DAIRY AND SUGAR-FREE TIRAMISU
I hope you'll like this easy and delicious tiramisu recipe. You can use normal mascarpone cheese of course but I try to be as dairy-free as possible. Also I recommend you to use organic eggs bought from a safe source.

Steps:
- Separate the egg yolks from the whites.
- In a bowl, whisk together the egg yolks with the sucanat until incorporated. In another bowl , whisk the egg whites until you get a foamy texture, then add slowly the yolk cream and vegan mascarpone.
- Pour the cooled coffee in a bowl and add the coffee liquor or cognac. Dip the lady fingers in the liquid (not too much) and layer them in a medium tray (6-8 lady fingers / layer). Over the first layer of lady fingers add a layer of cream, then another layer of soaked lady fingers. Cover with cream and garnish with powdered cocoa or carob.
- Let it cool for at least 5 hours before serving.

- To make the creamy filling, whip the coconut cream, powdered sugar and vanilla paste until fluffy and soft peaks form.
- Start assembling the tiramisu by dipping the gluten free ladyfingers into cold unsweetened coffee and laying them on the bottom of a serving dish of your choice. Make an even layer with little/no gaps between the ladyfingers – fill in any gaps by breaking the ladyfingers into pieces before dipping them into coffee.I don't recommend using hot coffee, as it can cause the ladyfingers to become too fragile and fall apart.
- Spoon half of the creamy filling on top of the ladyfingers. Smooth out the filling to make an even layer.

- In a large bowl using an electric mixer with whisk attachement, whip together egg yolks and sugar until thick and pale. This takes about 5 minutes. Then add coconut cream, vanilla extract, and 1 tablespoon of espresso to the mixture. Whip together until smooth.
- Pour the remaining espresso and dark rum into a shallow dish large enough to fit a ladyfinger. Dip each lady finger into the mixture for only 5 seconds, turning and flipping to coat all sides. Place the soaked lady finger on the bottom of an 8 by 8 inch baking dish. Continue until you have a single layer of soaked ladyfingers. You may need to break ladyfingers for a snug fit.
- Gently layer one half of the coconut cream mixture across the top of the soaked ladyfingers. Then add another layer of soaked ladyfingers. Top with the final layer of cream. Cover with plastic wrap or other airtight lid and refrigerate for at least 2 hours to allow the layers to set.
- Before serving, sprinkle the chocolate shavings evenly across the top of the tiramisu. This recipe tastes amazing on its own or topped with fresh berries and mint leaves.
