  • Preheat the grill for high heat.
  • Place the steaks in a bowl, and drizzle on both sides with maple syrup. Rub with garlic, seasoned salt, and pepper.
  • Lightly oil the grill grate. Place steaks on the grill, and cook 7 minutes per side, or to desired doneness.

While creating a great tasting and well-balanced rib rub might seem like a simple task, it is actually a complex process that takes a bit of practice to master.

1 Cup Tightly Packed Brown Sugar
1/2 Cup Smoked Paprika Powder
2 1/2 Tablespoons Sea Salt or Kosher Salt
2 1/2 Tablespoons Freshly Ground Black Pepper
1 1/2 Tablespoons Ground Onion Powder
1 1/2 Tablespoons Ground Chili Powder
1 1/2 Tablespoons Ground Garlic Powder
1 Tablespoon Ground Mustard Powder
1 Teaspoon Ground Cayenne Pepper

Steps:

  • Take out a large mixing bowl and add into it all of the aforementioned ingredients.
  • Use a bowl large enough that the ingredients only take up about one-third of the vessel, as this will give you adequate space to thoroughly mix the blend without spilling ingredients over the edge.
  • Using a high-quality metal whisk, thoroughly mix all of the ingredients together until all of the rub blend ingredients are evenly dispersed.
  • Don't solely rely on a vision based assessment of the blend to ensure that it is thoroughly mixed, rather dip your little finger into it and do one or several taste tests to evaluate it.
  • This is the most important step in creating a master rub blend, so blend the ingredients together as best as you can.
  • Store your mixed rib rub blend in glass mason jars with airtight lids.
  • When filling these glass jars with your blend, always make sure to leave at least a third to a quarter of empty space at the top of the jar.
  • This will give you enough space needed to manually shake the blend up in the event that the ingredients have settled.
  • If you do not plan to use your rib rub right away then be sure to store it in a dark and cool place, which will preserve the flavor integrity of your ingredients.
  • Exposing your rib rub ingredients to heat or direct sunlight can significantly age the ingredients and reduce the flavor of your overall blend.
  • If you plan to apply your rib rub blend to your ​rack of ribs immediately, then be sure to keep your mason jar away from your BBQ, grill, or any other sources of heat or moisture.
  • We strongly recommend that you pour the needed rub amount into a separate bowl, then place the mason jar back into a cool dark place.
  • It is better to draw the rub ingredients from a bowl then direct from your mason jar, otherwise, you can ruin your blend by exposing it to moisture or the elements.

1/8 cup kosher salt
1/8 cup smoked paprika
1 tablespoon ground cumin
1 tablespoon hot chili powder

1 tablespoon fresh ground black pepper

2 cups apple cider
1/4 cup granulated sugar
1 tablespoon red pepper flakes
2 tablespoons buttermilk
1 teaspoon lemon juice
1 teaspoon lemon zest
5 lbs pork spareribs, St. Louis style
2 liters cola (recommended ( Coca-Cola)
4 cups water

Steps:

  • BIG DADDY RUB: In a medium sized bowl, mix all rub ingredients until well combined.
  • APPLE CIDER-BUTTERMILK SAUCE: In a medium pot add apple cider, sugar and red pepper on medium high heat.
  • Reduce by half.
  • Pour mixture into a separate bowl.
  • Add buttermilk and mix thoroughly and add lemon juice and zest.
  • RIBS: Rub ribs with 1 cup Big Daddy Rub until evenly coated on both sides.
  • Allow ribs to marinate at room temperature for 30 minutes.
  • Preheat oven to 350 degrees F.
  • Place ribs in 2 large roasting pans and cover with the cola and water.
  • Cover with foil and cook in oven for 1 1/2 hours.
  • Remove ribs from oven and allow to cool.
  • Slice ribs into individual-size pieces.
  • Preheat grill over medium-high heat.
  • Place ribs on the grill.
  • Brush on apple cider-buttermilk sauce.
  • Cook for additional 5 minutes.
  • In a large bowl, toss ribs with another 1 cup of rub until well coated.
  • Spread ribs out on a sheet tray and bake in the oven for an additional 20 minutes until caramelized.
  • Serve alongside a cider-buttermilk sauce, chipotle aioli, or harissa rouille.

2 cups Big Daddy Rub, recipe follows
2 liters cola (recommended: Coca-Cola)
4 cups water
Apple Cider Buttermilk Dipping Sauce, recipe follows
3 cups brown sugar
1/4 cup kosher salt
1/4 cup smoked paprika
2 tablespoons ground cumin
2 tablespoons hot chili powder
2 tablespoons cayenne
2 tablespoons freshly ground black pepper
2 tablespoons red pepper flakes
2 cups apple cider

1/4 teaspoon ground allspice

Steps:

  • PREHEAT oven to 300°F.
  • COMBINE the RUB ingredients in a small bowl.
  • RUB mixture evenly over ribs (save any spare seasoning rub for another use).
  • POUR one inch of apple juice (or water) into a roasting pan; WRAP ribs with foil and place into pan, foil-seam up; PLACE foil-wrapped ribs into roasting pan; BAKE between 2 1/4 - 2 1/2 hours (replenish liquid in pan as needed).
  • MEANWHILE prepare Recipe #436708: WHISK all of the SAUCE ingredients together in a medium saucepan: One 7 oz. jar Dynasty brand plum sauce, 6 tablespoons tomato paste, 1/4 cup Apipharm brand Thyme and Wild Flower honey, 1/4 cup A-1 steak sauce, 1/4 cup white vinegar, 2 tablespoons Frank's buffalo wing sauce, 2 tablespoons fresh lime juice, 1 tablespoon pineapple juice, 1 1/2 teaspoons mesquite liquid smoke flavoring, 1 teaspoon fresh lemon juice, 1 teaspoon fresh orange juice, 1 teaspoon Lea & Perrin's Worcestershire sauce, 1/2 teaspoon garlic salt, 1/2 teaspoon onion salt, 1/2 teaspoon ground allspice, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground cumin, 1/4 teaspoon ground ginger, 1/4 teaspoon ground mustard; SIMMER sauce over low heat for 30 minutes, whisking occasionally; REMOVE from heat.

  • BAKING METHOD: Preheat oven temp to 450°F Bake ribs unwrapped, top side down, for 8-10 minutes. SLIDE oven rack out carefully using oven mitts; TURN ribs over carefully with tongs; BASTE the top again with sauce; BAKE for a remainder of 8-10 minutes or until the sauce caramelizes and edges are lightly charred, without overcooking; ALLOW ribs to cool 10 minutes before serving.
