Steps:
- Put the semisweet and white chocolates into 2 separate heatproof medium bowls. Fill 2 medium saucepans with a couple inches of water and bring to a simmer over medium heat. Turn off the heat; set the bowls of chocolate over the water to melt. Stir until smooth. (Alternatively, melt the chocolates in a microwave at half power, for 1 minute, stir and then heat for another minute or until melted.)
- Once the chocolates are melted and smooth, remove from the heat. Line a sheet pan with parchment or waxed paper. Holding the strawberry by the stem, dip the fruit into the dark chocolate, lift and twist slightly, letting any excess chocolate fall back into the bowl. Set strawberries on the parchment paper. Repeat with the rest of the strawberries. Dip a fork in the white chocolate and drizzle the white chocolate over the dipped strawberries.
- Set the strawberries aside until the chocolate sets, about 30 minutes.

Steps:
- Cut a strip of baking parchment and leave to one side. To melt the dark chocolate, fill a small pan with 2cm water and bring to a simmer. Put the chocolate in a heatproof bowl and rest it on top of the pan, ensuring the bowl isn't touching the water. Stir the chocolate to gradually melt it. Or, melt the chocolate in 20 second blasts in the microwave, stirring after each blast until melted. Put the melted chocolate in a small deep bowl.
- Gently hold the strawberries by the leafy top and dip into the chocolate. Tap off any excess chocolate and put on the parchment to set. If you have any leftover chocolate, pour it onto another strip of parchment and leave it to set, it can be used again.
- If you'd like to decorate the strawberries, melt the white and milk chocolate and drizzle lightly over the fruit.

- Wash and fully dry the strawberries. Make sure they are dried really well so the chocolate will stick to them. (I even let mine sit outside the fridge for a while to take the chill off and prevent condensation.)
- Pour chocolate chips into a tempered glass bowl, such as a pyrex, and set aside. (Note: I meted the whole 11.5 ounce bag)
- Turn off the heat to the stove, and place the glass bowl of chocolate chips on top of the hot pot of water, and allow the chocolate to melt gently, stirring occasionally. Be patient, this will take 7 to 10 minutes to melt all the chips.

- Prep the strawberries. Rinse the strawberries in a strainer under cold water if using organic strawberries. For conventional strawberries, place them into a bowl filled with four parts water and one part white vinegar and submerge the strawberries in the water. Let them soak for 20 minutes then rinse them.
- Once the berries are clean then you need to dry them really well by transferring them to a paper towel lined sheet pan and patting them dry. It is very important that they are dry before being dipped in the chocolate so it sticks to the strawberries better.
- Melt the chocolate. You can do so this by placing the chocolate into a microwave safe bowl and microwaving it in 30 second intervals, stirring it in between until 90% of the chocolate is melted.
- Then remove it and temper the remaining chocolate until it is all fully melted and super smooth. To temper you can just stir the chocolate with a rubber spatula or spoon until it is all fully melted.

- Wash the strawberries and thoroughly dry them with a paper towel. The chocolate won't stick to the strawberries if they are wet. Put the strawberries aside.
- Using a double boiler (or see blog post for alternative), melt the chocolate until it's smooth and velvety, stirring constantly. Immediately remove the chocolate from the double boiler.
- Pick the strawberries up by their stems and dip them in the melted chocolate, twisting as you remove them to ensure the chocolate coats all sides. Place the dipped strawberries on a large plate lined with wax paper. Allow the strawberries to cool and harden for 30 minutes. Store in the refrigerator.

- Line a baking sheet with foil. Place chocolate in a heatproof bowl set over a pan of simmering water. (Do not let water boil or bowl touch water.) Cook, stirring occasionally, until chocolate has melted. Carefully remove bowl and let chocolate cool for 5 minutes. Place pistachios in a small bowl.
- One at a time, hold a strawberry by stem and dip into chocolate, coating about two-thirds; allow excess to drip off. Immediately dip into pistachios. Set strawberries in 1 layer on prepared baking sheet. Refrigerate until chocolate is firm, about 10 minutes.
