HOMEMADE CHOCOLATE GRANOLA BARS



Homemade Chocolate Granola Bars image

Healthy, oat-based and with no added sugar, these chocolate granola bars can be customized to your liking with add-ins for a nutritious gluten-free snack.

2 cups rolled oats (use gluten-free if needed)
1/2 cup dried tart cherries (*or other dried fruit)
1/2 cup chopped nuts (**any blend you like)
1/4 cup unsweetened cacao powder
1/4 teaspoon salt
3/4 cup unsweetened applesauce
1/3 cup maple syrup
1 teaspoon vanilla
1 tablespoon chia seeds (***optional)
1 tablespoon cacao nibs (***optional)

Steps:

  • Preheat oven to 350°F.
  • Line an 8x8 baking dish with parchment paper so that it hangs over the edges.
  • *Optional - spread oats on a baking sheet in a single layer and toast in the oven for 7-10 minutes shaking the pan occasionally until just starting to turn golden brown. Remove from the oven and let cool a few minutes.
  • Transfer the cooled oats to a large bowl and add the dried fruit, nuts, cacao powder and salt, stir to mix.
  • In a medium bowl, whisk together the applesauce, maple syrup and vanilla until smooth.
  • Fold in the chia seeds and cacao nibs if using until combined.
  • Spread the mixture evenly into the prepared baking dish, pressing into the corners and flattening the top.
  • Bake for 30 minutes, remove from oven and place on a rack to cool for 10-15 minutes.
  • Remove the bars from the dish by lifting the edges of the parchment paper up and place directly on the rack until cooled completely.
  • Cut into 8 pieces and store wrapped tightly or in an air tight container. Bars will keep at room temperature for about 5 days or up to 2 weeks in the refrigerator.

2 cups Rolled Oats (, heaped (200 grams))
2 ounces Dark Chocolate (, 75% Cocoa Content (50 grams))
5 tablespoons Honey
3 tablespoons Chia Seeds
2 tablespoons Unsweetened Cocoa Powder

Steps:

  • Preheat the oven to 320F/160C and line a large baking tray with baking paper.
  • Finely chop dark chocolate.
  • In a large mixing bowl combine dry ingredients. At last add honey and stir until the honey is distributed evenly. Spread the mixture onto the baking tray.
  • Bake for 25 minutes or until ready. Make sure to stir the mixture around so it bakes evenly. Do this 3-4 times.
  • Once ready, let it cool before transferring into an air-tight container.
  • Enjoy with yogurt, milk, fruit or on its own!

1/4 cup maple syrup
1/4 cup honey
2 tablespoons reduced-fat peanut butter
1 egg white
1 tablespoon fat-free evaporated milk
1 teaspoon vanilla extract
1 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
2 cups old fashioned oats
1 1/2 cups crisp rice cereal
1/3 cup dark chocolate chips
1/4 cup dried cranberries
1/4 cup chopped walnuts

Steps:

  • Preheat oven to 350°F.
  • Combine first 7 ingredients in a large bowl.
  • Combine next 4 ingredients in another bowl; add to sugar ingredients.
  • Add remaining ingredients.
  • Press into 13x9-inch baking pan coated with cooking spray.
  • Bake 18-20 minutes.
  • Score surface with shallow cuts to make bars.
  • Cool on wire rack then finish cutting into bars.

1 tablespoon raw honey

1/3 cup canola oil

1/4 teaspoon baking soda
1/4 teaspoon cinnamon
1/2 teaspoon vanilla extract or 1/2 teaspoon almond extract

Steps:

  • Preheat oven to 325F.

  • Preheat the oven and prepare a baking sheet. Preheat the oven to 350°F, adjust a rack to the center, and line a baking sheet with parchment paper.
  • Combine all of the ingredients except the chocolate covered espresso beans. In a large mixing bowl, blend the butter with the sugar until smooth. Then mix in the syrup, vanilla, cocoa powder, espresso powder, and salt. Use a large spatula to fold in the almond meal, almonds and oats.
  • Add the granola mixture to the baking sheet. Pour the granola mixture onto the parchment-lined baking sheet and use your hands or a flat-bottomed metal spatula to flatten out the mixture. It should be about ½ inch thick and cover most of the sheet.
  • Roast. Roast in the preheated 350°F oven until the edges become golden brown, about 25 minutes. Remove from the oven and let cool completely on the baking sheet, at least 30 minutes. Use your hands to break the granola apart into small pieces, and set aside.Or, to make granola bars, use a Chef's knife to cut the granola into any size you'd like (without the espresso beans).
