The dark 'n stormy is a simple, delightful, and refreshing rum cocktail from Bermuda that mixes Gosling's Black Seal Rum with Barritt's Ginger Beer.

2 ounces dark rum (Gosling's Black Seal)
3 ounces ginger beer (Barritt's)
Optional: 1/2 ounce fresh lime juice
Garnish: lime wedge

Steps:

Gather the ingredients.
Build the ingredients in a highball glass filled with ice cubes, adding the lime juice if using.
Garnish with the lime wedge. Serve and enjoy.

DARK 'N' STORMY

One of the byproducts of producing sugar is molasses. This molasses, once fermented, is distilled into rum, which is why some of the early English-style rums were very molasses-heavy. Gosling's comes from that blackstrap molasses tradition and actually has the trademark for the Dark 'n' Stormy. But for this drink, you can use any sort of dark, demerara-style rum.

Ingredients

2 ounces dark rum, preferably Gosling's brand; you can also add a splash of lighter, Spanish-style rum
1/2 ounce lime juice
3 ounces ginger beer, store-bought, or see Karl Franz Williams's recipe for Ginger Beer
Ice cubes
Splash of sparkling water (optional)

Steps:

In a cocktail shaker, add dark rum, lime juice, and ginger beer. Add ice, seal, and shake. Using a Hawthorne strainer, strain into a tall glass with ice. Top with sparkling water, if desired, and serve.
