- Preheat oven to 350°. Line bottoms of two greased 9-in. round baking pans; grease paper., In a large bowl, beat milk, eggs, oil and vanilla until well blended. In another bowl, whisk flour, sugar, cocoa, baking powder, baking soda and salt; gradually beat into milk mixture., Transfer to prepared pans. Add confectioners' sugar; beat until stiff peaks form., Using a long serrated knife, cut each cake horizontally in half. Place one cake layer on a serving plate. Top with 1-1/2 cups whipped cream. Spread 3/4 cup filling to within 1 in. of edge. Repeat twice. Top with remaining cake layer. Frost top and sides of cake with remaining whipped cream, reserving some to pipe decorations, if desired. This recipe delivers a classic version of the original Black Forest cake with whipped cream frosting and sour cherries.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch, round, cake pans; cover bottoms with waxed paper.
- In a large bowl, combine flour, 2 cups sugar, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and 1 tablespoon vanilla; beat until well blended. Pour batter into prepared pans.
- Bake for 35 minutes, or until wooden toothpick inserted in centers comes out clean. Cool layers in pans on wire racks 10 minutes. Loosen edges, and remove to racks to cool completely.
- Drain cherries, reserving 1/2 cup juice. Combine reserved juice, cherries, 1 cup sugar and cornstarch in a 2 quart saucepan. Cook over low heat until thickened, stirring constantly. Stir in 1 teaspoon vanilla. Cool before using.
- Combine whipping cream and confectioner's sugar in a chilled medium bowl. Beat with an electric mixer at high speed until stiff peaks form.
- With long serrated knife, split each cake layer horizontally in half. Tear one split layer into crumbs; set aside. Reserve 1 1/2 cups Frosting for decorating cake; set aside. Gently brush loose crumbs off top and side of each cake layer with pasty brush or hands. To assemble, place one cake layer on cake plate. Spread with 1 cup frosting; top with 3/4 cup cherry topping. Top with second cake layer; repeat layers of frosting and cherry topping. Top with third cake layer. Frost side of cake. Pat reserved crumbs onto frosting on side of cake. - To make the chocolate cake: Preheat oven to 350°F/180°C. Generously butter two 8-inch cake pans that are at least 2-inches high, and dust with cocoa powder, tapping the ramekins slightly to remove any excess.
- In a large bowl, place flour, cocoa powder, baking powder, baking soda, salt, and sugar. Mix until combined. Set aside.
- In a medium bowl, mix together eggs, oil, vanilla, buttermilk, and water (pour the water slowly so it won't cook the eggs). Whisk until smooth. Add egg mixture into flour mixture and mix until smooth. Don't overbeat - batter will be lumpy at first, but mix gently and eventually stir with a whisk just until smooth. The batter will be thin and liquid. That's ok.
- Scrape batter into prepared pans. Bake cakes for 30-35 minutes (depending on your oven - this might take longer), or until a skewer inserted into the center comes out clean or with just a few moist crumbs. Allow to cool for 10 minutes in the pan before unmolding, then let cakes cool completely on a wire rack. I recommend wrapping the cakes in plastic wrap and refrigerate or freeze them for several hours before cutting them. Cut each cake layer in half horizontally.
- To make the syrup: place drained cherries in a medium bowl, and add to the bowl ¼ cup Kirsch and ½ cup cherry juice from can. Leave to soak at room temperature for 30 minutes or more, then drain cherries in a sieve over a bowl, keeping both the cherries and syrup. Add more cherry juice to the syrup to get 3/4 cup syrup (you won't need the rest of the juice, discard it or save for another use). This will be the soaking syrup for the cake layers.
- To make the whipped cream: Using a stand mixer or hand mixer with a whisk attachment, beat heavy cream and powdered sugar until stiff peaks form. Read more about making perfect whipped cream here.
- Assembly: Place one cake layer on a cake stand or plate and brush with 1/3 of the cherry syrup. Cover top with a thick layer of whipped cream frosting (about 1 cup) and top with 1/3 of the cherries. Repeat twice more with remaining layers and top with the last cake layer (there's no need to soak the top layer with syrup). Frost the top and sides of the cake with whipped cream. If you want, reserve some of the whipped cream, about 1½ cups, for decorating the top. Use a pastry bag with a large flower tip, and pipe rounds around the top. Top with whole cherries. Cover the sides and top with chocolate shavings, if desired. Store cake in the fridge, covered, for up to 4 days.

- Preheat oven to 350F, grease two 8" round baking pans and dust with cocoa powder. Line bottoms with parchment.
- Place all dry ingredients into the bowl of a stand mixer fitted with a paddle attachment. Stir to combine.
- In a medium bowl whisk all wet ingredients (pour hot water in slowly as not to cook the eggs).
- Add wet ingredients to dry and mix on medium for 2-3 mins. Batter will be very thin.
- Pour evenly into prepared pans. I used a kitchen scale to ensure the batter is evenly distributed.
- Bake for 45 mins or until a cake tester comes out mostly clean.
- Cool 10 minutes in the pans then turn out onto a wire rack to cool completely.
- Place sugar and water into a small pot. Stir and bring to a boil. Simmer for 1 min then remove from heat. Stir in cherry liqueur and allow to cool completely.
- Whip cream and powdered sugar until stiff peaks. Ideally in a cold bowl with a cold whisk.
- Melt chocolate over a double boiler or in 20 second bursts in the microwave.
- Using a large offset spatula, spread melted chocolate in a thin layer on a large sheet of parchment.
- Roll up from the short side of the parchment. Place on a baking sheet and refrigerate or freeze until firm.
- Unroll to create chocolate bark.
- Cut each cake layer in half horizontally.
- Place one layer of cake on a cake stand or serving plate. Brush generously with cherry syrup.
- Top with approximately 1 cup whipped cream and spread evenly. Top with approximately 1 cup of cherries and gently press them into the whipped cream. Repeat with remaining layers and frost the outside of the cake.

- Preheat the oven to 355°F (180°C) and line the bottom of a 7-inch round baking tin with parchment paper.
- Mix the flour, corn starch, sugar, cocoa, baking powder and salt in a mixing bowl. Add oil and sparkling water and mix with a whisk to combine, add the baking soda and apple cider vinegar last. Fill the batter into the baking tin and bake for about 25 minutes, or until a toothpick comes out clean. Allow to cool completely, then cut into 3 equal cake layers.
- (Optionally, you can divide the batter in 3 baking tins and bake for about 15 minutes).
- Drain cherries and collect the juice.
- Stir 2-3 tbsp of the cherry juice with sugar and starch. Bring the remaining cherry juice to a boil in a pot, stir in the starch mixture using a whisk and bring to a boil again while stirring constantly. Then remove from the heat, let cool a bit and gently fold in the cherries.
- Beat cream with an electric hand mixer on high speed for about 1 minute, then add cream stabilizer and continue beating until stiff. Refrigerate for at least 1 hour, until ready to use.
- Spread half of the cherry compote evenly on the bottom cake layer, then spread over a thin layer of cream. Top with the second cake layer, spread over the remaining compote followed by another cream layer. Top with the third cake layer and frost the top and sides of the cake with remaining cream (save a small portion of the cream for the decoration and fill into a piping bag).
- Pipe 7 rounds of cream on the top of the cake and place a cherry over each one. Sprinkle with grated chocolate and refrigerate cake for at least 1 hour- before serving.

BLACK FOREST CAKE

- Prepare the cakes according to directions in 2 8 or 9 inch rounds. Allow the cake to cool completely and remove from the pans.
- While the cakes cool, strain the heavy syrup out of the cherries into a small bowl. Use a pastry brush to brush the syrup all over the cake*, making sure you can get into any nooks and crannies. Reserve the left over syrup to drizzle over the cherries and whipped cream.
- While the syrup soaks into the cakes, make the whipped cream frosting. Use a hand mixer to beat the whipped cream in a bowl until soft peaks form. Add the vanilla extract and a pinch of salt. Then dust in the powdered sugar, continuing to beat the cream until medium stiff peaks form no streaks of powdered sugar remain.
- Place one layer of the cake on a cake stand or whatever plate you are planning on serving the cake on. Spread half of the whipped cream onto the cake and top with the all drained cherries (you'll use fresh ones for the top so no need to save any). Drizzle with some of the remaining syrup if desired, making sure you leave some of it for the top. It's okay if this is messy! Repeat with the other cake layer and top with the fresh cherries. Drizzle with the remainder of the syrup and top with chocolate shavings if desired.

- Preheat oven to 350 deg F (Gas mark 4 or 180 deg C).
- Line a 9 inch (23 cm) cake pan with greaseproof or other non-stick paper.
- With an electric mixer, beat the softened butter with sugar until white and fluffy.
- Add one egg at a time, mix well between each egg.
- Add sifted flour, cocoa powder, baking powder, baking soda, vanilla extract and buttermilk, and mix until the batter is smooth.
- Transfer to a cake pan and bake at 350 degrees just until set in the middle, approximately 45-60 minutes. A wooden pick inserted in center should come out with just a few moist crumbs on it. Do not over-bake!
- When cake is cool, use a long serrated knife to cut the cake horizontally into 3 equal layers. It is easier to cut if kept in a refrigerator for a few hours before cutting.
- Filling
- Drain cherry pie filling in a colander to remove most of the thickened juices.
- Beat the whipping cream with confectioners' sugar until it thickens.
- Using a vegetable peeler, shave chocolate; refrigerate until the cake is assembled.

- 1. Preheat oven to 350 In a mixing bowl combine cake mix, pudding packs, eggs, cocoa, mix on low till incorporated, add water
- 2. Prepare 2, 8 inch non stick cake pans with cooking spray and dust with cocoa (not flower).
- 3. Evenly divide cake mix between the pans (about 2 1/2 cups each) smooth and tap lightly to remove trapped bubbles.
- 4. Bake for 20min at 350, turn off heat and continue to bake for 5 min more. Check with tooth pick for doneness and allow to cool completely on elevated rack before removing from pan
- 5. Invert one pan on cake plate top side down. Add layer of frosting and layer of cherry pie filling. Remove 2nd cake and level if needed, add to top of first layer
- 6. Using remaining frosting to coat the sides of cake only, do not frost the top.
- 7. Add sprinkles to side of cake, covering well. Set in fridge to allow frosting to set up before the next step.
- 8. Warm heavy cream in sauce pan over low heat, add semi-sweet chocolate chips and stir until melted and combined.
- 9. Slowly pour over the top and allow tondrizzle down sides a little, but not cover sides of cake
- 10. Set back in fridge and allow ganache to set up a little
- 11. Just prior to serving add several dollops of Reddi whip around the top of cake and add a maraschino cherry to each. Spray reddi whip around base of cake (hint use lots of reddi whip)
