I grew up on this. It is a major component of my "comfort food arsenal". It's NOT a heavy, thick potato soup, but it's very satisfying. This is a good recipe to keep on-hand when money gets tight. It will feed a hungry family of 4 for almost nothing.

4 to 5 large potatoes
2 medium onions
1 stick butter
2 12 oz. cans evaporated milk
salt and pepper to taste
oyster crackers

Steps:

  • 1. First off...do NOT NOT NOT get EVAPORATED milk confused with sweetened condensed milk...yuck.
  • 2. Peel potatoes and onions. Cut potatoes into 1-inch cubes. Cut onions into 1-inch pieces.
  • 3. Place potatoes and onions in large pot, add water just to cover (about 1 inch above potatoes). Boil until potatoes are soft but not mushy.
  • 4. Do NOT drain off water. Add EVAPORATED milk and butter, stir. Season to taste with salt and pepper. Serve with oyster crackers on top.

Easy Creamy Homemade Potato Soup image

You will love this easy homemade potato soup recipe with potatoes, veggies, garlic, and a creamy broth. The soup is comforting and ultra-flavorful. For the best potato soup, use Yukon Gold potatoes. They have thin skins, so it is not necessary to peel them. They also become buttery and soft when cooked. There are two ways to serve this soup: brothy or thick and blended (our favorite). We love both and making them is the same except for the last step. For a thick, luxurious, and blended soup use a potato masher or immersion blender to puree or mash about half of the potatoes in the soup to thicken it.

3 tablespoons butter or olive oil
2 cups chopped onion (1 medium)
1 cup chopped carrot (2 medium)
1 cup chopped celery (2 to 3 stalks)
1 tablespoon minced garlic (3 cloves)
1 teaspoon chopped fresh rosemary or 1/4 teaspoon dried rosemary
1/4 teaspoon crushed red pepper flakes
3 tablespoons all-purpose flour
4 cups stock or broth, see our chicken stock or vegetable broth
4 cups chopped potatoes, cubed (1 1/2 pounds or 3 to 4 medium)
1 bay leaf
Salt and fresh ground black pepper
1/4 cup cream, half and half, sour cream or plain yogurt
1 cup (2 ounces) shredded cheese like sharp cheddar or gruyere, optional
For serving (optional): Chopped parsley, chives or scallions, extra shredded cheese, sour cream, crumbled cooked bacon, hot sauce

Steps:

  • In a large heavy-bottomed pot (like a Dutch oven), melt the butter over medium heat. When the butter is melted, stir in the onions, carrots, and celery. Cook, stirring occasionally until they begin to soften; 5 to 6 minutes.
  • Stir in the garlic, rosemary, red pepper flakes, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper, and then cook, stirring everything around the pot, for 30 seconds.
  • Scatter the flour over the vegetables and cook, stirring, until it looks medium blonde in color; about 1 minute. It will smell toasty, like browned butter.
  • Slowly whisk in 2 cups of the stock, making sure there aren't any lumps of flour. It will be thick.
  • Pour in the remaining stock and whisk until blended. Increase the heat and bring the soup to a boil then reduce to a simmer.
  • Add the potatoes and bay leaf, and then cook, partially covered, until the potatoes are fork tender; about 20 minutes.
  • Turn the heat to low, remove the bay leaf, and then stir in the cream and cheese.
  • Taste for seasoning then adjust with more salt and pepper as needed. Serve with fresh herbs on top or for a thick and blended soup, use a potato masher to mash or an immersion blender to blend about half of the potatoes in the soup (this is Joanne's favorite way to serve the soup).

My family loves this soup. They call it Dad's world famous potato soup. I wouldn't go that far, but it is pretty awesome. Make the potatoes a little different in size when you cut them up, it adds to the complexity of the soup.

1 gallon water
1 lb carrot, peeled and sliced 1/4-inch thick
1 cup celery, chopped 1/8-inch thick
5 lbs potatoes, peeled and cubed between 1/2-inch and 3/4-inch
1 lb about 2 cups ham
2 teaspoons salt
1 teaspoon black pepper
1/2 cup butter
2 cups large diced white onions
1/3 cup flour
1 cup milk
1 tablespoon parsley
smoked cheese (optional)

Steps:

  • Combine water, celery, carrots and half of the salt and pepper in a large soup kettle.
  • Heat on high heat to a boil then turn down heat to medium high and boil for 5 minutes.
  • Add potatoes and half of ham. When the kettle boils again it should take about 15 minutes until the potatoes are tender on a low boil. Start checking at this time. You should just be able to put a fork into the potatoes with little resistance.
  • In a medium sauce pan add the butter, onions, left over salt and pepper. Cook on medium high heat stirring the onions about every 2 minutes for about 10 minutes till soft. You can tell they are done when the bottom of the pan starts to brown a little.
  • Keep the pan on the heat and shake the flour over the onions. Now stir it into the onions for ½ minute. Pour in the milk and 3 cups of the potato water. Whisk it in till its well mixed, about ½ minute. It will be thick. Now add this and the rest of the ham to the potato's when they are finished. Stir for about ½ minute till it's well mixed.
  • Cook over med high heat stirring the bottom of the pan constantly until you reach a boil. Boil for 1 minute and remove from heat.
  • Remove 2 cups of the potato mixture and mash them with a little of the soup juice in the sauce pan. Add the mashed potatoes and the parsley to the kettle and check your seasonings. The mashed potatoes will thicken the soup some more and add more depth to it.
  • Serve with shredded cheese on top if you like and crusty bread. We like smoked cheese with ours.
  • If you have a ham bone boil it with 1 chop carrot, 1 chopped celery stalk and 1 chopped onion for 45 minutes in the gallon (plus 1 cup) water. Remove the bone to a plate to cool and strain the water before making the recipe. Add the ham bone meat when soup is finished.

4 large potatoes, cubed
6 stalks celery, chopped
1 large onion, chopped
4 cups water, or as needed
1 (12 fluid ounce) can evaporated milk
6 tablespoons butter
salt and ground black pepper to taste
1 tablespoon instant mashed potato flakes, or as desired

Steps:

  • Place the potato cubes, celery, and onion into a pressure cooker and add 4 cups of water, or enough to reach the fullness mark on your cooker. (Follow manufacturer's directions for how full to fill your cooker.) Cover the cooker, seal, and bring the pressure up over medium heat. When cooker reaches full pressure, reduce heat to maintain the pressure, and pressure-cook the vegetables for 25 minutes.
  • Allow the pressure in the cooker to subside, and release the cover on the cooker when the pressure is normal. Mix in the evaporated milk, butter, salt, and black pepper, and bring the soup to a boil over medium heat. Reduce heat to a simmer, and cook the soup to the desired thickness, 5 to 15 minutes. If you like a thicker soup, mix in mashed potato flakes to desired consistency.

This is the perfect prescription when you're sick.

1 pound favorite link sausage, thinly sliced 1/16 to 1/8"
4 pounds peeled and diced russet potatoes
2 medium onions chopped
4 cloves garlic chopped
24 ounces deluxe American cheese
1 stick butter
1 tablespoon fresh rosemary, chopped
16 to 32 ounces milk
Salt and pepper to taste

Steps:

  • In 6- or 8-quart pan, melt butter on medium-low heat with onions. After onions are translucent, add garlic and rosemary for 2 minutes.
  • Add sausage and cook another 2 or 3 minutes. Add potatoes and cover potatoes with water. Change heat to high and bring potatoes to a boil.
  • After potatoes become very tender, to the point of falling apart, reduce heat to low and add cheese a little at a time until all melted. Add milk, salt, and pepper and cover for 15 minutes.
  • Great with saltine crackers.

CREAMY POTATO SOUP RECIPE

This Easy Potato Soup recipe is the real deal. Shared with me from the granddaughter of an Idaho potato farmer, this homemade soup is creamy, thick, and luxurious, even without the optional cheesy garnish. It is truly the best potato soup I've ever had. And it only takes about 30 minutes to make!

4 cups diced Russet potatoes (2 large potatoes, about 2 pounds)
1 cup diced carrots (about 2 large )
1 clove garlic (mashed and diced)
3 cups water
1 tablespoon Better Than Bouillon Chicken Base (chicken or turkey flavor is great)
1/4 cup fresh chopped parsley (or 1 tablespoon dried parsley)
1 teaspoon kosher salt
1/2 cup butter (one stick)
1/2 cup all purpose flour
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
4 cups milk (whole milk is best)
cheddar cheese
chopped green onions
chopped parsley

Steps:

  • Boil the veggies. Peel the potatoes (2 large potatoes, about 2 lbs) and dice them. I like a fairly small dice, about 1/2 inch. Place in a stock pot or 3 quart pot. If you have not quite 4 cups of potatoes, or more like 5 cups, don't sweat it that's fine.
  • Peel the carrots and dice about the same size as the potatoes. Add to the pot.
  • Smash and mince 1 clove of garlic and add to the pot.
  • Add 3 cups of water to the potatoes and carrots. The water should be just barely covering the vegetables, so add a little more or less to make sure they are just barely covered. (We are not draining these potatoes, this water will be part of the soup.)
  • Add a heaping tablespoon of Better Than Bouillon Base. The Roasted Chicken flavor is great, but I also love the Turkey base, it has really rich flavor. If you don't have Better than Bouillon, you can use a couple teaspoons of bouillon granules or cubes. Those are much saltier than the paste so be careful.
  • Chop about 1/4 cup fresh parsley, or use 1 tablespoon dried parsley. Add it to the pot.
  • Add 1 teaspoon kosher salt. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium to keep it at a steady simmer. Vent the lid (tilt it so that steam can escape.) Simmer for about 20 minutes, until the potatoes and carrots are very tender. You should be able to smash one with a fork easily. Remove from heat.
  • Use a potato masher and roughly mash the mixture to your desired texture. I like a velvety soup with some chunks. You can leave it very chunky by not mashing at all, or if you want an ultra smooth soup you can use an immersion blender.
  • Make the white sauce (bechamel). Meanwhile, in a 2 quart pot or larger, melt 1/2 cup butter over medium heat. Once it is melted, add 1/2 cup flour and use a whisk to stir it together into a paste. Add 1/2 teaspoon kosher salt and 1/2 teaspoon pepper. Cook this mixture for 1-3 minutes, stirring constantly.
  • Slowly add the 4 cups of milk, 1 cup at a time. Use the whisk to incorporate the milk into the roux (roux=butter/flour mixture) every time you add more. See photos. It should take a few minutes to add all the milk.* If you dump it in all at once, you will have flour chunks in your soup. Don't be like that.
  • Once all the milk is added, keep stirring often so the bottom doesn't scorch. Your heat should still be on medium. Wait until the mixture has come to a boil (consistent bubbles rising from the center) and then let boil for 1 minute, stirring. Remove from heat.
  • Pour the white sauce into the pot with the potatoes, using a spatula to scrape all that goodness in. Stir the mixture together.
  • Serve warm and garnish with extra chopped parsley, shredded cheddar cheese, and chopped green onions.
  • Store leftovers in the fridge for up to 5 days. Don't freeze this soup! The potatoes absorb tons of moisture, making the white sauce separate, and then it gets grainy on you. No thanks. Time to invite a friend over for soup and stories. I mean shouldn't that be a thing anyway?

2 teaspoons olive oil or 2 teaspoons bacon grease
1 onion
2 cups milk
1/4 cup sour cream
4 slices bacon (cooked)
2 cups chicken broth

Steps:

  • Peel onions and dice.
  • In a large sauce pan, saute onions in olive oil or bacon grease until translucent.
  • Peel potatoes and dice.
  • Add potatoes and chicken broth to onions.
  • Bring to a boil, reduce heat and cook until potatoes are tender (30-45 minutes).
  • Add sour cream, milk.
  • Break bacon into one or two inch parts and add to pan.
  • Return to a boil, then simmer 30 minutes.
