PEPPER STEAK AND RICE
This is a recipe that all my children loved, and that my daughters still make.

Steps:
- Place rice and 2 cups water in a medium saucepan, and bring to a boil. Cover, reduce heat, and simmer 20 minutes.
- Heat olive oil in a medium saucepan over medium heat, and saute onion and green bell pepper until tender.
- Stir steak, garlic, and browning sauce into the onion and green bell pepper mixture. Season with paprika, seasoning salt, and black pepper. Cook and stir until steak is evenly browned. Mix in 1 1/2 cups water, and bring to a boil.
- In a small bowl, dissolve cornstarch in 1/2 cup water. Stir into the boiling steak mixture until thickened. Serve over the cooked rice.

VENISON TIPS AND RICE
This is a great recipe for your deer hunter. I'm not crazy about venison, but with this recipe, you don't taste the wild game. My father-in-law swears it's made with beef tips. Serve and see what your family thinks!!

Steps:
- Heat the oil in a large skillet over medium-high heat. Add the venison chunks, and cook until nicely browned on the outside and almost cooked through.
- Prepare the beef flavored rice mix according to package directions. While the rice is cooking, add the venison, green pepper, red pepper and onion. Simmer until rice is done and peppers are tender.

VENISON STEAK WITH PEPPERS AND ONIONS
This is my brother Bob's recipe. I've always been loathe to eat food made with Bambi, but I couldn't resist the smell of this. Know what? It was delicious! He brings this out at football watching parties, but denies it's venison until after the taste test. Serve with rice or noodles.

Steps:
- In a medium bowl, stir together the beef broth, sherry, soy sauce, salt and pepper. Season the meat with curing salt and steak seasoning, then place it in the bowl with the marinade. Cover and refrigerate for 2 to 3 hours.
- Heat one tablespoon of oil in a large skillet over medium-high heat. Use tongs or a slotted spoon to transfer the venison to the skillet, reserving the marinade. Cook and stir until browned and cooked through, 3 to 5 minutes, depending on the size of your pieces. Remove to a clean bowl.
- Heat the remaining tablespoon of oil in the same skillet over medium-high heat. Add the onion and bell pepper strips; cook and stir until starting to become tender, 2 to 3 minutes. Remove them from the pan and place them in the bowl with the meat.
- Dissolve the cornstarch in 2 tablespoons of the reserved marinade. Pour the rest of the marinade into the skillet. Bring to a boil, then simmer over medium heat for a minute. Stir in the cornstarch slurry and continue to cook, stirring slowly until thickened, about 1 minute. Return the meat and vegetables to the skillet and stir until coated with the sauce. Transfer to a serving dish.

PEPPER, STEAK AND RICE
My mother gave me this forgotten recipe from my childhood and now my husband and children beg for it. It's really easy and tastes great.

Steps:
- Cut steak into bite-size pieces and brown in a large skillet with a little oil.
- While browning cut bell pepper and onion into bite-sized pieces.
- Just cover the now-browned meat with water and add onion and pepper.
- Add soy sauce and one can of water chestnuts.
- Simmer for 20 minutes.
- Dissolve corn starch in cool water and add to the mixture to thicken.
- Serve over rice.
- enjoy!

PEPPER STEAK OVER RICE
A friend emailed this recipe to me and I tried it. DELICIOUS and a real kid pleaser! I served it over brown rice and my husband and I sprinkled red pepper flakes over the top of our servings for a kick. If we were not serving it to the kids, we would have cooked it right in.

- Heat olive oil in a skillet over medium heat.
- Heat a large skillet. Cook onion, bell peppers, and garlic in oil until tender-crisp, stirring frequently. Pour into a bowl and set aside.
- Wipe out skillet with paper towel.
- Heat the same large skillet over medium-high heat. Pour soy sauce, honey, and red wine vinegar in pan, then add beef. Cook beef, stirring frequently, until done, about 10 to 15 minutes. Stir in cooked vegetables, and cook another 10 to 15 minutes.

PEPPER STEAK FOR TWO
This recipe was adopted from an old cookbook called Cooking for Two by Sue Russell. I love the flavour of this very quick and simple to prepare steak. I highly recommend that you use whole peppercorns that you crack yourself.

Steps:
- Place peppercorns in a ziplock bag and crush coarsely with a rolling. Alternatively, you may use a mortar and pestle but you may have the pepper escaping as it's crushed.
- Press cracked pepper into both sides of steaks.
- In a heavy-based frying pan, heat butter and oil and cook steaks to desired doneness, turning once. (Medium-rare takes about 8 to 11 minutes, Medium takes about 12 to 14 minutes).
- Remove from pan and keep hot.
- Stir brandy into the pan juices and bring to a boil, scraping the sediment from pan.
- Remove from heat and add extra butter.
- Pour this sauce over the steaks and serve immediately.

CANTONESE PEPPER STEAK FOR TWO (OR MORE)
This recipe makes a great duo dinner. Or, you can easily double, triple or even quadruple it! Assemble in advance, then just throw in the oven 30 minutes before you are ready to eat! Serve over hot noodles or rice. Update: I have to admit that I prefer a good sirloin or filet mignon, but my DH actually prefers the top round steak (as written) in this recipe. Add minced garlic in place of the garlic powder, if you like, and also a pinch of freshly ground black pepper, is good. Recipe is from Cooking Sampler for 1 or 2 with Reynolds Consumer Products. Uses one regular size (10"x16") Reynolds Oven Cooking Bag (or use heavy duty aluminum foil).

- Place regular size (10"x16") Reynolds Oven Cooking Bag (or heavy duty aluminum foil) in 10x6x2-inch baking dish. Trim fat off meat; cut into thin strips, set aside.
- Combine cornstarch, ginger, garlic powder, soy sauce and bouillon in bag; turn gently to mix.
- Add meat. Close bag with nylon tie. Marinate in refrigerator 3 to 4 hours or overnight; turn once.
- When ready to cook, preheat oven to 350 degrees F. Add green pepper. Make 6 half-inch slits in top of bag.
- Cook 25 to 30 minutes or until beef is done.
- To serve, spoon over noodles or rice.
- Makes 2 servings.
- Note: Cook time does not include marinate time.
