BUTTERNUT SQUASH RISOTTO

Number Of Ingredients 13

3 cups peeled butternut squash, cut into one inch dice (approximately 1 large squash)
1 tablespoon unsalted butter
1 tablespoon extra virgin olive oil
Pinch of salt
1 tablespoon chopped fresh sage
2 tablespoons unsalted butter
2 tablespoons extra virgin olive oil
½ large onion, finely diced (about 1 cup)
1 cup Arborio rice
1/3 cup dry white wine
2 ½ cups chicken stock (or more if needed)
¾ cup grated parmesan cheese
Salt and pepper to taste

Steps:

  • In a large sauté pan over medium heat, melt the 1 tablespoon each of butter and olive oil. Add the cubed squash and salt and sauté 10-15 minutes stirring occasionally. Once the squash is slightly browned and tender, add the chopped sage and sauté for one more minute. Remove from the heat and set aside.
  • In a medium heavy-bottomed saucepan, melt the butter and olive oil together over medium-high heat. Add the diced onion and sauté for 5 minutes, until the onions are translucent.
  • Add the Arborio rice, stirring frequently for 2-3 minutes until the rice is just starting to turn lightly golden.
  • Quickly pour in the white wine and allow the liquid to boil and be absorbed into the rice. Then pour in ¼ cup of chicken stock to the rice, stirring constantly. (If necessary, adjust the heat under the pot - you want a medium simmer.) Add more stock ¼ cup at a time - adding more just as most but not all of the liquid is absorbed before adding in more stock.
  • Cook the rice and stock together in this manner for approximately 25 minutes or so - until the rice is tender but not mushy. Turn the heat off when there is still some liquid remaining in the rice and stir in the parmesan cheese and cooked squash and salt and pepper to taste. Stir to combine completely.

1 small butternut squash (about 1 pound), trimmed and peeled
3/4 cup mild oil, preferably sunflower-seed oil
1/4 small onion, diced
Coarse salt
1 1/2 pounds (3 cups) Carnaroli or Vialone Nano rice
8 cups hot Vegetable Broth
1 cup freshly grated Parmigiano-Reggiano cheese
1 tablespoon unsalted butter
Aged balsamic vinegar, for drizzling

Steps:

  • Cut squash lengthwise, and scoop out the seeds and fibers. Cut each half into 4 pieces. Using a knife or mandoline, slice squash pieces 1/8 inch thick. Set aside.
  • In a medium, heavy-bottomed saucepan, heat oil over medium heat. Add onion, and cook, stirring, until soft, about 3 minutes. Add squash, season with salt, and add enough water to cover. Cook, simmering, until squash easily breaks apart, about 20 minutes. Stir in rice, then add a cup of broth. Bring to a boil, and cook, stirring often, for 8 minutes, adding one cup of broth at a time, as necessary; the rice should almost completely absorb the broth between additions.
  • Add cheese, stirring to incorporate, then continue cooking, adding broth as necessary, until rice is al dente and mixture moist but not watery, about 8 minutes more. Remove the pan from the heat. Stir in butter, and adjust the seasoning with salt, if necessary. Divide risotto between 6 serving plates, and drizzle with vinegar. Serve immediately.

2 cups cubed butternut squash
2 tablespoons butter
½ onion, minced
1 cup Arborio rice
⅓ cup dry white wine
5 cups hot chicken stock
¼ cup grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Place squash cubes into a steamer basket in a saucepan. Add water, cover, and bring to a boil over medium-high heat. Allow to steam until the squash is tender (10 to 15 minutes), then drain, and mash in a bowl with a fork.
  • Melt butter in a saucepan over medium-high heat. Add onion; cook and stir for 2 minutes until the onion begins to soften, then stir in the rice. Continue cooking and stirring until the rice is glossy from the butter, and the onion begins to brown on the edges, about 5 minutes more.
  • Pour in the white wine; cook, stirring constantly, until it has evaporated. Stir in the mashed squash and 1/3 of the hot chicken stock; reduce heat to medium. Cook and stir until the chicken stock has been absorbed by the rice, 5 to 7 minutes. Add half of the remaining chicken stock, and continue stirring until it has been absorbed. Finally, pour in the remaining stock, and continue stirring until the risotto is creamy. Finish by stirring in the Parmesan cheese, and seasoning to taste with salt and pepper.

1 tablespoon olive oil
1 medium onion, finely chopped
1 ½ cups Arborio rice
½ cup dry white wine
1 pound mashed, cooked butternut squash
8 tablespoons finely shredded Parmesan cheese, divided
2 tablespoons chopped fresh sage
salt and ground black pepper to taste

Steps:

  • Pour broth in a medium saucepan, cover, and heat over medium-low heat until warm, about 10 minutes.
  • Heat oil in a large saucepan over medium heat. Add onion and cook until translucent, 6 to 8 minutes. Add rice; cook and stir for 1 minute. Add wine and simmer, stirring constantly, until absorbed, about 2 minutes. Add 1/2 cup warm broth and simmer, stirring frequently, until it is absorbed, about 5 minutes. Repeat with remaining broth, adding 1/2 cup at a time and stirring until all broth is absorbed and rice is tender and creamy, about 25 minutes more.
  • Meanwhile, puree cooked squash. Add pureed squash to rice with 6 tablespoons Parmesan cheese, sage, salt, and pepper. Stir until cheese is melted. Garnish with remaining Parmesan and serve immediately.
