Gramma's Date Squares image

A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

1 ½ cups rolled oats
1 ½ cups sifted pastry flour
¼ teaspoon salt
¾ teaspoon baking soda
1 cup packed brown sugar
¾ cup butter, softened
¾ pound pitted dates, diced
1 cup water
⅓ cup packed brown sugar
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
  • In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
  • Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

A chewy, oaty tray bake with sticky dates and apples - bound to be a big hit.

225g butter , plus a little extra for greasing
140g cooking apple , peeled, cored and chopped
140g stoned date , chopped
280g light soft brown sugar
175g plain flour
1 tsp bicarbonate of soda
100g porridge oat

Steps:

  • Heat oven to 190C/170C fan/gas 5. Grease an 18cm square tin and line with baking parchment.
  • Tip the apples into a pan with 2 tbsp water. Bring to the boil and simmer on a low heat for 5 mins until tender and slightly pulpy. Add the dates and 50g of the sugar, and cook for a further 5 mins. Take off the heat and break the apples down with the back of a spoon until smooth and well mixed with the dates. Set aside.
  • Gently melt the butter in a saucepan. Mix the flour, bicarb, oats and remaining sugar in a bowl. Pour in the melted butter and stir well until oats are coated.
  • Press half the mixture firmly into the tin, spread the apple mix on top and smooth over. Cover with the remaining oat mixture and press down. Bake for 30-35 mins until golden and firm. Cool in the tin before cutting into squares.

450 g (1 lb) cooking apples
50 g (2 oz) walnuts
100 g (4 oz) stoned dates
100 g (4 oz) wholemeal flour (see notes)
100 g (4 oz) muscovado sugar or jaggery
1 tablespoon honey
25g (1 oz) butter, melted
1 free range egg
Pinch of salt

Steps:

  • Peel, core and dice the apples
  • Chop the dates and crush the walnuts
  • Add all the ingredients to a mixing bowl and mix until combined well
  • Spread the mixture into a lightly greased 20 cm (8") square shallow baking tray
  • Bake for 30 minutes or until golden brown

2 large granny smith apples, peeled,cored and chopped fine
2 tablespoons sugar
2 tablespoons fresh lemon juice
2 tablespoons water
1 1/2 cups pitted dates, chopped
1 cup butter, cut into bits and softened
1 cup packed light brown sugar
1 teaspoon salt
2 1/2 cups all-purpose flour
1 1/2 cups finely chopped walnuts
2 teaspoons cinnamon

Steps:

  • Preheat oven to 375 degrees F.
  • Butter a 13 x 9 inch baking pan.
  • In a saucepan, combine apples, sugar, lemon juice and water and simmer, covered, stirring occasionally, for 5-10 minutes, or until apples are tender.
  • Add dates and simmer, uncovered, stirring and mashing dates, for 3-5 minutes, or until dates are soft and mixture is almost smooth and let puree cool.
  • In a bowl, combine butter, brown sugar, salt, flour, walnuts and cinnamon and blend well.
  • Press half of flour mixture evenly into prepared pan.
  • Spread puree over, and crumble remaining flour mixture over puree, pressing lightly to form an even layer.
  • Bake for 35-40 minutes, or until golden.
  • Let cool completely.
  • Cut into 36 bars.

This was an adopted recipe from Recipe*zaar I made these delicious squares last night, they are really moist and tasty! I did change the recipe and I am happy with the results. I used butter, my two apples measured 1 1/2 cups.

1/2 cup butter or 1/2 cup margarine, softened
3/4 cup sugar
1 egg
1 teaspoon pure vanilla extract
2 apples, peeled finely chopped
1/2 cup nuts, chopped
1/2 cup dates, chopped
1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F.
  • Blend butter and sugar, then beat in egg and vanilla until mixture is light and fluffy
  • Stir in apples, dates and nuts. Set aside.
  • In a separate bowl, combine flour, baking powder and baking soda.
  • Gradually stir flour mixture into the fruit mixture. The batter will be very stiff, but it will mix together nicely, keep stirring!
  • Spread into a greased 9"x9" pan and bake until golden brown. 30 - 45 minutes (I used and 8" pan and it required 45 minutes to bake.

1/4 cup sugar
1 cup water
2 cups chopped peeled apples
1 (8-oz.) pkg. chopped dates
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup margarine or butter
1 1/2 cups rolled oats
1 cup firmly packed brown sugar

Steps:

  • In medium saucepan, combine all filling ingredients; mix well. Bring to a boil. Reduce heat to low; cook about 10 minutes or until thickened, stirring occasionally. Cool slightly.
  • Meanwhile, heat oven to 375°F. Grease and flour 13x9-inch pan. In large bowl, combine flour, baking soda and salt; mix well. With pastry blender or fork, cut in margarine until mixture resembles coarse crumbs. Add oats and brown sugar; mix well.
  • Press 3 cups crumb mixture evenly in greased and floured pan. Spread evenly with filling. Sprinkle with remaining crumb mixture; press lightly.
  • Bake at 375°F. for 18 to 28 minutes or until golden brown. Cool 1 hour or until completely cooled. Cut into bars.

The Elizabethans were the first in Britain to have dates imported. They came by way of Venetian traders from North Africa and satisfied the Elizabethan sweet tooth being used in sauces for meat and fish as well as dishes we would now called tagines.

660g dates
600ml water
1.5tsp vanilla
pinch of salt
916g sliced apples, blended to a fine puree
330g self raising flour
270g oats
3tsp baking powder
2tsp mixed spice
280g Kerrygold baking
300g caster sugar

Steps:

  • Heat oven to 180OC
  • Line and grease a small rectangular pan
  • Make the date filling by adding the dates, water, vanilla and salt to a pan and boiling until the dates are soft. Once the date are soft blend to a puree using the stick blender. Let cool completely.
  • Mix crumble ingredients together using the mixer to a fine crumble. Using some cold water to bind if necessary.
  • Press over ½ of this mixture into the prepared tin in an even layer.
  • Pipe over the cooled date mixture and spread evenly being careful not to lift the crumble mixture below.
  • Repeat with the apple again being careful not to mix it with the date.
  • Top with clusters of the remaining crumble and bake for 45-50mins until golden crisp and set.
  • Let cool completely before cutting into squares.
