Steps:
- Preheat oven to 325°F.
- Remove rind from ham.
- Place ham on rack in open roasting pan, fat side up.
- Insert meat thermometer with bulb in thickest part away from fat or bone.
- Roast ham in oven about 3 hours.
- Drain pineapple; reserve syrup.
- In small saucepan, combine syrup, preserves, mustard and allspice.
- Bring to a boil; continue boiling, stirring occasionally, 10 minutes.
- Remove ham from oven, but keep oven hot.
- Stud ham with cloves; brush with glaze.
- Using wooden picks, secure pineapple and cherries to ham.
- Brush again with glaze.
- Return ham to oven.
- Roast 30 minutes longer or until thermometer registers 160°F (about 25 minutes per pound total cooking time).
- Brush with glaze 15 minutes before done.
- Let ham stand 20 minutes before slicing.
PRIZE-WINNING POLYNESIAN PORK OVER RICE
I recently inherited my Great Aunt's recipe collection. This is a recipe from her recipe box that she clipped out of the Chicago Tribune. It had won the "$5 Favorite Recipe prize." From the splatters on the clipping, I imagine my Aunt enjoyed this one. These days,I might try browning the meat in a little olive oil instead of the bacon drippings. Despite the name, I doubt this is a traditional Polynesian dish, but rather is one inspired by Polynesian cuisine.

Steps:
- In a large skillet, brown pork on all sides in bacon drippings.
- Add soy sauce, ginger, garlic salt, vinegar, and brown sugar.
- Cover and let simmer for 15 minutes.
- Add tomato sauce and simmer, uncovered, for 30 minutes longer or until pork is fully cooked.
- Stir in pineapple with canning juices and bring to a boil.
- Remove from heat and taste for seasonings, adjusting as needed.
- Serve ladled over mounds of hot cooked rice.

Steps:
- Clean chicken and pour sour cream over it and let marinate for about an hour in the refrigerator.
- Meanwhile, take crackers and crush into medium course crumbs, mix in Parmesan cheese and Tarragon/ Marjoram.
- Melt half of the butter and pour on the bottom of a 9x13 baking dish.
- Dredge chicken in the cracker mixture and set in baking dish.
- Repeat until complete.
- Melt rest of butter and pour on top of chicken.
- Bake@ 350 for 35-45 minutes or until golden brown.
HAWAIIAN STYLE PINEAPPLE-GUAVA GLAZED HAM
This recipe for our Holiday Ham is made every year at either Thanksgiving or Christmas. The original recipe is my mom's, but this recipe here has a little twists and tweaks that I've made. It's sooooo delicious! The photo is not mine, but will soon be replaced with one of my own.

Steps:
- 1. Place the ham and the drippings in a deep dish roasting pan.
- 2. Score the top of the ham, diagonal cuts about 1/4 inch deep and an inch apart. In each diagonal point (like a grid), push a whole clove in each point of the ham. Poke whole cloves around the sides of the ham.
- 3. Spread the yellow mustard onto the top of the ham and the cloves.
- 4. Pack the brown sugar on the top of the ham, making a slight mound.
- 5. Arrange the pineapple rings on top of the brown sugar, over lapping them for a nice arrangement. Pour the pineapple juice into the roasting pan. Toothpick a maraschino cherry into the center of each pineapple ring to hold it there during the baking process.
- 6. Bake the ham at 275 degrees for 2 hours, tenting the ham with foil during the last 30 minutes of baking.
- 7. GLAZE:
- 8. Combine all the ingredients and cook over medium-low heat till well incorporated.
- 9. Set aside a cup of the cooked glaze mixture for the sauce.
- 10. Pour the remaining glaze over the ham during the last 1/2 an hour of baking.
- 11. SAUCE:
- 12. Combine the juices in the roasting pan with the ham glaze, cherry pie filling and raisins (opt.), in a saucepan and warm it over low heat. Remove from heat.
- 13. Slice the ham, use the pineapple rings and arrange it on a serving platter. Pour the hot sauce over the ham slices or serve it on the side.
POLYNESIAN HAM AND RICE

- Mix reserved pineapple juice, the broth, rice, curry powder and red pepper in 10-inch skillet. Heat to boiling, stirring once or twice; reduce heat. Cover and simmer 20 minutes (do not lift cover or stir); remove from heat. Fluff rice lightly with fork. Cover and let steam 5 minutes.
- Cut each pea pod crosswise in half. Stir pea pods, pineapple and ham into rice mixture. Cook over medium heat about 2 minutes, stirring once or twice, until hot.

MAPLE GLAZED HAM

- Combine mustard, maple syrup, apple cider vinegar and hot pepper sauce in a pot. Bring to boil and reduce by half or until slightly thickened. Stir in soy sauce. Brush over ham.
- Preheat oven to 350F (180C). Trim hard outer skin from surface of ham. Shave off the fat leaving about 1/4 inch (5 mm) layer. With a sharp knife make a cross hatch pattern over surface of ham.
- Place ham in roasting pan. Brush with more glaze and dust with pepper. Bake for 1 hour and 15 minutes, basting every 15 minutes with more glaze, or until ham is cooked through.
- Serve warm or at room temperature. Carve into slices for serving.

- In a saucepan combine the cornstarch with cinnamon and cloves; add in the reserved peach and pineapple juice, orange juice concentrate and water.
- bring to a boil and simmer over medium heat until thickened and bubbly.
- Reduce heat, then stir in chopped peaches, crushed pineapple, raisins and cherries (if using) simmer 1-2 minutes.

- Cut the pork in 1-inch cubes.
- Mix the flour, salt and pepper.
- Coat the pork with the flour mixture using all the flour.
- Brown in oil in a large pan.
- Slice the celery and onion.
- Slice the peppers into thin strips.
- Add the vegetables to the pan along with the remaining ingredients. (**Do not add rice).
- Simmer covered for 30 minutes.
- Serve over rice.
