DAIRY STATE FUDGE
I grew up on a dairy farm in Wisconsin, so it's only natural I have a lot of recipes that use dairy ingredients. Our farm also had a lot of hickory trees, so we always made this fudge with hickory nuts. I make this candy nearly every Christmas. You'll find it's hard to eat just one piece.

- In a bowl, beat cream cheese until fluffy; set aside. In the top of a double boiler, melt butter. Add almond bark; heat and stir until melted and smooth. , Pour over the cream cheese; beat until smooth and glossy, about 7-10 minutes. Stir in nuts. Pour into a greased 9-in. square pan. Store in the refrigerator.

DAIRY STATE FUDGE
Add some interest to your candy and cookie trays with a white fudge. For best results, don't use low-fat or fat-free cream cheese. Many years ago as a young girl I would go through recipe books and look at all the pretty pictures and imagine cooking that particular item. I found this one in a very old cookbook that I had. And after viewing the picture I decided I just had to try this.

- Line a 9" square pan with foil and butter the foil; set aside.
- In a mixing bowl, beat cream cheese until fluffy;p set aside.
- In the top of a double boiler, melt butter. Add confectionery coating; heat and stir until melted and smooth.
- Pour over cream cheese; beat until smooth and glossy, about 7-10 minutes. Stir in nuts. Pour into prepared pan. Cool Remove from pan and cut into 1" pieces. Store in the refrigerator.
DAIRY FREE CHOCOLATE FUDGE
This is the exact recipe with brands that I used. It tasted great and no one knew it was dairy free. I used homemade marshmallow fluff, I used Recipe #418771. I think any would work either homemade or store bought.

Steps:
- In a large pot combine the margarine, soymilk, and sugar.
- Cook over med-high heat, stirring continuously until the mixture reaches 234 degrees on a candy thermometer.
- Remove from heat.
- Stir in chocolate chips until they are completely melted and completely mixed inches.
- Add vanilla; stir well.
- Stir in marshmallow cream until it is completely mixed with the chocolate.
- Pour fudge into a greased pan.
- Let cool. You can put it in the refrigerator to cool quickly.

- If your can of coconut milk has a lot of excess liquid on the top, pour that out before proceeding.
- Place the coconut milk in a sauce pan and heat over medium low heat, just until it starts to stem a little bit. Sift in the confectioner's sugar and whisk to combine. Do not overheat or boil.
