YELLOW PICKLED EGGS
This is a recipe for Amish style pickled eggs that are yellow in color. They go nice with the red beet pickled eggs!

Steps:
- Place eggs in a large pot and fill with enough water to cover. Bring to a boil, then cover and remove from heat. Let stand 10 minutes. Cool under running water, and remove shells. Place hard-cooked eggs in a large jar.
- In a saucepan, combine the onion, water, sugar, and vinegar. Stir in salt, dill, garlic powder, and mustard seed. Bring to a boil, then simmer over low heat for 5 to 7 minutes. Pour over the eggs in the jar. Cover and refrigerate for at least 4 days. The eggs will be yellow!

PICKLED EGGS

Steps:
- Put the vinegar, sugar, bay, spices, ½ tbsp salt and 150ml water in a small pan and heat for a few mins until the sugar dissolves. See tip below about adding other flavours and spices. Leave to cool completely while you boil the eggs.
- Bring a large pan of water to the boil, lower in the eggs with a slotted spoon and set a timer for 10 mins. Once the timer goes off, immediately plunge the eggs into ice cold water and leave to cool. Gently tap the eggs on the work surface and peel off the shells.
- Put the boiled eggs in a sterilised jar where they all fit, about 1 litre, and pour over the cooled pickling liquid to cover. Seal and leave in a cool, dark place for at least two weeks, or up to three months. Once opened, keep in the fridge and eat within two weeks.

- Place the eggs in a pot and add cold water until they are submerged. Cover with a lid and bring to boil. Reduce heat to medium and simmer eggs for 10 minutes.
- Place the cooked eggs in an ice bath (or very cold water) to cool them down. Remove the shells by starting at the flatter end.
- Boil the beets until tender (about 40 mins). Cool off, peel and slice in bite-sized pieces. In a jar with wide mouth or similar container alternate layers of peeled eggs and beet slices.
- Alternatively, strain the beets from a can and reserve the liquid. Layer beets and eggs as described above.
- In a sauce pan bring water, salt, sugar, apple cider vinegar, beet juice (or reserved liquid from can), mustard seeds, cloves, peppercorns, bay leaf to boil. Simmer for five minutes.
- Pour the hot liquid over the peeled eggs and the beets, seal the jar and refrigerate.
- Arrange the cooked, peeled eggs in a mason jar or similar container with a wide mouth.
- In a sauce pan bring water, salt, balsamic vinegar, hot red pepper flakes, shallots, cloves, peppercorns, bay leaf to boil. Simmer for five minutes.
- Pour the hot liquid and the shallots over the peeled eggs, seal the jar and refrigerate.

EASY PEASY PICKLED EGGS

- 1. Wash and dry 1 quart jar, set aside. Boil 1 dozen eggs and peel. Be gentle, we don't want cracked eggs!
- 2. Place eggs in 1 quart jar and add salt, red pepper flakes, bay leaves and garlic.
- 3. In small sauce pan boil water and vinegar. Pour oven eggs and cap jar. Place into refrigerator and let stand 3-7 days depending on how pickled you like your eggs.
- 4. You can easily adapt this recipe to your own taste. Experiment! Add beet juice, jalapeno juice or jalapenos, black pepper, onions, even sugar. Whatever floats your boat!

- Drain liquid from the beets into saucepan. Place beets, onions, and eggs into a large bowl or pitcher.
- Pour sugar and vinegar into the saucepan with the beet liquid and bring the mixture to a boil. Reduce the heat to low, and let the mixture simmer 15 minutes.

Steps:
- In a glass bowl (beet juice sometimes will stain plastic), whisk together sugar, salt, vinegar and 3/4 cup of juice from the tinned beets (you can discard any remaining juice); whisk until sugar is dissolved.
- In a larger glass bowl, place peeled eggs and beets.
- Pour dressing over eggs.
- Refrigerate overnight, covered (the colour will get more intense if left a day or two longer).
- To serve, cut eggs into halves or quarters.
