MICHIGAN CHERRY DARK CHOCOLATE FUDGE
Yummy Easy Fudge adapted from Rachael Ray's famous five minute recipe. This one is even easier - go figure!

Steps:
- Spray a 13 x 9 inch glass baking dish with non-stick butter flavored baking spray and set aside.
- In a non-stick skillet, melt chocolate chips and condensed milk over low heat until just smooth. Stir in vanilla, cherries and nuts and pour into glass baking dish.
- Chill until firm, slice and watch it disappear!

Steps:
- LINE 8-inch-square baking pan with foil.
- COMBINE sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
- STIR in marshmallows, morsels, dried cherries and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan. Refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into 48 pieces.
- VARIATION: For an equally delicious fudge, try substituting 3/4 cup dried berry blend for the cherries.

DARK CHOCOLATE CHERRY CANDIES
Steps:
- LINE baking sheets with wax paper.
- MICROWAVE chocolate in large, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 45 seconds; STIR. If pieces retain some of their original shape, microwave at additional 10- to 15-second intervals, stirring just until melted. Stir in pretzels, cherries and almonds until well coated. Drop by rounded tablespoon onto prepared trays. Refrigerate for 20 minutes. Store in airtight container at room temperature.
- NOTE: Coarsely chopped dried apricots or sweetened dry cranberries can be substituted for the dried cherries.

- In a small bowl, combine cherries and brandy; cover and let soak for 1 hour or until cherries are softened., Place dark chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Stir in extract and soaked cherries with liquid. Cool to room temperature, stirring occasionally. Refrigerate for 1 hour or until firm., Shape into 1-in. balls. Place on baking sheets; cover and refrigerate for at least 1 hour., In a microwave, melt milk chocolate; stir until smooth. Dip half of the balls into milk chocolate, allowing excess to drip off. Place on waxed paper; let stand until set., Melt dark chocolate; stir until smooth. Dip remaining balls into dark chocolate, allowing excess to drip off. Place on waxed paper; let stand until set. Drizzle with melted chocolate and decorate with pearl dust as desired. Store in an airtight container in the refrigerator.

DARK CHOCOLATE CHERRY GELT
Steps:
- Put the chocolate in a double boiler set over simmering water. Melt the chocolate, stirring, until smooth. Stir in the cherry extract.
- Use a liquid measuring cup to pour the chocolate into a coin-shaped chocolate mold, filling all the way to the top. Use a bench scraper to level and remove the excess chocolate. Place the mold flat in the freezer and freeze until solid, about 15 minutes.
- Pop the chocolates face-up onto a piece of parchment paper. Use a small, soft paintbrush to brush the surface of half the coins with the luster dust, making an even coat - this way some are "wrapped" and some are "unwrapped."
