This is a delicious, dairy free hot chocolate that is easy to make and taste just like traditional dairy hot chocolate. I used coconut-almond milk mix for a coconut taste, but you could definitely use any non-dairy milk.

1 cup coconut-almond milk blend
2 tablespoons unsweetened cocoa powder
1 ½ teaspoons maple syrup
1 ½ tablespoons brown sugar
1 splash vanilla extract
1 pinch salt

Steps:

  • Stir coconut-almond milk blend, cocoa powder, maple syrup, brown sugar, vanilla extract, and salt together in a saucepan over medium heat; stir with a whisk to dissolve solids while the mixture heats to your desired temperature.

My go-to, 5-minute vegan hot chocolate made with simple ingredients you always have on hand. Creamy, luxurious, and surprisingly healthy.

1 cup unsweetened almond milk
1 Tbsp unsweetened cocoa powder
1 1/2 Tbsp dairy-free semisweet chocolate ((chips or bar // chopped))
Sweetener of choice
1/8 tsp peppermint extract
Coconut whipped cream

Steps:

  • Add almond milk to a large mug and microwave for 1 minute. Alternatively, add to a saucepan over medium heat.
  • Once milk is warm, add cocoa powder, chocolate and sweetener and whisk to combine.
  • Put back in microwave or continue cooking on stovetop until completely combined and has reached your preferred temperature.
  • Taste and adjust sweetness as needed.
  • Lastly, add in your extract of choice - I think peppermint is truly unbeatable. Stir, and top with coconut whipped cream.

Homemade Almond Joys with Dark Chocolate image

Rich, chocolatey and nutty with plenty of light, flaky coconut, Almond Joy candy bars are easier than you'd expect to make at home.

1 1/4 cup shredded sweetened coconut
1/4 cup sweetened condensed milk *
1/2 teaspoon vanilla
18-36 roasted almonds
2 cups dark chocolate chips (or the chocolate of your choice)
Optional: 2 tablespoons coconut oil
36 tiny cupcake liners (about 1" in size)

Steps:

  • Stir together the coconut, condensed milk and vanilla. It should be sticky and hold it's shape when pressed together.
  • Melt the chocolate (along with the optional coconut oil to thin it) in a glass bowl over a pan of water, or in the microwave at half power for about 2 minutes, stirring every 30 seconds or so.
  • Drizzle 1 teaspoon of chocolate into the bottom of each cup. Add 1 teaspoon of the coconut mixture. Press on the coconut slightly to make the chocolate slide up the sides of the liner.
  • Top the coconut with an almond and then pour a teaspoon of chocolate on top. Chill in the refrigerator until ready to eat. Store in the refrigerator for up to a week or in the freezer for a couple of months. Enjoy!

  • Line an 8-inch loaf pan or 9-inch loaf pan with parchment paper or wax paper. Set aside for later.
  • Add all Coconut Bars ingredients to a food processor: coconut, coconut oil and maple syrup. Blend until you get a wet and sticky mixture, with smaller, but still noticeable coconut pieces.
  • Pour coconut mixture into the prepared loaf pan. Using a rubber spatula, press down and smooth until you get a tightly packed, even layer. Freeze for 15-20 minutes.
  • Remove from freezer. Lift the coconut bars out of the loaf pan. Cut into 16 rectangular bars. Line a baking sheet with wax paper or parchment. Lay these bars on the sheet, evenly spaced apart. Place back into the freezer while you prepare the chocolate layer.
