Steps:
- If you use baby potato just "shave" the skin, otherwise, peal potato and cut into 5 cm large pieces.
- Cook in salted water until soft.
- Put olive oil, finely minced garlic and parsley in pot, add well strained potato and stir. Leave it on fire not more than one minute stirring all the time to cover potato with garlic and parsley. Serve hot with fish.

BLITVA (CROATIAN SWISS CHARD DISH)
A traditional dish in Dalmatian cuisine, this is very easy to make. It makes a perfect side for fish, cooked meat or, my favorite, cured meat such as prosciutto. It can be made more creamy when potatoes are very well cooked, or soupy when more liquid is preserved. On my scale this would be 3.5 Stars (please see how I rate recipes).

Steps:
- Bring a large pot of salted water to a boil.
- Add peeled and cubed (1/2-1 in cubes) potatoes.
- Rinse the Swiss chard, remove tough stems, and cut into 1/2 in strips (or just tear into large pieces).
- When potatoes are almost done, add the Swiss chard, and cook all together for an additional 10 minutes (15 minutes if the chard is older).
- Sauté garlic on olive oil, and add the cooked drained chard and potatoes to it (you may keep some water so that it looks like a thick soup).
- Salt and pepper to taste.
- Stir and cook for 1 more minute in order to bring all flavors together.
CROATIAN DALMATIAN POTATO SALAD
This is nice meal to eat with grilled or fried fish. It also goes well with any kind of meat, especially beef cutlets.

Steps:
- Cook potato with skin and when cooked, peel it.
- Cut peeled potato into slices (across). Put potato into a salad bowl, pour over olive oil and vinegar dissolved with half glass water (1 dcl). (It is much better if you season warm potato because it will soak oil, vinegar and seasoning much better.)
- Cut onion into thin rounds and add to potato. Add salt and pepper. At the end add hand cut basil leaves. Do not put too much basil - it must be surprise for consumer.
- Mix well. Wait until cools and serve.
NORTH CROATIAN BOILED POTATO
This is northern version of similar Dalmatian potato. The difference is that it is advisable to take baby spring potato, the one with very thin skin. The best way to do it is to soak potato in cold water, wash it and than grate the potato skin with sharp knife. This side dish is popular in Zagreb region and it is served with various meats and "cuspajz" (spring vegetable stews). It can be done with old potato but it is much better if you have spring one.

Steps:
- Gently peal potato skin, and if possible just "shave" it.
- Cook for about 25-30 minutes (until toothpick can easily go through). Drain potato.
- In another pot put butter and finely minced parsley leaves. When butter starts to foam, add potato and fry it on butter 1-2 minutes. Serve hot.
