1 cup butter or margarine, softened
3/4 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon vanilla
2 eggs
1 3/4 cups Gold Medal™ all-purpose flour
3/4 cup unsweetened baking cocoa
1 teaspoon salt
1/2 teaspoon baking soda
1 cup semisweet chocolate chips (6 oz)
3/4 cup miniature marshmallows
1/2 cup chopped cashews
3 cups powdered sugar
1/4 cup butter or margarine, softened
1/2 teaspoon vanilla
3 to 4 tablespoons half-and-half or milk
1/4 teaspoon unsweetened baking cocoa

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
  • In large bowl, beat 1 cup butter with electric mixer on medium speed until smooth and creamy. Beat in granulated and brown sugars, 1 teaspoon vanilla and eggs until smooth. On low speed, beat in flour, 3/4 cup cocoa, the salt and baking soda until soft dough forms. Stir in chocolate chips, marshmallows and cashews. Spread mixture in pan.
  • Bake 15 to 20 minutes or until set. Cool completely, about 1 hour.
  • In small bowl, mix all frosting ingredients except cocoa, adding enough of the half-and-half until frosting is smooth and spreadable. Frost brownies. Sprinkle with 1/4 teaspoon cocoa and additional cashews if desired. Let stand 30 minutes or until frosting is set. Cut into 6 rows by 4 rows.

5 oz (140 g) roasted cashews
1/2 cup (60 g) icing (powdered) sugar
2/3 cup (150 g) granulated sugar
2/3 cup (160 g) whole eggs
7.4 oz (210 g) butter
7.4 oz (210 g) dark chocolate 60% cacao
1 pinch of salt
1/2 teaspoon baking powder
2/3 cup (85 g) all-purpose flour
2.5 oz (70 g) caramelized cashews
3.4 oz (95 g) dark chocolate 60% cacao
1.7 oz (50 g) caramelized cashews

Steps:

  • Preheat oven to 335 F/170 C.
  • place nuts and icing (powdered) sugar in a non-stick frying pan and bring over medium heat. Using a wooden spatula, mix until the sugar is caramelized. Transfer cashews on parchment paper and let cool.
  • melt butter with the first part of dark chocolate (210 g) in a bain-marie (water bath) and mix until homogenous. Let it cool down. Whisk eggs and sugar with an electric mixer (or stand mixer) until the mixture becomes whitish. Slow down the speed of the mixer and add melted butter/chocolate mixture and continue to whisk. Add salt, sifted flour and baking powder and mixed again. Finish with adding whole caramelized cashew nuts and the second part of the chocolate cut into medium-sized pieces.
  • Butter and flour a 7 x 7 inch/ 18 x 18 cm square cake ring. Place it on a baking sheet lined with parchment. Pour the brownie dough into the ring. Generously sprinkle the top with chopped caramelized cashews.
  • Bake for 40 to 50 minutes, depending upon the oven. Let the brownie cool down and remove it from the ring.

1 cup All Purpose Flour ((120 grams ))
1 tsp Baking Soda
1/4 tsp Salt
1 3/4 cup Sugar ((350 grams ))
1 cup Oil ((240 ml ))
3/4 cup Cocoa Powder ((80 grams ))
4 Eggs
1 tbsp Vanilla Essence
1 cup Cashew nuts (chopped )
1 cup Milk Chocolate (chopped chocolate chips can be used)

Steps:

  • Preheat oven to 180 Degree C.
  • Take flour, baking soda and salt in a bowl. Mix well, set aside.
  • In a sauce pan, take oil and heat till it gets warm. Add in sugar and mix well..
  • Now add in cocoa powder and mix well.
  • Add in the flour mix and fold gently. Once it is mixed lightly, add in couple of eggs and mix well. Add in another couple of eggs and fold again.
  • Add in vanilla essence and fold gently.
  • Add in cashews and chocolate pieces and fold gently.
  • Line a baking pan with foil and grease it well with oil. Pour in the batter and spread it.
  • Bake it for 40 to 45 mins.
  • Remove it and let it cool gently.
  • Now invert the cake pan and peel off the foil. Now cut it into small pieces and serve.

My sister-in-law dubbed me the "dessert queen" because of treats like this that I take to our family get-togethers. The brownies have a fudge-like texture and a rich cream cheese topping. Cashews and a hot fudge swirl make these pretty bars special.

1 package fudge brownie mix (13-inch x 9-inch pan size)
1/3 cup water
1/4 cup canola oil
1 large egg
1 cup semisweet chocolate chips
TOPPING:
2 packages (8 ounces each) cream cheese, softened
1-1/2 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup salted cashews, coarsely chopped
1/2 cup hot fudge ice cream topping, warmed

Steps:

  • In a large bowl, combine the brownie mix, water, oil and egg. Stir in chips. Spread into a greased 13x9-in. baking pan. Bake at 350° for 25-27 minutes or until a toothpick inserted in the center comes out clean (do not overbake). Cool on a wire rack. , For topping, in a large bowl, beat the cream cheese, confectioners' sugar and vanilla until smooth. Spread over brownies. Sprinkle with cashews; drizzle with hot fudge topping. 1 tablespoon instant coffee granules
2 teaspoons vanilla extract

FROSTING:
1/4 butter, melted
3 tablespoons sour cream
