This recipe makes a wonderful chili sauce for hot dogs. Just place a grilled hot dog in a bun and top with chili, grated Cheddar cheese, and diced onions. Serve immediately. If halving this recipe, cover the pot for half of the two hour simmer.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add beef broth to ground beef; bring to a boil. Reduce heat to medium-low and simmer until liquid is slightly reduced, about 30 minutes.
- Mix tomatoes with puree, chili powder, paprika, onion powder, garlic powder, salt, and cayenne pepper into ground beef mixture. Simmer, stirring occasionally, until mixture is very thick, about 1 1/2 hours.

- In a skillet, add the butter and onions. Saute until tender.
- Next, add in the garlic and saute for a minute longer.
- Now, add in the ground beef, chili powder, mustard, tomato paste, water, and salt and pepper. Mix together.
- Cook over medium heat for about 20-25 minutes. Turn to simmer and let the mixture continue cooking while you prep the hot dogs.
- Grind up the hot dogs or mince finely.
- Add to the ground beef mixture and let it cook for another 15 minutes to let everything come together.

- Cover the ground beef with water and break up the meat completely. Next, add the beer (if using), diced onion, Worcestershire, ketchup, hot sauce sauce and spices and start on Medium High to bring to a rapid boil.
- Reduce and simmer. You can cook it down faster if needed on a higher temperature, just until most water is reduced. Stir occasionally.
- When water is reduced, add tomato paste to thicken. Stir to incorporate.
- Serve as a hot dog topping.
- Leftover chili sauce freezes well.

- In a large saucepan, brown the ground beef, chopping into small pieces.
- While the beef is browning, run the 2 cans of diced tomatoes, juice and all, through processer (you can use canned crushed tomatoes, but do not use the "concentrated" crushed tomatoes).
- When meat is browned, add the crushed tomatoes, garlic, oregano, basil, cayenne and sugar.
- Bring to a boil and then lower heat to simmer lightly, uncovered, for about 30 minutes, stirring often.
- This makes enough for about 36 hot dogs, more or less, depending on how heavily you load your sandwich. You can freeze half for a later use.

- Beef Base ...Add the beef to a saute pan and cover with 1 cup water and bring to medium heat. Reduce to low and simmer, you aren't browning the meat. Make sure to break up the meat as it cooks - and don't rush it, take your time; the beef basically falls apart in fine crumbles.
- Season ... When the beef is cooked, add the tomato puree and paste, onion, garlic, vinegar, all the seasoning and 1/4 cup of the sugar. You can always add more if you want the sauce a bit sweeter. Add a bit more water to make a nice consistency and simmer on low for 30 minutes. I like a thicker consistency, so I mix a little of the corn starch with water and add to the sauce. Bring to medium high to thicken and then remove from the heat. This freezes well, but make sure to cool completely.
