BANANA DATE BREAD

Banana Date Bread image

A great banana bread that uses the least amount of oil I've seen compared to some other banana bread recipes. Tastes great all by itself or add a little butter or cream cheese to make it even better. Leave the dates and/or nuts out if that's not your thing.

Provided by Marc R.

Provided by Rasa Malaysia

Categories     Baking Recipes

Time 1h25m

Number Of Ingredients 12

4 (400 g) overripe American bananas, mashed
1 2/3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup melted butter
2 tablespoons sour cream or plain yogurt
2/3 cups brown sugar

Steps:

  • Preheat the oven to 350°F (180°C). Mash the bananas using the back of the spoon or a masher, until mushy.
  • Put the flour, baking powder, baking soda and salt in a medium-sized bowl and, using your hands or a wooden spoon, combine well.
  • In a large bowl, mix the melted butter, sour cream (or plain yogurt) and sugar by hand, with a wooden spoon. Beat until blended, then add the eggs one at a time. Mix well.
  • Stir in the mashed bananas, walnuts, dark rum and vanilla extract.
  • Add the flour mixture, a third at a time, stirring well with the wooden spoon after each batch. Transfer the batter into a 9x5-inch loaf tin and bake in the middle of the oven for 60 - 75 minutes.
  • Insert a toothpick, fine skewer or a cake tester in the center of the banana bread. It should come out clean. Leave in the tin on a rack to cool, about 30 minutes.
  • Slice to ten (10) pieces, serve warm.

100g pecans , 85g/3oz roughly chopped, rest left whole

Add the bananas and 100ml of the date liquid and whizz until smooth. Mix the nuts, dried fruit, polenta, spice and baking powder in a bowl, then add the date purée and rum, and stir until combined.
  • Whisk the egg whites to soft peaks and fold into the cake mix. Tip into the tin (it will be quite full), then top with the remaining pecans and the banana chips and sugar, if using. Bake for 1 hr until golden and crusty and a skewer comes out clean. Cool completely before cutting into slices.

DATE-SWEETENED BANANA BREAD RECIPE

date-sweetened banana bread recipe image

Provided by Pamela Salzman

Yield Makes 1 9X5 loaf

Number Of Ingredients 11

1 cup dried dates (about 7 ounces), pitted
½ cup hot water
4 Tablespoons (1/2 stick) unsalted butter or unrefined coconut oil, at room temperature
2 large eggs, at room temperature
1 Tablespoon pure vanilla extract
2 cups white whole wheat flour, spelt flour or sprouted spelt flour
½ teaspoon fine grain sea salt
1 teaspoon baking soda
½ teaspoon aluminum-free baking powder
3 large, ripe bananas, mashed
½ cup raw walnuts or pecans, coarsely chopped (or fresh blueberries or cranberries)

Steps:

  • Preheat oven to 350 degrees. Grease a 9 x 5 x 3 loaf pan. (Can be lined with parchment if it is aluminum.)
  • Place the dates in the bowl of an electric mixer fitted with the paddle attachment. Add the hot water and allow the dates to soften for at least 10 minutes. (I usually get the rest of my ingredients ready while the dates are softening.)
  • Turn the mixer on low speed and blend until the water has incorporated with the dates. Turn the mixer to medium low speed and beat the dates until a smooth puree forms.
  • Add the butter or coconut oil and beat until well blended. Add the eggs, one at a time, beating well after each addition. Add the vanilla extract and mix.
  • In a medium bowl, combine the flour, baking soda, baking powder and salt. Add to the butter-date mixture and mix until just combined.
  • Fold in the mashed bananas and walnuts.
  • Pour the mixture into the prepared pan and bake for 50-60 minutes (I made it in many different ovens with this range of time), or until a toothpick inserted in the center comes out barely clean. Cool in the pan for 10 minutes. Remove from the pan and cool on a rack.

  • Place the yeast and 1 tbsp sugar into a mug. Add 100ml lukewarm milk and stir. Allow it 5 minutes to dissolve. It should start to bubble up.
  • In a larger bowl, mix the flour with the salt, the sugar, the rum and the mashed bananas. Add the yeast and milk mix, cream and the butter and start kneading.
  • Add more milk or water as needed and knead until it forms a dough for about 10 minutes (laborious a little may sound, I know, but it’s all well worth it in the end). It will get all nice and smooth (ok, maybe with little lumps from the bananas -if those were not properly ripe in particular, but nothing to worry). When dough no longer sticks to the hand it’s indicative that this is actually done. Add the chopped dates, nuts and knead for a further minute or two to incorporate those.
