DARK CHOCOLATE POMEGRANATE TRUFFLES



Dark Chocolate Pomegranate Truffles image

1 pomegranate
2 cups dark chocolate chips
1 cup heavy cream
2 teaspoons instant espresso powder
3 tablespoons unsweetened cocoa powder

Steps:

  • Cut pomegranate into segments and remove arils. Set arils aside.
  • Bring heavy cream to a boil. Pour hot cream over dark chocolate, whisking consistently until chocolate is melted evenly. Stir in instant espresso and pomegranate arils.
  • Pour ganache into a bowl and allow to set in the freezer or fridge for at least an hour.
  • Bring to room temperature. With a small scoop, scoop out the chocolate and smooth it into a round ball between your palms. Roll in unsweetened cocoa powder or decorate any other way you'd like.

  • Pour heavy cream and light corn syrup mixture over chocolate and butter and let sit for 2 minutes.
  • Stir together the cream mixture, chocolate and butter to incorporate making sure all chocolate is melted. (If needed place bowl over a smaller pot with hot water (not boiling) to slightly warm and continue to melt chocolate.)
