DADDY'S SAUSAGE AND PEPPERS



Daddy's Sausage and Peppers image

This is a great recipe for anyone who loves bell peppers! My dad always made this for me when I was growing up... now I make it for my own family and get raves every time! Serve over pasta and with bruschetta for a full meal! Enjoy!

8 (4 ounce) links Italian sausage
1 tablespoon garlic flavored olive oil
3 green bell pepper, seeded and cut into strips
2 red bell peppers, seeded and cut into strips
1 yellow bell pepper, seeded and cut into strips
1 (14.5 ounce) can diced tomatoes, drained
2 tablespoons Italian seasoning
6 cloves garlic, chopped
1 large onion, cut into wedges
¼ cup grated Parmesan cheese
¼ cup shredded mozzarella cheese
2 tablespoons garlic flavored olive oil

Steps:

  • Slice each sausage link into 5 pieces. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the sausage, and cook until browned, turning as needed.
  • Drain excess grease, then add the green, red and yellow peppers, tomatoes, and Italian seasoning. Drizzle the remaining olive oil over all, and reduce the heat to medium-low. Cover, and let simmer for 15 minutes.
  • Remove the lid, and stir. Add the garlic and onion to the pan. Sprinkle with Parmesan cheese. Cover, and simmer for 15 more minutes. Stir, then top with mozzarella cheese. Cover and cook for 5 minutes to melt the cheese. Remove from the heat and enjoy.

A delicious sausage and rice casserole with almonds, onions, peppers and dry chicken noodle soup mix. Try it! You'll like it!

1 pound fresh, ground pork sausage
1 onion, finely chopped
1 cup chopped celery
1 green bell pepper, chopped
½ cup uncooked long-grain rice
2 ½ cups hot water
1 envelope chicken noodle mix -dry
2 tablespoons sliced almonds

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a Dutch-oven over medium heat, brown the sausage with the onion, celery and bell pepper; drain. Pour in rice, hot water, and soup mix. Stir until any lumps of soup have melted. Top with almonds. Cover and bake in a preheated oven for 1 1/2 hours.

Ever since I was a little girl, my dad would come up with recipes to feed us 6 kids. This is one of the more popular ones! We would all fight for seconds! I sometimes will change up the peppers and use multi-colored peppers.

4 1/2 c water
2 envelopes dehydrated chicken noodle soup mix
1 c uncle bens long grain rice
1 lb bulk sausage roll
1 1/2 c celery, chopped
1 medium onion, chopped
1/2 c green pepper
2/3 c sliced blanched almonds

Steps:

  • 1. In large saucepan, bring water and soup mix to a boil. Add rice and cover. Reduce heat to very gently boil for 25 minutes or until water is absorbed, remove from heat.
  • 2. While rice is cooking, fry sausage until browned. Remove meat from pan, reserving some fat for sauteing peppers and onions and celery until tender-crisp.
  • 3. Add rice, sausage and 1/2 cup of the almonds to vegetables reserving remainder of almonds for garnish. Mix well. Turn into a 2 quart baking dish. Sprinkle remaining almonds over top.
  • 4. Bake at 350 for 30 minutes or until heated through.

This casserole is great morning, noon or night! It is also a great addition to your meal prep since it reheats and even freezes really well!

1 1/4 cup Shredded Mozzarella Cheese
1 oz Cream Cheese
2 tbsp Unsalted Butter
3/4 cup Almond Flour
1/2 tbsp Baking Powder
7 Eggs (divided)
1 lb. Breakfast Sausage (cooked and crumbled)
1 cup Shredded Zucchini (about 1 medium zucchini)
1 cup Shredded Cheddar Cheese
Salt and Pepper (to taste)

Steps:

  • Start by preheating your oven to 400 degrees F and greasing a 7x11 baking dish.
  • Combine the butter, cream cheese and mozzarella cheese in a large microwave-safe bowl. Microwave for 1-minute intervals, stirring in between each interval until it's all melted. The cheeses will combine easily, but the butter may be stubborn - don't worry, it will all mix together when you add in the rest of the ingredients.
  • Once the cheese is melted, add in the almond flour, baking powder, and 1 egg.
  • Using your hands or a stand mixer with a dough hook attachment - stir the dough until it becomes uniform.
  • Once the dough has come together, spread it into the bottom of greased a 7x11 baking dish. You can also use a 9x11 dish, but you will have to work a little harder to get it spread out enough and I am all about making things easier!
  • Pop it in the oven for about 10-15 minutes, until golden brown. Remove from the oven and decrease your oven temp to 350 degrees F.
  • While it's baking, add a dash of salt to your zucchini, allow it to sit for about 5 minutes - then squeeze it to remove excess water.
  • Top the "bread" layer with the cooked and crumbled sausage, the shredded zucchini and cheddar cheese.
  • In a separate bowl, crack your 6 remaining eggs and whisk them well. *If you are prepping this ahead of time - then this is where you will be stopping. Simply cover the bowl of eggs and the casserole dish and refrigerate until you are ready to cook it*
  • Pour the eggs over the sausage, cheese and zucchini mixture and place it all in the oven. Loosely cover with aluminum foil and bake for about 20 minutes, then remove foil and bake an additional 10 minutes or until the eggs are set.
