DANISH BUBBLE
The rough translation of this dish means "scrambled food" and is a great dish to use up leftovers from the night before. We have had this for breakfast as well as supper. Serve with ketchup, HP sauce and toast.

Steps:
- Chop onions finely and dice meat and potatoes into 1 inch cubes.
- Heat a third of the oil or butter in frying pan.
- Brown the meat until golden brown and remove meat from pan.
- Add another third of the oil or butter and brown the potatoes at high heat until they are golden and crispy on the outside. Remove potatoes from pan.
- Add the remaining oil or butter to pan and cook the onions until clear.
- Add meat, bacon, chives and potatoes to pan.
- and heat through.
- Season with salt, pepper and Worcestershire sauce.
- Fry the eggs in butter, sunny side up and place on top of meat mixture.
- (You can also scramble the eggs and mix all together).
- Top all of this with the grated cheddar and serve hot.

- In a large bowl, dissolve yeast in warm water. Add the milk, 1/2 cup sugar, 1/2 cup butter, lemon zest, salt, mace, eggs and 2 cups flour; beat well. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover; let rise in a warm place until doubled, about 1 hour., Punch dough down. On a lightly floured surface, roll out dough into a large rectangle, about 1/4 in. thick. Spread with 2 tablespoons butter. Sprinkle with 1/3 cup sugar. Fold in half lengthwise; roll to 1/4-in. thickness. Spread with 2 tablespoons butter; sprinkle with 1/3 cup sugar. , Fold in half widthwise; roll to an 18x10-in. rectangle. Spread with remaining butter. Combine the cinnamon and remaining sugar; sprinkle half over dough to within 1/4 in. of edges. Roll up tightly, starting with a short side; pinch to seal. Cut into 1/2-in. slices. , Place on greased baking sheets (four to six slices per sheet). Cover with waxed paper and flatten with palm of hand. Sprinkle with remaining cinnamon-sugar. Let stand in a warm place for 30 minutes., Bake at 400° for 12-15 minutes. Immediately remove from pans to wire racks.

KANELSNEGLE (DANISH CINNAMON BUNS)
Steps:
- Heat up the milk, either in the microwave or in a saucepan, until it is "fingervarm" (finger warm), meaning it should feel warm to the touch but not hot. You don't want to kill the yeast! Add the yeast and stir to dissolve. Let it rest 5-10 minutes until it begins to froth and bubble a little bit. (If your yeast doesn't do anything, it may be expired. Check the expiration date on the package and start over with new yeast!)
- Combine the egg, egg yolk, sugar, vanilla extract, cardamom, and salt in a large bowl. Mix well.
- Add the milk and yeast mixture to the egg mixture and whisk to combine.
- Slowly add the flour, stirring with a wooden spoon. Once the dough starts to come together, you can start kneading.
- Add the softened butter and knead until smooth and elastic, probably around 5-10 minutes. Add a bit of flour if the dough sticks to your hands or the surface. If you prefer not to get your hands messy and covered in butter, feel free to use a stand mixer for this step. The texture of your dough before its first rise should be soft and smooth, not sticky and not too dry.
- Cover and let your dough rise for about 45 minutes, or until doubled in size.
- For the filling, combine softened butter, brown sugar, cinnamon, and salt and stir together until you get a smooth paste.
- Once your dough has doubled in size, roll it out into a rectangle that is about a quarter of an inch (0.5cm) thick.
- Spread your filling evenly on top and roll it up into a log. You'll want to roll from the shorter edge of the rectangle, so that your buns have more swirls. (TO MAKE TWISTS: Instead of rolling up your dough, fold it in half from the bottom - then cut into about 12 equal sized strips. Start twisting the strips, then wrap around itself twice and tuck the end of the strip through the middle.)
- Cut the log into 1-1.5 inch (3cm) thick pieces.
- Here is where you can customize the recipe: place the pieces (swirl side up!) close together in a buttered baking dish for gooey, American-style cinnamon buns, or separate them (plenty of space in between!) on two baking sheets lined with parchment paper for more of a crispy, Danish-style cinnamon snail.
- Cover the buns loosely with cling film or a clean dishtowel and let them rise another 45 minutes. In the meantime, preheat your oven to 350 degrees F (175 degrees C).
- Make your egg wash (1 egg whisked together with a splash of water until there are no more gloopy streaks of egg white), then brush over the buns and bake for about 15 minutes. Once they are done, let them cool.
- Combine powdered sugar and water/milk until you reach your desired icing consistency. Remember, a little bit of liquid goes a long way, so start with a cup of powdered sugar and a tiny bit of water or milk! Pour or drizzle over the kanelsnegle and enjoy!

- Step 1: Using the bowl of a food processor fitted with a blade attachment, pulse 4 cups all-purpose flour, 3 tablespoons sugar, 1 teaspoon salt and 1 cup unsalted butter (cut into small pieces and chilled). Pulse until butter is pea-sized. Transfer to a large bowl.
- Step 2: Using a small bowl, combine 2 teaspoons sugar, 2 tablespoons active dry yeast and 1/2 cup warm water. Set aside for 10 minutes and allow yeast to bubble and activate.
- Step 3: Using a medium bowl, whisk together 1 cup warmed milk and 2 room-temperature eggs. Add milk and yeast mixtures to the flour mixture. Stir well until combined; dough will be soft. Cover with plastic wrap and refrigerate 4 hours or overnight.
- Step 4: Using a medium bowl, combine 1 cup finely chopped walnuts, 1 cup light brown sugar, 1 teaspoon cinnamon and 1 teaspoon vanilla extract. Set aside.
- Step 5: Preheat oven to 400 F. Line a baking sheet with parchment paper, set aside.
- Step 6: Using a clean, floured surface, divide the dough into 8 parts. Work with one piece of dough at a time, refrigerate the rest, and shape dough into a disc. Roll into an 8-inch circle. Dust with flour as needed. Cover circle with a thin layer of filling almost to the edge. Cut into 8 wedges.
- Step 7: Beginning at the wide edge, roll toward the center, pinch seam shut and curve crescent slightly. Transfer to prepared pan with the seam end of the dough underneath. Set aside and allow to rise for 1 hour. Alternatively, you can cut dough into squares, bringing two opposite corners to the center and pinch together.
- Step 8: Bake until golden brown, about 12 minutes. Remove from pan, cool on a wire rack. Dust with confectioners' sugar, if desired.
