Just Like Mom used to make except better, because this is like Dad makes. This is great for picnics, family reunions, feeding a FAMILY of 7 at HOME or a FAMILY of 8 at the FIRE STATION. Nothing beats a great traditional potato salad and this is just that...A GREAT TRADITIONAL POTATO SALAD!

5 pounds potatoes, unpeeled
12 eggs
1 (16 ounce) package uncooked spiral pasta
1 (16 ounce) jar dill pickles, chopped (reserve juice)
2 bunches green onions, chopped
3 cups mayonnaise, or to taste
2 tablespoons Worcestershire sauce
¼ cup dill pickle juice, or as needed
salt and pepper to taste

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Allow the potatoes to cool.
  • While potatoes are cooking, place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink. Peel once cold.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spiral pasta, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink, rinse with cold water, and let cool.
  • Peel the potatoes. Chop potatoes and hard-cooked eggs into bite-size pieces in a large bowl. Mix in the cooked pasta, dill pickles, and green onions. In a bowl, stir together the mayonnaise, Worcestershire sauce, enough dill pickle juice to make a creamy dressing, and salt and pepper to taste. Pour the dressing over the potato mixture, and toss lightly to coat all ingredients with dressing. Chill the salad until cold, at least 30 minutes.

My late father used to make this all the time when we were growing up. It's so refreshing in the summer time when it's too hot out. I had been craving it this past couple of months and decided to make it, my husband had it for the first time today and he's hooked! This is an Irish Potato Salad. It's amazing the next day after all...

2 Tbsp vinegar
1 tsp celery seed
1 tsp mustard seed
3 medium potatoes,boiled , peeled and cubed
2 tsp sugar
1/2 tsp salt
2 c of red or green cabbage(i use one cup of each)finely shredded
1 can(s) 12 oz of corned beef (cubed)
1/4 c finely diced dill pickle
1 c miracle whip ( or mayo)
1/4 c milk (of your choice)
1/2 tsp salt

Steps:

  • 1. Place Corned Beef in the fridge, for at least 3+ hours before serving.
  • 2. Combine vinegar, celery seed and mustard seed and set aside. Cook Potatoes in a salted water bath. for 30-40 mins, till they are just barely down, drain water, peel and cube up while they are still hot. Drizzle with vinegar mixture. Sprinkle sugar and 1/2 tsp. salt and chill thoroughly.(about 3-4 hours
  • 3. Shred cabbage with grater or food processor.
  • 4. (Cube Corned Beef) Before serving, add cabbage, pickles, corned beef and onion. Mix together Mayo, milk and 1/2 tsp. salt. Pour over potatoes, Toss LIGHTLY.
  • 5. Makes 6-8 servings, can double this recipe for larger families and or pot lucks, I hope you enjoy this amazing salad as much as I have in my life time, like I said, best served the next day :) Enjoy!

6 large potatoes
12 hard-boiled eggs
5 whole dill pickles
2 cups mayonnaise, approximately
1/2 cup mustard, approximately
salt (optional)

Steps:

  • Dice peeled potatoes and cook until done.
  • Boil eggs (10 minutes of solid boiling) and cut into medium size chunks.
  • Dice pickles.
  • Mix all ingredients together.
  • **Mayo and mustard is approximate. It depends on the size of your potatoes as well as how your preference is. Salt to your preferred taste as well.
  • Refrigerate until cold.

I call this Dad's Potato Salad because my FIL made the "best" potato salad. He taught me how to make it. Everyone in the family says that mine tastes just like his!(I say it's close, but not exact!) We lost him about a year ago, miss him terribly. Hope you enjoy this!

6 medium russet potatoes, peeled & diced (1 inch cubes)
5 extra large eggs
3 stalk(s) celery, diced
1 medium onion, diced
1-1/2 c mayo, hellmans is a must!
1 Tbsp garlic salt
1 -1/2 tsp black pepper
1 tsp celery salt
1 tsp dry mustard

Steps:

  • 1. Fill a large pot potatoes & eggs & cover with water, about an inch over the top. Boil on med-high heat for approximately 20 min.( Check softness of potatoes, just want to be able to pierce with a fork)
  • 2. Drain. ( I like to cool my potatoes if I have time) Remove eggs, peel & dice.
  • 3. In a large bowl, gently all ingredients until well mixed. Cover & refrigerate at least 4 hours. The longer the better! Enjoy!
