As Daniel Boone said: "There's no better way to cook young chicken." This fried chicken recipe originated in the family of Daniel Boone (1735-1820), the pioneer who is noted for his many daring exploits against the Indians.

3 lbs frying chickens
1/2 cup butter
1/4 cup water
1 1/2 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon paprika
1 cup water, boiling
2 teaspoons cream

Steps:

  • Roll the pieces of chicken in a wooden mixing bowl of flour heavily seasoned with salt, pepper and paprika. Grease a large cast iron skillet with the butter and fry each piece of chicken. Brown well on both sides. Then reduce the heat slightly and add the water. Cover the skillet and cook for 15 minutes on each side. Take the fried chicken from the skillet and pour off all but 2 tablespoons butter. Add the flour to the melted butter, blend well and stir until nicely browned. Then add the salt, pepper, paprika and boiling water. Simmer until the gravy is smooth and thickened, stirring constantly. Lastly, stir in the cream and blend. Pour this gravy around the chicken on a large platter.

Ina does it again, this is simply delicious! This is a nice combo of frying and oven cooking. The key is the temperature of the oil and not to crowd the pan when frying. I add 1T. onion powder, 1T. garlic powder, 1tsp. cayenne & 1tsp. paprika to the flour & some Tabasco to the buttermilk. So I cut down on the salt and pepper, use your judgement. Instead of the bowl, I use a food-safe storage bag to shake the chicken pieces in the seasoned flour mixture, then let the chicken stand about 20 minutes after coating it in the flour. It is crunchy on the outside, and moist on the inside, so yummy!. This is adapted from Food Network, Paula Deen. Hope you enjoy!

2 whole chickens, cut in 8 serving pieces (3 pounds each)
1 quart buttermilk
2 cups all-purpose flour
1 tablespoon kosher salt
1 tablespoon fresh ground black pepper
vegetable oil or vegetable shortening

Steps:

  • Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
  • Preheat the oven to 350 degrees F.
  • Combine the flour, salt, and pepper (and other spices if using) in a large bowl.
  • Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture.
  • Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
  • Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces.
  • Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan.
  • Allow the oil to return to 360 degrees F before frying the next batch.
  • When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.
  • Prep time does not include the overnight bath in buttermilk.

1-3/4 cups all-purpose flour
1 tablespoon dried thyme
1 tablespoon paprika
2 teaspoons salt
2 teaspoons garlic powder
1 teaspoon pepper
1 large egg
1/3 cup 2% milk
2 tablespoons lemon juice
1 broiler/fryer chicken (3 to 4 pounds), cut up
Oil for deep-fat frying

Steps:

  • In a shallow bowl, mix the first 6 ingredients. In a separate shallow bowl, whisk egg, milk and lemon juice until blended. Dip chicken in flour mixture to coat all sides; shake off excess. Dip in egg mixture, then again in flour mixture., In an electric skillet or deep fryer, heat oil to 375°. Fry chicken, a few pieces at a time, 6-10 minutes on each side or until skin is golden brown and juices run clear. Drain on paper towels.
