Nothing like the ubiquitous frozen drinks that bear the same name, this classic cocktail is light, refreshing, and the perfect easy cocktail to while away the summer hours.

2 ounces light rum
1 ounce plus one teaspoon fresh lime juice
1/2 ounce simple syrup

Steps:

  • In cocktail shaker filled with ice, combine rum, lime juice, and simple syrup. Shake vigorously, then strain into cocktail glass.

1 cup ice cubes
1 ½ fluid ounces light rum
1 fluid ounce lime juice
1 fluid ounce triple sec
1 teaspoon white sugar
1 lime wedge
2 tablespoons white sugar, or as needed

Steps:

  • Blend ice, rum, lime juice, triple sec, and 1 teaspoon sugar in a blender on the highest setting until smooth, 15 to 20 seconds. Pour into glass.
  • Spread 2 tablespoons sugar in a thin layer onto a small plate. Rub lime wedge around the rim of a glass. Dip glass rim in sugar to coat. Pour blended beverage into the prepared glass to serve.

Number Of Ingredients 13

1 (6 ounce) package semi-sweet chocolate bits
1/2 cup sour cream
1/2 lb vanilla wafer
1 cup confectioners' sugar, plus more
confectioners' sugar, for rolling
1/4 teaspoon salt
3 tablespoons cocoa
1 tablespoon grated lemon zest
1 tablespoon grated orange zest
2 1/2 tablespoons lemon juice
1 1/2 tablespoons white corn syrup
1/4 cup rum
1 cup pecans, finely chopped

Steps:

  • Melt chocolate over hot water. Cool. Add sour cream; mix and refrigerate overnight.
  • Form into 54 balls, using 1/2 teaspoon mixture chocolate mixture for each.
  • Crush wafers, add 1 cup confectioners's sugar, salt, cocoa and fruit zests. Blend in lemon juice, syrup, rum and pecans.
  • Form balls the size of walnuts around chocolate centers. Roll in confectioners' sugar.
  • Store in air-tight containers. Freeze.
