GRANDMA'S DATE BALLS (X'MAS COOKIES)

Steps:
- In heavy-bottomed,lg.
- saucepan or pot,melt butter.
- Stir in brown sugar and dates.
- Cook til sugar is melted.
- Remove from heat and QUICKLY stir in egg well.
- Return to med.
- heat, stirring constantly, til boiling.
- Boil and stir 1 minute.
- Remove from heat, stir in rest of ingredients, and let cool off til easily handled.
- Roll into balls, about 1" or so, roll in powdered sugar to coat.
- Store airtight.
- (Can chill if desired, but serve room temp.).

- In a saucepan over medium heat combine the butter, dates, egg yolks and sugar. Bring to a boil and cook for 2 minutes. Remove from heat stir in the rice cereal, chopped pecans and vanilla. Stir and let cool.
- When you can handle roll into small balls then roll in confectioners' sugar.

FROSTY DATE BALLS
My mom makes these every Christmas. They are really delicious and so pretty too, like they have snow sprinkled on top. Hence the name, "Frosty" :) These can be thrown together in about 30 minutes and keep in an airtight container for about 1-2 weeks.

Steps:
- Cream butter and 1/3 cup powdered sugar until light and fluffy.
- Mix in water, vanilla, flour, salt, dates, and walnuts.
- Roll into balls a little larger than the size of walnuts and bake on an ungreased baking sheet 2 1/2 inches apart at 300 degrees F for 20 minutes (Till soft but NOT brown.).
- While warm, roll in powdered sugar OR sift powdered sugar over warm cookies.

Steps:
- Melt butter and sugar carefully.
- Add chopped dates and cook until it boils. Take off heat and allow to cool slightly.

- Make sure the dates and pecans are chopped very fine - I recommend using a food processor. Do not use the pre-chopped dates with the coating on them that prevents them from being sticky, or your balls won't stick together.
- In a saucepan over medium low heat, cook the butter, granulated sugar, and the dates until the sugar has fully dissolved.
- Remove from heat and stir in the vanilla extract, pecans, and cereal. Use a non-stick spatula to combine everything. Let the mixture cool for several minutes.
