BREAKFAST FRENCH FRY AND EGG CASSEROLE



Breakfast French Fry and Egg Casserole image

8 ounces Frozen French Fries
2 tsp salt
1 tsp ground black pepper
1/2 tsp granulated garlic
4 ounces chedder cheese
1/2 cup whole milk
2 whole bellpeppers
6 strips bacon
1/2 cup green onion

Steps:

  • Preheat oven to 450. Scramble 6 eggs with salt, pepper, granulated garlic, milk, and about 2 ounces of grated cheese. Place in a baking dish with frozen french fries.
  • Chop bell peppers and place about half of them in the baking dish and mix in with the fry and egg mixture. Cover with tin foil and bake for about 30 minutes.
  • While the dish is baking, Cook 6 strips of bacon, then chop along with the green onions. Have the remaining bell peppers on hand.
  • After 30 minutes, remove the tin foil and top with the remaining cheese, bell peppers, bacon and green onion. Bake for another 15-20 minutes until the cheese begins to brown.
  • Serve as a side at brunch, or as a main breakfast dish along with some ketchup or ranch. Enjoy!

DAD'S "WAKEUP MAKEUP" BREAKFAST CASSEROLE

A quick - "throw together" breakfast casserole that will please your hungry "crew".

1 tablespoon Butter or margarine
2 baked potatos leftovers or bake in microwave
1 cup refried beans canned or leftovers
1 cup medium picante salsa
6 Eggs
1/4 cup milk
Salt and pepper to taste
1 cup shredded cheese
cheddar monterey jack or mixed
12 fresh flour tortillas

Steps:

  • Preheat oven to 375F. Grease the bottom of a 9X12 baking dish with the butter. Slice the potatos diagonally in 1/4 - 1/2 inch slices. Leave skins on. Place a layer on the botton of the dish. Cover the potatos w/ a layer of refried beans. Top that with the rest of the potatos. Spread about 1/2 the salsa over the layers followed by 1/2 of the cheese. Crack the eggs into a bowl, add the milk, and mix them with a whisk or fork. Add salt & pepper then pour eggs into the baking dish. Top the layers with the remaining cheese. Cover dish w/ foil and bake about 45 mins. At about 30 mins you can remove the foil to allow the top to brown. When a knife comes out clean it's ready. Put the remaining salsa (warmed) on top as garnish. Serve with warmed flour tortillas. You may want a spicier salsa on the side for the "pepper bellies" in the group. Pete Romfh, Dec. 2002

1 (16 ounce) package bulk pork sausage
3 cups frozen hash brown potatoes, thawed
¼ cup milk, or as needed
1 (16 ounce) can refrigerated buttermilk biscuit dough (such as Pillsbury Grands!®)
1 ½ cups shredded Mexican cheese blend
5 eggs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat and stir in the sausage. Cook and stir until the sausage is crumbly, evenly browned, and no longer pink, about 5 minutes. Drain and discard any excess grease. Stir in the hash brown potatoes, cooking and stirring until potatoes are browned, about 5 minutes more.
  • Line the bottom of the prepared baking dish with a layer of buttermilk biscuits, splitting the biscuits in half to completely cover the dish. Spread the sausage and hash brown mixture evenly over the biscuits, and sprinkle the Mexican cheese on top. Whisk together the eggs and milk in a bowl, and pour over the cheese.
  • Bake in the preheated oven until the eggs set, about 25 minutes.

Biscuit Breakfast Bake
10 eggs
1/2 cup milk
16 oz refrigerated breakfast biscuits (I used the Pillsbury flakey kind) DO NOT COOK FIRST
4 scallions (green onions, spring onions, whatever you prefer to call them)
1 cup shredded extra sharp cheddar cheese
If you're into the meats - cooked center cut bacon or cooked sausage
11×17 pan, sprayed with cooking spray (Note: I think a 9×13 works better, but it might need to bake a little longer)

Steps:

  • 1. Mix your eggs and milk in a large bowl. Cut each biscuit (I'm all about scissors in the kitchen) into fours and add it to the bowl. I like to do this before I cook the bacon or cut up the scallions - give the biscuits some time to really soak in the eggs. 2. Cut up your scallions, shred your cheese, cook and break up your bacon (or sausage). Add everything to the bowl. 3. Mix it all up and pour into your pan. Bake at 350 for 25-30 minutes .. closer to 30 so it isn't runny

8 ounces egg noodles or 8 ounces wide egg noodles
1 lb ground beef
2 garlic cloves, crushed
2 teaspoons salt
2 teaspoons sugar
16 ounces tomato sauce
1 cup sour cream
8 ounces cream cheese, softened
6 green onions, minced
1 cup cheddar cheese, grated

Steps:

  • Heat oven to 350°F.
  • Spray 2-3 quart casserole with non-stick cooking spray.
  • Cook noodles as directed on package.
  • Brown beef with garlic until cooked through.
  • Drain.
  • Add salt, sugar and tomato sauce and simmer for 5 minutes.
  • Combine sour cream, cream cheese and onion.
  • Layer 1/2 of the noodles then 1/2 of the meat mixture in casserole dish.
  • Spread with sour cream mixture.
  • Top with remaining noodles and the tomato sauce.
  • Bake for 30 minutes.
  • Sprinkle grated cheese on top and bake for another 5 minutes.
  • ENJOY!
