BEST DARN BEANS EVER
This is my version of a family recipe. You can't go wrong when you serve these beans at a potluck, barbecue, family gathering etc. These are a great accompaniment to burgers and hot dogs. My family even loves these during the holidays with spiral ham and potato salad and or macaroni salad. The secret to this recipe is following the directions and using brand names mentioned. All who try these beans rave about them and typically ask for the recipe.

Steps:
- Place bacon in a Dutch oven over medium-high heat. Saute, turning occasionally, until slightly crispy, 5 to 6 minutes. Drain bacon slices on paper towels; reserve 3 tablespoons bacon grease and discard the rest.
- Add a 1/4 cup of water to the pan and bring to a boil, scraping up all browned bits until water has evaporated. Add the reserved bacon grease, along with the green onions. Saute until softened, 3 to 4 minutes. Stir in brown sugar, about 1/4 cup at a time, cooking until sugar begins to brown, about 5 minutes.
- Stir chili sauce into the pot and cook for 2 to 3 minutes. Pour in pork and beans, kidney beans, and lima beans; stir until beans are well coated in the sauce.
- Return bacon to the pot and stir well to combine. Cover and reduce heat to low. Simmer, stirring occasionally to prevent burning, until flavors combine, 1 1/2 to 2 hours.

- Place dry beans in a large pot. Pour water over top and stir in salt. Cover the pot and allow the beans to soak overnight.
- The next day, drain beans reserving 4 cups water. Rinse beans and set aside.
- Meanwhile, heat oil in a large saucepan over medium-high heat until shimmery. Add diced bacon, garlic, and onion to pan and stir frequently until bacon begins to crisp, about 8-10 minutes.
- Reduce heat to medium and whisk tomato paste, molasses, sugar, vinegar, sauce, and chili powder into mixture. Bring to a simmer, stirring constantly and then stir in rinsed beans and 4 cups reserved water.
- Cover beans and bring to a low boil over medium-high heat. Remove from heat and transfer to a 4-qt slow-cooker. Cook beans on high 4-5 hours until beans are soft and sauce begins to thicken. Keep beans in slow-cooker on "warm" until ready to serve. (beans will thicken up even more the longer they sit)

- The night before, combine the Great Northern Beans and water in a large saucepan. Bring to a boil, and cook for 1 1/2 hours. Pour beans and their liquid into a bowl, cover and refrigerate overnight.
- In the morning, drain off liquid, reserving 1 cup. Pour beans and the reserved liquid into the crock of a slow cooker. Stir in the salt pork, onion, molasses, brown sugar, mustard and pepper. Cover, and cook on Low for 12 to 14 hours. Stir before serving.

I often get asked for the recipe so today I measured! I usually cook them in the oven but today I decided to try my BBQ beans in the crockpot and they came out perfect....

- 1. Fry bacon; crumble and set aside. Brown ground beef in a skillet over medium heat, stirring until crumbly; drain. I added onion and bell pepper to the meat. NOTE: You can saute the onion and bell pepper in bacon grease if you prefer and then add to meat.
- 2. Combine the cooked ground beef mixture with the remaining ingredients (except the bacon) in a crock-pot, mixing well. NOTE: I always spray the crock with PAM for easier cleanup.
- 3. Cook on high for 2 to 2 1/2 hours (or on low for 4 to 5 hours). Add fried bacon last 30 minutes of cooking time.
- 4. NOTE: If you don't have a crockpot, no problem, just cook over a low to medium heat on top or the stove. Or in the oven at 325 degrees for about 1 to 1 1/2 hours (uncovered). Serve with your favorite meat off the grill! Enjoy!
