Turn left-over ham into a picnic favorite by combining it with eggs and pasta to make a delicious salad - serves a bunch in just 20 minutes!

4 cups uncooked elbow macaroni (16 oz)
1 cup diced cooked ham
1 cup sliced celery
1/2 cup chopped green onions
1/4 cup sweet pickle relish
1 jar (2 oz) diced pimientos, drained
4 hard-cooked eggs, chopped
1 cup salad dressing or mayonnaise
2 tablespoons yellow mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook and drain macaroni as directed on package. Rinse with cold water to cool; drain well.
  • In large bowl, mix cooked macaroni, ham, celery, onions, pickle relish and pimientos.
  • In small bowl, mix all dressing ingredients until well blended. Add to salad; mix well. Gently stir in hard-cooked eggs. Serve immediately, or cover and refrigerate until serving time.

4 slices ham, cut into small pieces
½ cup cubed Cheddar cheese
¼ cup chopped celery
¼ cup chopped green onions
3 tablespoons sweet pickle relish
2 tablespoons mayonnaise
1 ½ teaspoons prepared yellow mustard
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and rinse with cool water. Pat dry with a paper towel.
  • Combine pasta, ham, Cheddar cheese, celery, green onions, relish, mayonnaise, mustard, salt, and pepper in a bowl and mix well.

True, there is a little prep work involved, but nothing more intense than chopping a little ham and a few vegetables. This recipe is similar to a layered salad in that you can do a lot of the prep work in advance and store everything in air-tight containers in the refrigerator. When it comes time to assemble the salad, simply boil some pasta, stir in the ham, vegetables, mayonnaise and seasoning, then cover and chill at least two hours. This salad recipe, sent in by Keva Colston of Baton Rouge Louisiana, was published in the June 2007 issue of Southern Living and quickly garnered many favorable reviews and comments from readers. It seems most Southern cooks have a favorite cold pasta salad or layered salad they like to make on a warm afternoon. Not only are pasta and layered salads refreshing and satisfying as a main dish salad, they are versatile enough so that you can swap out ingredients with whatever you have in the fridge or garden.

8 ounces elbow macaroni
4 hard-boiled eggs
1/2 teaspoon dry mustard
1 teaspoon salt
1/3 cup mayonnaise
2/3 cup sour cream
1 tablespoon pimiento, chopped
1 cup ham, Danish boiled, finely chopped
2 tablespoons fresh parsley or 2 tablespoons fresh dill, finely chopped

Steps:

  • Cook the macaroni al dente as directed on the package. Drain well and set aside to cool.
  • In a salad bowl mash the yolks of two of the eggs, reserving the egg whites for another use.
  • Add the mustard and salt to the yolks.
  • Gradually mix in the mayonnaise, the fold in the sour cream.
  • Add the pimiento, ham and cooled macaroni, toss gently but thoroughly.
  • Taste and adjust the seasoning.
  • Cover and chill at least one hour.
  • Slice the remaining 2 eggs into rounds.
  • Place the eggs rounds decoratively on the top of the salad and sprinkle with the parsley or dill.

1 medium cucumber
4 ounces shell pasta, small
3 herring fillets, pickled, cut into 1/2 inch pieces
4 scallions, white part only, coarsely chopped
4 fresh mushrooms, thinly sliced
2 tablespoons wine vinegar
2 tablespoons olive oil
1 teaspoon salt
2 teaspoons curry powder
1 cup sour cream

Steps:

  • Cook the pasta al dente, according to package directions, rinse and cool.
  • Peel, halve lengthwise and seed cucumber, slice into 1/2 inch pieces.
  • Put pasta, cucumber, herring, scallions, and mushrooms into a serving bowl.
  • In a small bowl combine the vinegar, oil and salt, pour over salad ingredients and mix gently.
  • Refrigerate for 2 hours.
  • Just before serving, stir the curry powder into the sour cream, pour over salad and mix well.

1/3 cup extra-virgin olive oil
1/3 cup sour cream
6 ounces cooked ham, cut into 1/3-inch cubes
3/4 cup frozen baby peas, thawed (about 4 ounces)
2 ribs celery, with leaves, diced
2 tablespoons chopped fresh dill

Steps:

  • To mellow the minced onion, soak it in cold water while you make the salad.
  • Bring a large pot of cold water to a boil over high heat and salt it generously. Add the macaroni and boil, stirring occasionally, until al dente, about 8 minutes. Drain the macaroni in a colander, put in a serving bowl, and toss with the milk. Allow the macaroni to cool slightly while you make the dressing.
  • For the dressing: Whisk the vinegar, mustard, the 2 teaspoons salt, and black pepper to taste in a large bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in the sour cream.

1/2 pound cheddar cheese, cut into small pieces
1/2 cup roasted red pepper, seeded and cut into small pieces
1/2 cup celery, minced
3 green onions, sliced (white and light green parts only)
4 to 6 whole pepperoncini, seeded and minced (start out with 4 and add more for desired spice)
3/4 cup real mayonnaise (I like Best Foods)
1/2 cup milk
1-1/2 teaspoons white pepper (I typically add 2 teaspoons, but would rather you start with a little less, then add more as you prefer)
1-1/2 teaspoons onion powder
pinch of salt

Steps:

  • In a small bowl, mix the mayonnaise, milk, white pepper, and onion powder.
  • In a large bowl, add all of the ingredients and toss well.
  • Pour the mayonnaise mixture over the ingredients and fold in to incorporate well.
  • Add a tablespoon or two more of mayo and milk for desired consistency
  • Chill before serving
