DANISH COFFEE CAKES

Danish Coffee Cakes image

I think that as long as I'm in the kitchen baking I might as well make enough to share. This traditional recipe gives me three cheese-filled coffee cakes drizzled with a sweet vanilla icing. -Sheri Kratcha, Avoca, Wisconsin

Provided by Taste of Home

Time 1h5m

Yield 3 coffee cakes (10 slices each).

Number Of Ingredients 20

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
4 cups all-purpose flour
1/4 cup sugar
1 teaspoon salt
1 cup shortening
1 cup warm 2% milk (110° to 115°)
2 large eggs, lightly beaten
FILLING:
1 package (8 ounces) cream cheese, softened
3/4 cup sugar
2 tablespoons all-purpose flour
1 large egg, lightly beaten
1 teaspoon poppy seeds
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
ICING:
1 cup confectioners' sugar
2 tablespoons milk
1/8 teaspoon vanilla extract

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine the flour, sugar and salt; cut in shortening until crumbly. Add the yeast mixture, milk and eggs; beat until smooth (dough will be soft). Do not knead. Cover and refrigerate overnight., For filling, in a small bowl, beat the cream cheese, sugar and flour until smooth. Add egg, poppy seeds and extracts; mix until blended., Punch dough down. Turn onto a well-floured surface; divide into thirds. Return two portions to the refrigerator. Roll remaining portion into a 14x8-in. rectangle; place on a parchment-lined baking sheet. Spread a third of the filling down center of rectangle., On each long side, cut 3/4-in.-wide strips, about 2-1/4 in. into the center. Starting at one end, fold alternating strips at an angle across filling. Pinch ends to seal. Repeat with remaining dough and filling. Cover and let rise in a warm place until doubled, about 45 minutes. Preheat oven to 350°. , Bake 20-25 minutes or until golden brown. Cool on pans on wire racks. Combine icing ingredients; drizzle over coffee cakes.

OLD-FASHIONED CRUMB CAKE

Old-Fashioned Crumb Cake image

My dad grew up in the Bronx of the 1920s and was very fond of the yeasty crumb cakes found in many German-Jewish bakeries there. He calls the moist, tender cakes "crumb buns" and loves to eat them with a cup of coffee.

Yield 12-16 servings

Number Of Ingredients 18

For cake:
1 (1/4-ounces) package active dry yeast (2 1/2 teaspoons)
1 cup warm whole milk (105115°F)
1/2 cup plus 1 tablespoon sugar
1 tablespoon fresh lemon juice
3 3/4 cups plus 2 tablespoons all-purpose flour
1 1/2 teaspoons salt
2 large eggs, at room temperature for 30 minutes
1 1/2 teaspoons vanilla
1 1/2 sticks (3/4 cup) unsalted butter, cut into tablespoon pieces and softened slightly
For crumb topping:
1 1/2 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons cinnamon
1 1/2 sticks (3/4 cup) cold unsalted butter, cut into small pieces
1 teaspoon vanilla
Special Equipment
a stand mixer fitted with paddle attachment

Steps:

  • Make dough:
  • Stir together yeast, 1/4 cup warm milk, and 1 tablespoon sugar in bowl of mixer until yeast is dissolved, then let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
  • Stir together lemon juice and remaining 3/4 cup milk and let stand until curdled, 1 to 2 minutes.
  • Add 3 3/4 cups flour to yeast mixture along with salt, eggs, vanilla, and remaining 1/2 cup sugar and mix at low speed until just combined. Add curdled milk and beat at medium speed until a dough forms. Add butter, 1 piece at a time, beating, then continue to beat until dough is silky and elastic, 5 to 8 minutes. (Dough will be very sticky.) Sprinkle with remaining 2 tablespoons flour and cover bowl with a clean kitchen towel (not terry cloth). Let dough rise in a draft-free place at warm room temperature until doubled in bulk, 1 1/2 to 2 hours.
  • Make topping:
  • Pulse together topping ingredients in a food processor until many large clumps form. Transfer to a bowl and chill, covered, until ready to use.
  • Form and bake cake:
  • Butter a 13- by 9-inch baking dish or pan.
  • Stir dough several times with a rubber scraper to release air, then spread evenly in baking dish.
  • Sprinkle dough with half of topping, then cover dish with kitchen towel and let dough rise again in a draft-free place at warm room temperature until almost doubled in bulk, 1 to 1 1/2 hours.
  • Put oven rack in middle of oven and preheat oven to 350°F.
  • Sprinkle remaining topping over top of cake and bake until topping is golden, 55 to 60 minutes. Cool cake in pan on a rack until barely warm, then cut into squares.

DANISH CRUMB CAKE

Danish Crumb Cake image

My Grandmother Christine (Danish) passed this recipe down - She called it her 'company's coming' cake because from the time she noticed someone coming down the road to the homestead (by horse & buggy!) to the time they sat down for coffee this cake would be ready to come out of the oven! It's easiest when you use a med bowl for the main bowl, and a separate bowl for the milk and vinegar, the eggs and vanilla, and a small cup for the soda water. Once you make this a couple of times, you get into a rhythm and it becomes faster to toss together for a quick treat!

Time 40m

Yield 18-24 serving(s)

Number Of Ingredients 10

1 cup brown sugar
1 cup white sugar
2/3 cup butter or 2/3 cup margarine
2 1/2 cups flour
1 teaspoon vinegar
1 cup milk
1 teaspoon vanilla
2 eggs, beaten
1 teaspoon baking soda
1 tablespoon hot water

Steps:

  • Grease and flour bottom of 9 x 13 in cake pan.
  • Pre-heat oven to 350 degrees F.
  • Cream together first 3 ingredients.
  • Add the flour to this and crumb, setting aside 3/4 cup of crumbs for topping. (I find this part easiest to do by hand.)
  • Add the vinegar to the milk, let curdle.
  • Add the vanilla and eggs to the crumb mixture and stir to moisten.
  • Add the milk mixture and stir.
  • Dissolve baking soda in hot water, then add to batter and stir. Batter should be thin and slightly lumpy.
  • Poor in cake pan.
  • Sprinkle reserved crumbs over top of cake.
  • Bake on center rack for 25 - 30 minute.
  • Cut and serve warm or cold - I think it even tastes better the next day!
