Darjeeling Cranberry, Ginger and Orange Tea Loaf (Fat-Free) image

A delectable and easy Tea Loaf with aromatic and fruity flavours! The beauty of these British and Irish style Tea Loaves or Brack, is that they are nearly always fat-free, making them a tasty snack to have with an afternoon cuppa, and without the guilt! I have added ginger for a subtle kick, and I have discovered that if you soak your fruit in Darjeeling tea, it lends a wonderful flavour to the fruit, you can use any tea of your choice however. Remember to start this Tea Loaf off the night before you wish to bake it, as the fruit steeps in the tea overnight, making them plump and moist. This Tea Loaf freezes well (in slices) and it will stay fresh for a week in an airtight tin. NB: A note on ingredient conversions to US cups; The conversion rate to US cups is very dependant on what type of sugar and flour you use - there is a different rate for white flour and wholemeal flour, as there is for caster (superfine) sugar and granulated sugar. We use weights for measurements, and US cups rely on volume!

8 ounces sultanas
2 ounces currants
2 ounces raisins
2 ounces semi dried cranberries
2 ounces stem ginger in syrup, drained and chopped finely or 2 ounces glace ginger, chopped finely
1 largeorange, zest or 1 tablespoon dried orange peel
3 ounces brown sugar
1/4 pint hot darjeeling tea or 1/4 pint hot brewed tea, of your choice
1 egg, size 3, medium
1 teaspoon ground ginger
8 ounces self raising flour

Steps:

  • NIGHT BEFORE BAKING:.
  • Place all of the dried fruit, including the orange zest and ginger, with the sugar into a large mixing bowl, and pour over the hot tea, give it a good stir - cover with a clean tea towel and leave to steep overnight.
  • BAKING THE TEA LOAF:.
  • Pre-heat oven to 160C/325F/Gas Mark 3 and grease and line a 2 lb (1 kg) loaf tin.
  • Add the beaten egg to the fruit mixture and mix well, then add the ground ginger.
  • Gradually add the flour and stir the mixture well, ensuring there are no lumps of flour remaining.
  • Pour the mixture into the prepared loaf tin and bake for 1 and 1/2 to 1 and 3/4 hours, or until the loaf is firm and a skewer comes out clean when testing.
  • If the loaf appears to be browning too quickly, place on the bottom shelf and cover with a sheet of baking paper.
  • Allow the loaf to cool slightly, and gently remove to a wire cooling rack.
  • Store in an airtight tin for up to 1 week, or freeze slices of the tea loaf with greaseproof paper in between each slice.
  • This is wonderful when buttered or toasted!
  • NB: You must use HOT tea!

A basic tea loaf or fruit cake makes a great snack and this one is possibly the simplest cake you will ever make. You will need a 2lb loaf tin and 2lb tin loaf liner

380 g dried mixed fruit (Fairtrade)
50 g golden caster sugar (Fairtrade)
1 egg (organic, large, beaten)
225 g self-raising flour (organic)
150 ml hot tea (traditional black tea, Fairtrade, )

Steps:

  • Place the dried mixed fruit & sugar in a large bowl and pour over enough hot tea to just about cover the fruit. Give it a quick stir to dissolve the sugar, cover with a plate and leave overnight.
  • Pre-heat the oven to 170°C/340°F/gas mark 3. Add the beaten egg and sieve in the flour. Fold the mixture together with a spoon until it is all mixed in.
  • Transfer the mixture to a standard 2lb loaf tin, lined with a standard 2lb loaf tin liner. Place on the middle shelf of the oven and cook for 1 hour and 10 minutes. To test if it's ready, insert a fork into the middle of the cake, if the fork is clean - ie no mixture is stuck to it, it is cooked through. You may need an extra 5 minutes.
  • Leave it on a wire rack to cool. Cut into slices to serve. It's also lovely spread with butter.

2 1/3 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1 cup sugar (plus more for coating)
3/4 cup shortening
1 egg
1/4 cup molasses
1/2 cup whole berry cranberry sauce

Steps:

  • Combine everything except cranberry sauce. Blend well.
  • Stir in cranberries, mixing thoroughly.
  • Chill dough at least one hour.
  • Shape into balls. Coat with additional sugar. Put on ungreased cookie sheets.
  • Bake at 375 for 12-15 min; watch them because time will depend on the size. Recipe calls for a "rounded teaspoon". I usually make my cookies bigger than that.
  • When done, remove from cookie sheet immediately.

¼ cup warm water (110 degrees F (43 degrees C))
1 (.25 ounce) package rapid-rise yeast
¾ cup warm milk (115 degrees F (46 degrees C))
1 egg
¼ cup orange marmalade
2 tablespoons butter, melted
3 cups bread flour
½ cup old-fashioned oats
1 teaspoon salt
1 ½ cups chopped fresh cranberries
6 tablespoons brown sugar
6 tablespoons water
6 tablespoons chopped walnuts
1 ½ tablespoons butter
1 ½ tablespoons lemon juice
1 egg white
1 teaspoon water
½ cup powdered sugar
1 teaspoon frozen orange juice concentrate
1 teaspoon water, or as needed

Steps:

  • Combine warm water and yeast in a large bowl; stir to dissolve. Add warm milk, egg, marmalade, and butter. Stir to combine.
  • Mix flour, oats, and salt together in a separate bowl. Add to yeast mixture and stir until moistened. Knead dough until smooth and elastic, 6 to 8 minutes. Place dough in a greased bowl, turning to coat both sides. Cover and let rise until doubled, about 30 minutes.
  • Meanwhile, combine cranberries, brown sugar, and water in a small saucepan. Cook over medium heat until cranberries begin to soften, 10 to 15 minutes. Remove from heat; stir in walnuts, butter, and lemon juice. Let cool.
  • Punch dough down. Roll dough into a 10x20-inch rectangle on a floured surface.
  • Whisk egg white and water together. Brush lightly over the dough. Spread cranberry filling over the dough, leaving a 1-inch border on all sides. Roll up tightly, starting from a long edge. Seal edges and cut off any tapered sides with no filling.
  • Transfer roll to a large square baking sheet. Join ends together to form a ring. Use sharp kitchen shears to make cuts at 1-inch intervals, cutting 2/3 of the way through the dough. Twist each slice gently to expose the swirled filling. Gently shape dough into a perfect ring. Cover and let rise until doubled, 20 to 25 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until golden brown, about 25 minutes. Cool on the baking sheet for 20 minutes before removing to a wire rack. Let cool completely.
  • Stir powdered sugar and orange juice concentrate together in a small bowl. Add enough water to reach a glaze-like consistency. Drizzle glaze over tea ring. Allow glaze to set before slicing.

1/2 cup unsweetened orange juice
1/3 cup evaporated milk
3 tablespoons canola oil
1 large egg
1 egg white
1 tablespoon orange zest (zest of 1 orange)
1 teaspoon vanilla
2 cups flour
1 cup Splenda granular
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/3 cups fresh cranberries, chopped
1/2 cup pecans, chopped (optional)
1/4 cup light orange juice
1/4 cup Splenda granular
1 1/2 ounces low-fat cream cheese

Steps:

  • Preheat oven to 350 degrees. Coat 9x5 inch loaf pan with nonstick cooking spray.
  • In a medium bowl, stir together orange juice, milk, oil, eggs, zest and vanilla. Set aside.
  • In a large bowl, combine flour, Splenda, baking powder, baking soda, salt, nuts and cranberries. Stir; make a well and add the liquid mixture, stirring just until blended.
  • Spoon into prepared pan and smooth.
  • Bake for 50 minutes or until a toothpick inserted into the middle of the loaf comes out dry.
  • While bread is baking prepare Glaze: Combine orange juice and Splenda in a small saucepan. Place on medium heat and reduce by one half. Stir in cream cheese until melted. Brush glaze onto warm loaf immediately after removing from oven. Cool on rack for 15 minutes; then remove from pan.
  • *Gift loaf variation: Makes 2-3 small loaves - fill mini loaf pans 2/3 full and bake for 30-35 minutes.
