What could be better than an indulgent dessert made from ingredients you have sitting in your pantry and that never needs to go into the oven? These cookies take just minutes of work; most of the time is spent waiting for them to harden into the rich, nutty, chocolaty delights that they are.

2 cups sugar
1/2 cup milk
1 stick (8 tablespoons) unsalted butter
1/4 cup unsweetened cocoa powder
3 cups old-fashioned rolled oats
1 cup smooth peanut butter
1 tablespoon pure vanilla extract
Large pinch kosher salt

Steps:

  • Line a baking sheet with wax paper or parchment.
  • Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute. Remove from the heat. Add the oats, peanut butter, vanilla and salt, and stir to combine.
  • Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes. Refrigerate in an airtight container for up to 3 days.

3 cups quick cooking oats
1 cup sweetened flaked coconut
2 cups white sugar
½ cup unsweetened cocoa powder
½ cup milk
½ cup margarine

Steps:

  • Line a baking sheet with waxed paper.
  • Mix oats and coconut in a large bowl until thoroughly combined.
  • Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden. Store in an airtight container.

These cookies are an old childhood favorite. I changed the ingredients over the years and use Hershey's special dark cocoa and madagascar bourbon vanilla. I also eliminated the nuts (do to a nut allergy in our house) and I use 1% milk. Neither 1% or fat free milk interfere with the texture of these awesome cookies!

1/2 cup unsalted butter
1/2 cup dark unsweetened cocoa
1/2 cup 1% low-fat milk
3 cups oatmeal
1 teaspoon bourbon vanilla

Steps:

  • Mix sugar, butter, dark chocolate cocoa and milk in a saucepan. Bring to a boil quickly. Reduce heat to medium and continue to boil until a small amout of the mix dropped in cold water forms a soft ball, about 3-4 minutes. Remove from heat, stir in vanilla and oatmeal. Spoon onto waxed paper and let cool until hardend.
