATE SQUARES
These Date Squares are a classic Canadian treat with the addition of cranberries to the sweet date filling sandwhiched between layers of buttery oat pastry.

Steps:
- Preheat oven to 350°
- Line an 8" square baking pan with parchment paper, or spray with cooking spray
- In a saucepan, combine dates, cranberries, lemon juice and water.
- Bring to a boil, then reduce heat and simmer until thickened, stirring often, about 15 minutes, stirring often
- Set aside to cool
- In a large bowl, combine rolled oats, flour, almond flour, brown sugar, and salt
- With a pastry blender, cut in cubed butter, until a crumbly dough is formed
- Firmly press half of the dough into prepared pan
- Spread cooled filling evenly over the crust
- Sprinkle the remaining dough mixture over the filling, pressing to firm it
- Bake in center of oven until golden, about 45 minutes
- Allow to cool completely before cutting into squares

- Preheat oven to 350°. Place cranberries, dates and water in a saucepan; bring to a boil over medium heat. Reduce heat; simmer, covered, until berries pop, about 15 minutes, stirring occasionally. DATE & CRANBERRY PASTE
This is a Paste to serve with Cheeses much like Quince paste. It has a lovely caramel finish and a slight citrus tang. Great with Sheep or Goats milk Buchette or Chevres.

Steps:
- Chop dates and dried cranberries finely.
- Place the chopped ingredients in a small saucepan on a medium heat and add the lemon juice.
- As the mixture warms up the dates will begin to break down. If the mixture becomes dry add water as necessary.
- Cook for 20 minutes and keep an eye on the water levels. The finished mixture should be reasonably think should have a shine to it. Note that when it cools it will have a thicker consistency.
- Place mixture in a small ramekin and allow to cool. Can be stored in the fridge for up to a week.
- Optionally you can place the mixture in a food processor and blend until smooth.

- In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

- Place dates in large bowl and cover completely with purified water. Soak dates for 2 hours or up to 2 days in fridge. For a quicker version you can use 1 cup boiling hot water.
- Once dates are softened, place dates and soaking water into high powered blender or food processor. NOTE – If you’d like the paste thicker, discard a few tbsp of the water.
- Process until very smooth, scraping down the sides as needed. The thinner the paste, the less sweet it is. To use it as a sugar substitute. I recommend smoothing it out similar to the texture of applesauce so it substitutes well in baking and in marinades. That being said, you can keep the date paste thick for sticky marinades and sauces.
- Store the date paste in an airtight container in the fridge for up to 4 weeks or freeze for up to a year. I store mine in glass container and use it when needed.

- Remove pits from dates if necessary by making a small slit on one side of the date. Open slit and pull out the pit.
- To soften dates, place them in a glass or ceramic bowl and cover with hot water. Heat 2 cups of water in the microwave for about 2 minutes.
- Allow dates to soften for 10-20 minutes. Newly purchased dates are usually soft and supple and will not require much more than 10 minutes.
- Remove dates from the bowl with a slotted spoon and place in a food processor. Add 1/4 cup of the water the dates soaked in.
