DAMSON CRUMBLE

Damson crumble image

This damson and apple crumble will go down a treat as a family dessert. The damsons will contain stones, so remember to warn people to remove them as they eat

Provided by Lulu Grimes

Categories     Dessert, Treat

Time 1h

Number Of Ingredients 10

800g-900g damsons
50g light soft brown sugar
knob of butter
1-2 tbsp sloe gin (optional)
2 apples , peeled, cored and sliced
250g plain flour
150g unsalted butter , cold
80g light soft brown sugar
80g demerara sugar
50g ground almonds

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the damsons into a pan with the sugar, butter and sloe gin if using (or a splash of water if not) and heat gently until the damsons start to give off their juices. Tip into the base of a large shallow gratin dish (about 25cm long) and stir through the apple slices.
  • Put all the crumble ingredients into a food processor with a pinch of salt, and using the pulse button, whizz until the mixture just starts to clump together. Don't whizz for too long or the mixture will stick together too much. Alternatively, rub the butter into the flour using your hands and then stir in the other ingredients.
  • Scatter the crumble over the damsons and bake in the oven for 30-40 mins until golden brown. Leave for about 15 mins before serving with custard or cream. Remember to warn everyone about the stones!

Yield Makes 6 servings

Number Of Ingredients 16

For pastry:
2 1/2 cups all-purpose flour
2 sticks (1/2 pound) cold unsalted butter, cut into 1/2-inch cubes
1 cup confectioners sugar
3 large egg yolks
For compote:
1 pound damson plums or prune plums
1 3/4 cups sugar
2 tablespoons white wine
1 Turkish or 1/2 California bay leaf
For cream filling:
1 cup heavy cream
1/2 vanilla bean, split lengthwise
1 tablespoon sugar
1/2 teaspoon grated lemon zest
Equipment: 6 (4-inch) fluted tartlet pans

Steps:

  • Make pastry dough:
  • Pulse flour, butter, and confectioners sugar in a food processor until it resembles coarse meal. Add egg yolks and pulse just until a dough forms.
  • Transfer dough to a lightly floured surface and divide in half. Form each half into a 4-inch square (about 1 inch thick) and wrap in plastic wrap. Freeze until solid, at least 2 hours.
  • Make compote while pastry freezes:
  • Bring whole plums, sugar, wine, and bay leaf to a simmer in a heavy medium saucepan over medium-low heat, covered, stirring occasionally until sugar has dissolved (be careful juices don't boil over). Reduce heat to low and simmer, covered, stirring occasionally, until plums fall apart, about 30 minutes. Transfer to a bowl and chill, uncovered, until cold, then cover. Discard pits and bay leaf, then add a little confectioners sugar to taste if desired.
  • Bake pastry:
  • Coarsely grate pastry from one frozen square into tartlet pans, dividing it evenly. (Reserve remaining dough for another use.) Press dough flakes into tartlet pans to line bottoms and sides evenly. Prick bottoms all over with a fork, then freeze tartlets until firm, at least 1 hour.
  • Preheat oven to 425°F with rack in middle.
  • Put tartlets in a shallow baking pan and put in oven. Turn oven temperature down to 400°F and bake until shells are golden all over, 15 to 18 minutes.
  • Transfer tartlet pans to a rack to cool completely, then remove shells from pans.
  • Make cream filling:
  • Put cream in a large bowl, then scrape seeds from vanilla bean into cream. Beat in sugar and zest with an electric mixer until cream just holds stiff peaks. Fold in about 2 tablespoons plum compote, then divide cream among tartlet shells. Serve topped with some of remaining compote (you will have a lot left over).

  • For the pastry, briefly blend the flour, salt, icing sugar and orange zest in a food processor. Add the butter and whizz to fine breadcrumbs. Mix the egg yolk with the water, add to the mix and briefly whizz again until the mixture sticks together in clumps. Turn out onto a lightly floured surface and bring together, kneading briefly until smooth. Wrap in cling film and chill for 15 minutes, then roll out on a lightly floured surface. Use to line a 2.5cm deep, 23cm loose-bottomed flan tin. Chill for 20 minutes.
  • Heat the oven to 200°C/fan180°C/ gas 6. Line the pastry case with a crumpled sheet of baking paper and fill with baking beans/rice, then bake for 15 minutes or until the edges are biscuit-coloured. Remove the paper and beans/rice and protect the edges of the case by covering with strips of foil. Return the case to the oven for another 5-7 minutes until the base is golden too. Remove from the oven, discard the foil strips and set aside.
  • Mix the soured cream, double cream, beaten egg, 6 tbsp of the sugar, the 2 tbsp flour and ground almonds in a large bowl until smooth.
  • Run a knife around each damson, twist the halves apart and put the neater halves without any stones into one bowl. Prise the stones from the other halves with a small, sharp knife, put them in another bowl and toss with 1 tbsp of the remaining caster sugar. Scatter these sugared damson halves over the base of the pastry case and pour over three- quarters of the filling. Toss the neater damson halves with the rest of the sugar and arrange neatly, cut- side down, on top of the tart in concentric circles. Pour over the rest of the filling.

  • For the pâte sucrée, sift together the flour, ground almonds, and 23g icing sugar. Add any of the almond that doesn't pass through the sieve back into the mixture.
  • Beat the butter and vanilla seeds until light in colour and soft, and then sift in the remaining icing sugar. Whip the sugar with the butter until light and fluffy.
  • Add the sifted dry ingredients to the bowl and mix until it resembles a sort of wet sand. Tip the bowl out onto your work surface, and press together.
  • To make sure all of the vanilla and sugar is evenly mixed, you will use a technique called 'fraiser' or 'fraisage'. Use the heel of your hand to smear the mixture together on the table, then scrape it off the table, fold it over itself, and continue smearing until it's evenly mixed (see image above).
