- Line a baking sheet with a nonstick baking mat. Place a teaspoon melted chocolate on baking mat; top with a small handful of almonds. Drizzle almonds with 1 tablespoon melted chocolate. Repeat process with remaining almonds and chocolate. Transfer to refrigerator and chill until firm.
CHOCOLATE MIXED NUT CLUSTERS
Steps:
- Make a double boiler for melting the chocolate by taking a saucepan and bringing 2 quarts of water to a boil, reduce to a simmer. Place a glass bowl of the same size or slightly smaller inside the simmering water. No water should be in the bowl- it just sits on top of the boiling water.
- Place the milk chocolate chips and the baking chocolate inside the waterless pot and stir until melted.Add in the 2 cups of mixed nuts and stir until completely coated.
- NOTE: If your stove has a "Melt" setting- skip the double broiler and just add chocolate to a medium sized saucepan instead. (NO WATER NEEDED!)
- Scoop the chocolate nut mixture using medium sized spoons onto parchment lined cookie sheets. Place the cookie sheets inside of your fridge until the chocolate has set. Enjoy!
- Place all of the chocolate in a medium sized glass or ceramic bowl. Microwave on high for 1 minute 30 seconds. Let sit 3-4 minutes, in the microwave. Stir gently. Add time in 30 second intervals, letting chocolate sit for 2-3 minutes after each warming segment before stirring. Once chocolate is completely melted, add in the 2 cups of mixed nuts and stir until completely coated.Scoop the chocolate nut mixture using medium sized spoons onto parchment lined cookie sheets.Place the cookie sheets inside of your fridge until the chocolate has set. Steps:
- 1. Line a small baking sheet with waxed paper.
- 2. Place chocolate chips in a 2 cup Pyrex measuring cup and microwave on 50% power for approx 25 seconds - then stir well. Continue doing this until the chocolate chips are almost completely melted - reducing the time as you go. Be careful to not let the chocolate burn.
- 3. Add the nuts and dried cranberries to the melted chocolate and mix well.
- 4. Drop tablespoon fulls of the chocolate mixture onto the waxed paper-covered cookie sheet.
- 5. Place in the fridge for at least 15 minutes. Enjoy.
- 6. I like to store mine in the freezer.

- Melt your chocolate in a fairly large heat proof bowl. This can be done in the microwave or over a double boiler. I opted for the double boiler method because I'm comfortable with it, but as long as the chocolate is melted, you're in good shape.
- Dump the whole pound of roasted peanuts into the chocolate and stir well to ensure that all the nuts are completely covered.
- Place the chocolate covered nuts in small mounds on either a silicone mat or nonstick foil lined baking sheet or sheets. (I used a Tablespoon, this took one and one-half sheet pans. Smaller clusters will likely require more space.)

- Melt your chocolate and palm shortening. I use a microwave or the stove top. It is important when using a microwave not to burn your chocolate and cause it to seize.
