BIG DADDY'S APPLE COBBLER

Butter, for dish
6 cups Granny Smith apples, peeled, cored and diced
1/2 cup granulated sugar
1/4 cup dark brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Pinch salt
Pinch ground nutmeg
1/2 lemon, juiced
Ginger Whipped Cream, recipe follows
2 tablespoons butter, softened
1/2 cup self-rising flour
1/2 cup sugar
Pinch salt
Pinch ground ginger
1 egg, beaten
1 cup whipping cream, chilled
1/4 cup confectioners' sugar
1/4 cup candy ginger, minced

Steps:

  • Preheat oven to 375 degrees F.
  • Lightly butter a 9 by 9-inch baking dish.
  • In a large bowl, mix together the apples, sugars, flour, cinnamon, vanilla, salt, nutmeg and lemon. Add the mixture to the prepared baking dish.
  • Add all the topping ingredients to a medium bowl and combine well with a wooden spoon, to form a batter. Dollop the batter in various spots on top of the apple mixture. The batter will spread as it bakes. Put the cobbler in the oven and bake until the apples are tender and the crust is colored, about 30 minutes. Remove from the oven and serve with Ginger Whipped Cream.
  • Add the cream and sugar to a medium bowl. Using a hand-held electric mixer, beat the cream until stiff peaks form, about 2 to 3 minutes. Fold in the ginger. Cover and chill up to 4 hours before serving.

When I was growing up one of my Dad's favorite desserts was blackberry cobbler. The only place we would find a good cobbler was at my Aunts house in Oklahoma! The first time I made this for my Dad he actually had tears in his eyes he enjoyed it so much! I'm not completely sure where I found this... but this is what our family refers to this recipe by....

1 1/4 cups sugar
2 tablespoons cornstarch
2 tablespoons quick-cooking tapioca
6 cups blackberries, fresh, rinsed and drained (I've never used frozen)
1 teaspoon grated lemon peel
1 tablespoon lemon juice
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup cold butter, cut in chunks
1 cup whipping cream

Steps:

  • In a large bowl, combine 1 cup sugar, cornstarch, tapioca, blackberries, lemon peel, and lemon juice. Mix gently to coat. Pour into a shallow 3- to 4-quart baking dish.
  • In another bowl, mix flour, baking powder, salt, and remaining 1/4 cup sugar. With your fingers or a pastry blender, rub or cut butter into flour mixture until coarse crumbs form. Add cream and stir just until mixture forms a soft, crumbly dough.
  • Pat 1/4-cup portions of dough into flat disks 1/2 inch thick and arrange evenly over fruit.
  • Bake in a 350º oven until topping is golden brown and fruit is bubbling, 45 to 55 minutes. Serve warm or at room temperature.

This recipe has been handed down in my husband's family for generations. Whenever we need an easy go to recipe for an outing, this is the one we choose. It has all the right elements to make it a crowd pleaser. Everyone in our family fights for the corner pieces because the butter makes a crispy edge that is amazing!

1/2 cup(s) butter, cold
1 cup(s) sugar
3/4 cup(s) all purpose flour
2 teaspoon(s) baking powder
1 pinch(es) salt
3/4 cup(s) milk
2 cup(s) fresh or canned (drained) peaches

Steps:

  • Melt butter in 8 or 9 inch square baking dish. In medium size bowl, combine sugar, flour, baking powder, salt, and milk. Stir together until combined but do not overmix. Pour mixture over melted butter. DO NOT STIR. Place sliced peaches evenly over batter. DO NOT STIR.
  • Bake in 350 oven 45 - 50 minutes.

This is the easiest and the best tasting cobbler ever! Any kind of fruit can be used - fresh, frozen or canned. My husband likes it with ice cream, but, I like it plain or with just a little milk.

3 -4 cups fruit (if using canned, drain first)
1/2 cup butter or 1/2 cup margarine
2 teaspoons baking powder
1/4 teaspoon salt
1 cup sugar
3/4 cup flour
3/4 cup milk

Steps:

  • Melt butter in a glass 8x8 baking dish.
  • Mix all dry ingredients. Add milk and mix until smooth.
  • Pour mixture over melted butter - DO NOT STIR!
  • Put fruit on top of mixture.
  • Bake at 350 degrees for 1 hour
  • Serve warm.
