THE BEST CHILI
There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

Steps:
- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.
BEST DAMN CHILI
After years of adjustments I have found a recipe for all to enjoy. Previous ones were either too hot or too mild, this one even was to the liking of my finance who hates chili.

- Heat oil in a large pot over medium heat; cook and stir onion, bell pepper, Anaheim pepper, jalapeno peppers, and garlic in the hot oil until softened.
- Meanwhile, heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; add Worcestershire sauce and garlic powder. Crumble bouillon cubes over beef and add beer. Continue to cook , scraping any browned bits from the bottom of the skillet, until liquid is hot, about 3 minutes. Stir beef mixture into pepper mixture.
- Stir crushed tomatoes, diced tomatoes, tomato paste, and wine to the beef mixture. Season with chili powder, 2 tablespoons cumin, brown sugar, pepper sauce, basil, paprika, salt, oregano, and black pepper. Bring to a boil and reduce heat to medium-low. Cover and simmer until meat and vegetables are very tender and flavors have developed in the chili, about 90 minutes, stirring occasionally.
- Mix kidney beans into beef and vegetables. Continue to simmer until beans are hot, about 30 minutes more.
- Blend sour cream, cilantro, and remaining 1/2 teaspoon cumin in a food processor until smooth. Serve sour cream mixture with chili.

- In a large saucepan or stockpot, cook ground beef, onion and red pepper until beef is browned. Drain off excess fat.
- Stir in the chili powder, garlic, bay leaf, diced tomatoes, spaghetti sauce, salsa and taco sauce. Lower heat and simmer for 1 1/2 hours, stirring occasionally. Stir in beans just before serving and heat through.

CHILI, PLAIN AND SIMPLE BUT DARN GOOD
This is plain and simple but makes a wonderful chili, you may add in other ingredients if desired, my family likes this topped with cheddar cheese and sour cream then served with recipe#105726 --- I strongly suggest to make this 1-3 days ahead the flavors will intensify and ripen, you will really notice a difference in flavor if made ahead --- all amounts may be adjusted to taste.

- In a large pot brown the ground beef with onion and green bell pepper until no longer pink; drain all fat.
- Add in garlic, oregano and chili flakes; cook stirring until browned (about 12-15 minutes, for the best flavor the meat must be slightly browned).Add in chili powder and cumin; cook stirring for 2 minutes.
- Add in stewed tomatoes, tomato sauce and seasoned salt; bring to a boil over medium heat stirring.
- Reduce heat to low and cook uncovered for 1-1/2 hours stirring occasionally.
- Stir in the beans with their liquid and continue to cook for another 30 minutes, stirring occasionally.
RICH BROOKS' DAMN GOOD CHILI
This is my dad's "famous" chili. It is so meaty and yummy. It does not have any beans in it - like traditional Texas chili. The recipe can be cut in half for smaller families - or make the whole batch and freeze the unused portion or use leftovers for chili-cheese dip. I hope you enjoy it as much as I do!

- Chop the onions, peppers, celery stalk, jalapeno, and mince the garlic clove.
- Heat the vegetable oil on med-high heat and saute the onions, peppers, celery stalk, jalapeno, and garlic until they are soft and onions are translucent.
- Add the beef and continue cooking until the beef is no longer pink, adding salt and pepper to taste.
- When finished cooking, spoon any excess oil from beef mixture and transfer the beef mixture to a soup/chili pot.
- In a separate bowl, mix the chili powder, cumin, garlic salt, hot sauce, salt and pepper, and the beer. Let it sit for a few minutes.
- Add the chili powder mixture from the bowl to the beef mixture in the soup pot.
- Next add the water, stewed tomatoes, tomato sauce, tomato paste, diced green chilies, and bay leaf to the pot.
- Cover and cook on low heat for 3 hours, stirring occasionally.
- I serve it with shredded cheese and a dollop of sour cream. It's also good with Fritos, crackers, or as just plain chili!

DARN GOOD HOMEMADE CHILI
Good flavorful homemade chili. The Hubs can eat chili everyday if I would make it. I'm not much of a chili fan, but I ate 2 bowls of this chili.

- 1. In large soup pot, brown ground chuck, stirring to break meat up, add chopped onion and garlic while meat is browning. Once meat has browned, add spices, green chilies, tomato paste and beans; mix well until paste is incorporated. Add stewed tomatoes, diced tomatoes, tomato sauce and V8 juice; mix well. Let simmer over low heat with lid ajar until desired thickness is achieved. Stir occasionally so the chili doesn't stick to bottom of pan.
- 2. I let simmer for 3-4 hrs while I'm on justapinch, mixing it up with my JAP friends. The longer it simmers the better it will taste.

- Brown ground beef with fresh garlic on medium heat until no longer pink. Drain grease and set meat aside. Sprinkle with ½ tsp. of the salt and the black pepper. If you're using venison instead of beef, heat 2 tbsp. olive oil in pan prior to browning, do not drain as there will be little fat.
- Heat butter in large pot on medium heat until melted and just starting to bubble. Add onion, celery, and green pepper. Cook until soft, about 5-7 minutes.
- Add the remaining 1 tsp. salt and all of the other ingredients with the exception of the beans and cooked meat. Do not add garnish/toppings either...do I need to say that? Better safe than sorry;)
- Bring to a boil over medium high heat. Reduce heat to low and simmer for 1 hour and 15 minutes.

- Step 1Roast the poblano and Anaheim peppers on a broiler pan under the broiler, or over a flame until the skin blisters. Put them into a bowl covered with plastic wrap.
