AMISH MASHED POTATO CANDY
An easy, festive, holiday treat!

Steps:
- Mix powdered sugar with mashed potatoes.
- Add vanilla and mix until it is like pie dough.
- Roll out in shape of pie crust with a rolling pin.
- Spread with peanut butter.
- Roll up small and cut in slices, about ½-inch thick.
- Place on large platter and put in refrigerator until chilled
POTATO CANDY

Steps:
- Beat mashed potato and next 3 ingredients at medium speed with a heavy-duty electric mixer 2 minutes. Beat in 6 cups powdered sugar, 1 cup at a time. Add up to 1 cup powdered sugar, 1 Tbsp. at a time, to form dough.
- Gather dough into a ball; dust with powdered sugar. Roll to ⅛ inch thick on parchment paper, and cut into a 12- x 10-inch rectangle. Generously sprinkle powdered sugar over dough, and place a piece of parchment paper over rectangle. Invert rectangle; discard parchment paper on top.
- Spread peanut butter over dough. Starting at 1 long side, tightly roll up candy, jelly-roll fashion, using parchment paper as a guide. Wrap in parchment paper, and freeze 1 hour. Cut into ¼-inch-thick slices, and serve. Refrigerate sliced candy in an airtight container up to 1 week.
DAD'S POTATO CANDY
This is a candy recipe my dad has been making since I could remember. I always thought he was just making stuff up when he made it. It's a very sweet and easy-to-make treat.

Steps:
- Place potato into a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until very tender, about 30 minutes. Drain. Transfer potato to a large bowl and mash until smooth. Stir vanilla extract into mashed potato.
- Stir confectioners' sugar gradually into mashed potato until consistency is like cookie dough; add more confectioners' sugar if candy is too runny.
- Sprinkle a large piece of waxed paper with confectioners' sugar and roll potato candy out into a rectangle 1/4 inch thick. Spread peanut butter onto candy. Roll candy and peanut butter into a tight spiral; wrap candy log in waxed paper. Refrigerate until firm, about 1 hour. Cut into slices to serve.

GRANDMA SHUFELT'S POTATO CANDY
Potato candy is a treasured memory of Christmas past. Grandma Shufelt, and then Aunt Claris made this rich treat only once each year. Was Dad ever surprised when I made it for him after my aunt passed. I'm the only family member who thought to ask for this 'secret' recipe.

Steps:
- Cook and mash potatoes.
- While still warm, add the powdered sugar.
- Mix well.
- Add the coconut and nuts (I use peanuts).
- Add vanilla.
- Mix well.
- Form into small shapes or balls and leave for a while to cool and set.
- Melt dipping chocolate in a double boiler.
- Using a toothpick, roll each ball into the melted chocolate.
- Store in a cool place.

GRANDMA'S PINWHEEL CANDY
This is potatoe candy without the potatoes. This was my Dad's favorite during the Christmas holidays. Sweet and yummy!

Steps:
- Mix all but peanut butter together.
- (add more milk/ or sugar if you need. Should be like a doughy ball, but not real sticky).
- On wax paper, sprinkle some of the sugar on it to help if from sticking, and roll out mixture. Make it as square as possible.( I roll mine out sort thin, but again this depends on your preference).
- Smooth on peanut butter to desired thickness.
- Start on oneside, and begin rolling it up. (It will look like a large log) Put sugar on your hands and keep putting on 'log' as you roll it up to help make it easier.
- Take the 'log', and roll it up in wax paper, and then a kitchen hand towel (to help keep shape) and chill in the fridge (or freezer if you are in a hurry)The colder- the easier to slice.
- Once cold, slice as desired thickness.
- (put wax paper in between layers when stacking so the pieces don't stick together).
- Keep refridgerated until time to serve.

- To start, peel and cut your potatoes into about 1/2 -1 inch cubes. Place them into a large pot and wash the starch off until the water runs clear. Fill the pot with cold water to fully submerse potatoes. Add a dash of salt.
- Boil the potatoes for about 15 minutes or until they are fork tender. Drain the potatoes and add milk, butter, and salt.
- Using an electric hand mixer, beat the potatoes on high until they start to form peaks. If the potatoes still seem thick and need to be creamer, add additional milk. Also add additional salt to taste. (You can also mash them with a potato masher.)
