SOY SAUCE CICKEN
Soy sauce chicken (See Yao Gai/Si Yau Kai / 豉油鸡) is a famous Cantonese cuisine that is easy to prepare. The flavor is exceptional, achieving by using top quality premium soy sauce and poach at a sub boiling temperature.

Steps:
- Clean the chicken whole leg and drain.
- Measure all the ingredients in the Braising liquid section and put it into a pot.
- Saute the ingredients in the Aromatic section until it turns fragrant. Add to the braising liquid.
- Bring the braising liquid to a boil. Put the chicken into the pot and add sufficient water until it covers the chicken.
- Adjust the heat until the liquid is barely boiling. Let the chicken poach in the liquid for twenty minutes.
- After twenty minutes, switch off the stove and cover the pot with a lid. Let the braising liquid cool down slowly while keeping the chicken poaching in it.
- After fifteen minutes of poaching, remove the chicken.

DARK SAUCY CHICKEN
For people who like chicken and are looking for something a little different, this recipe is for you. Brown sugar, soy sauce, and cocoa provide the base for this rather colorful dish. Goes well on a bed of fried rice. Refried beans make a good side dish. Substitute your favorite vegetables for tomatoes and Cheddar cheese for the Swiss (or Gouda if you can afford it).

- In a bowl, mix the brown sugar and soy sauce. Stir in the cocoa, cilantro, sage, and almonds. Set aside.
- In a separate bowl, toss together the green bell pepper, red bell pepper, tomatoes, and Swiss cheese.
- Heat the oil in a skillet over medium heat. Place chicken in the skillet, and cook 15 minutes, until juices run clear. Reduce heat to low, and stir in the brown sugar and soy sauce mixture until heated through. Top with the peppers, tomatoes, and cheese to serve.

- Wash the chicken clean and remember to set aside the piece of chicken fat at the back cavity. Transfer the chicken to a plate and pat dry with a paper towel. Lightly rub the chicken with the salt. This will give the chicken skin a nice sheen. Set it aside.

- Rinse and soak mushrooms to rehydrate. When mushrooms are soft, wash to remove any grit. Trim stalks and soak again until ready to be used.
