RODNEY SCOTT'S BBQ SAUCE
Recipe for the famous "Rodney's Sauce."

Steps:
- Pour the vinegar into a small saucepan and warm it over medium-high heat.
- When the vinegar reaches 150° on an instant-read thermometer (about 5 minutes), add the lemon slices, and continue to cook until the lemons are slightly translucent, about 10 minutes more.
- Whisk in the black pepper, cayenne, red pepper, and sugar.
- Continue to cook over medium-high heat until the sugar is completely dissolved and the sauce reaches 190°, about 10 minutes.
- Remove from the heat and allow it to completely cool before using. The sauce keeps in the refrigerator for one month.

DAD'S BBQ ROAST
Dad gave me this recipe when I was still in University years ago. It's so easy, I still remember it! Perfect for summer dinner parties - not a 'beautiful' presentation but, the taste and smell MORE than make up for that. Easily halved or doubled. Try it with a grainy or spicy mustard. Be sure to save the juices and 'gravy' to spread on sandwiches the next day.

- In a small bowl, mix together the mustard and onion soup mix. Lay out two long sheets of aluminum foil crosswise. Pat the roast dry, and place in the center of the foil. Generously coat the roast with the mustard mixture. Wrap the foil tightly around the roast, then apply one more piece of foil to really seal it in so that the roast can be rotated without all of the juices spilling out. This process may be done as early as the morning before.
- Prepare an outdoor grill for indirect heat. For charcoal, light the coals, then move to one side of the grill. For gas, light only one burner, and cook on the unlit side.
- Place the roast on the grill, and cover. Cook for about 2 hours, turning every 30 to 45 minutes, or until the internal temperature is at least 145 degrees F (63 degrees C).
- Let stand for about 10 minutes before carving. Place on a deep serving plate before unwrapping so you can be sure to save the juices and mustard rub to slather on the beef slices.

FATHER'S DAY BBQ SAUCE

Steps:
- In a medium saucepan, heat oil over medium heat. Add onion and garlic. Cook, stirring, until onion is soft and translucent, about 5 minutes.
- Stir in tomatoes, chile, Worcestershire, vinegar, molasses, and lemon juice. Simmer over medium-low heat until reduced by a fourth, stirring occasionally, about 45 minutes.
- Working in batches, purée sauce in a blender. Season with salt and black pepper. Refrigerate in a jar up to 2 weeks.
DAD'S BBQ SAUCE
This sauce was my departed FIL's. He was quite proud of his smoked pork. It was a day long process cooking the meat while this sauce simmered inside. He would shred the pork, place on a burger bun, drizzle with this sauce, plop on some coleslaw (Mayo base) put the lid on the bun, then wait for the compliments. They were never in short supply!

- Dissolve cornstarch in water.
- Place all ingredients in large pot and simmer at least 30 minutes.
- Pureed fruit or fruit juice may be added.
- This makes a large batch of sauce. Leftovers should be refrigerated. If I am having guests I'll send a small jar home with them if they like the sauce.

DAD'S BARBECUE SAUCE
My father was the cook in the family. Any time we would go out to eat, he would come home and try to make a copy cat version. This is his barbecue sauce. I have never purchased any in the store because none of it comes close to this flavor. Don't let the long list of ingredients scare you. They are standard pantry items. It's easy to double the ingredients so you will have some always on tap!

- In large pot, saute shallot in bacon fat till it turns glassy.
- With heat on medium, add remaining ingredients.
- Simmer til sauce bubbles. If necessary, add water to thin sauce to your desired consistency.
- Pour up, refrigerate and enjoy!
- This is excellent on chicken for the grill.

- 1. In a deep saucepan, sauté both types of onions in a little olive oil until tender over medium-high heat.
- 2. Add the rest of the ingredients and bring to a boil. Lower heat to medium-low and continue to simmer until mixture has thickened, about 30 minutes. Stir occasionally. Keep refrigerated.
