DADDY'S HOLIDAY BEST FRUIT SALAD
What a lovely recipe... The crunchy pecans and sweet coconut remind me of the salads I enjoyed in my childhood. This is a sweet treat for all the senses.

Steps:
- 1. Drain syrup from canned fruits and set aside. Chop apple into medium dice and coat with lemon juice to stop browning. Optional: Slice banana if using. Supreme the orange and cut slices into thirds. Drain juice from cherries and set aside. Half cherries. Mix all ingredients together. Add about a 1/4 cup cherrie juice.
- 2. If adding banana, coat with lemon juice to keep from browning. Refridgerate before serving. Serve with Cool Whip or Whipped cream.
DADDY'S APPLE SALAD

- In a large bowl, whisk together the salad dressing, peanut butter and sugar until smooth. Add the vinegar, whisking until dressing is creamy. Add additional vinegar to get creamy consistency, if necessary.
- Add the apples, grapes, peanuts, marshmallows, raisins and celery to the dressing mixture and toss until evenly coated. Serve immediately.

APPLE DANDY SALAD
This is a tasty salad for any type of dinner or potluck. You will get a lot of compliments on it!

- Mix together cream cheese, mayonnaise and sugar. Add chopped apples, crushed pineapple, pecans and cherries. Fold in Cool Whip. Chill for at least two hours before serving. YUMMO!!
BIG DADDY'S APPLE COBBLER
Steps:
- Directions Preheat oven to 375 degrees F. Lightly butter a 9 by 9-inch baking dish. In a large bowl, mix together the apples, sugars, flour, cinnamon, vanilla, salt, nutmeg and lemon. Add the mixture to the prepared baking dish. Add all the topping ingredients to a medium bowl and combine well with a wooden spoon, to form a batter. Dollop the batter in various spots on top of the apple mixture. The batter will spread as it bakes. Put the cobbler in the oven and bake until the apples are tender and the crust is colored, about 30 minutes. Remove from the oven and serve with Ginger Whipped Cream. Ginger Whipped Cream • 1 cup whipping cream, chilled • 1/4 cup confectioners' sugar • 1/4 cup candy ginger, minced Add the cream and sugar to a medium bowl. Using a hand-held electric mixer, beat the cream until stiff peaks form, about 2 to 3 minutes. Fold in the ginger. Cover and chill up to 4 hours before serving.
