DAIRY STATE APPLE PIE
This recipe is one of my family's favorites. With the cheddar and cream cheeses, the pie is very appropriate coming from "America's Dairyland." -Ethel Mueller, Chilton, Wisconsin

Steps:
- In a bowl, stir flour, butter, cheese and salt until crumbly. Sprinkle with milk, 1 tablespoon at a time, stirring until pastry holds together., Form into a ball. Roll out on a lightly floured surface. Transfer to a 9-in. pie pan; trim and flute edges. , In a bowl, beat cream cheese, egg and sugar until smooth. Stir in apples; pour into crust. In another bowl, mix flour, sugar and cinnamon; cut in butter until crumbly. Stir in nuts. Sprinkle over apples. , Bake at 350° for 15 minutes. Reduce heat to 300°. Bake 30-35 minutes longer or until crust is golden brown and filling is bubbly (cover edges with foil during the last 15 minutes to prevent overbrowning if necessary). Serve warm or chilled with ice cream if desired.

NEW YORK STATE APPLE PIE
I cut this out of the newspaper many years ago and since everyone seemed to like it so well, I have never used anything else.

Steps:
- Sprinkle lemon juice over apple slices.
- Combine sugar, salt, flour,cinnamon and nutmeg in a mixing bowl.
- Sprinkle over apple slices.
- Toss apples and flour mixture until apple slices are fully coated.
- Arrange into bottom prepared crust.
- Dot with margarine.
- Cover with top crust and fold under and crimp.
- Cut slits into top crust and dust with sugar if desired.
- Bake at 375°F for 50 minutes.
COOKIE SHEET APPLE PIE

Steps:
- In a bowl, combine flour and salt. Cut in shortening until mixture resembles course crumbs. Add eggs and milk mix to form dough. Chill for 20 minutes. Divide dough in half roll one half to fit the bottom and sides of a greased 15-in. x 10-in. x 1-in. baking pan. Arrange apples over crust. Combine sugar, cinnamon, nutmeg and cornflakes sprinkle over apples. Roll remaining dough to fit top of pan and place over apples. Seal edges cut slits in top. Brush with egg white. Bake at 400° for 15 minutes. Reduce heat to 350° bake for 25-30 minutes or until golden.© Copyright Reiman Publications, 1993-1997
