Teriyaki marinade (approximately 4 ounces)
1/4 cup mirin
1/4 cup soy
2 cloves minced garlic
1 (6-pound) beef roast
12 peeled garlic cloves
1 cup olive oil
2 tablespoons salt
Coarsely ground fresh black pepper

Steps:

  • For the marinade:
  • Whisk the mirin, and soy together along with the 2 cloves of minced garlic.
  • For the roast:
  • Using a butcher knife, penetrate the roast. (Spread the holes evenly around the roast.) Insert a sliced garlic clove deep into each penetration. Place into a large bowl and rub the roast with a light coating of olive oil. Salt and pepper the entire roast evenly. Pour the garlic Teriyaki sauce over the roast. Roll the roast around in the garlic Teriyaki. (try to make sure that the garlic teriyaki gets deep into the penetrations in the roast as well). Let the roast marinate over night.
  • Adjust rotisserie coals for indirect heat.
  • Tie down the roast on your rotisserie, and discard marinate. This should preheat to 375 degrees F to char the outside and then cook at 350 degrees F or about an hour. This roast should be served medium rare.

For the Beef:
Parasol's Style Roast Beef Po Boy Recipe
2 lbs Beef Round, I used a bottom round Roast
Water, enough to cover by one inch in a dutch oven
For the Gravy:
1/2 Cup Flour
1 Tbsp Garlic Powder (must be powder, not granulated)
1 tsp Black Pepper
2 tsp Kosher Salt
1/4 Cup Oil
1 tsp Kitchen Bouquet
3 Cups Broth, reserved from the boiled beef (maybe more if your gravy gets too thick)
For the Po Boy:
2 ten inch French Loaves, see article above
Mayonnaise
2 Tomatoes, sliced
2 Cups shredded Iceburg Lettuce
1 Dill Pickle, sliced
The Roast Beef from the above recipe

Steps:

  • Bring the water to a rolling boil. Add the beef roast, when the pot comes back to a boil, reduce the heat to medium to medium high, you should have a heavy simmer. Cook for about 1 to 1 1/2 hours. Remove from the liquid and refrigerate until cold. Reserve about five cups of the broth, you won't need all of it, but keep some to thin the gravy out if necessary. While the beef is cooling make the gravy. Bring 3 cups of the reserved cooking liquid to a boil in a small saucepan. In a small bowl whisk together the flour, garlic powder, black pepper, salt, then the oil and kitchen bouquet, when thoroughly blended, whisk the mixture into the boiling broth, whisk together well, and bring to a boil, then reduce to a simmer. If necessary add a little of the reserved broth if the gravy is too thick. It should be. not too thick, not too thin. Let the gravy simmer for 20-30 minutes adjust for seasonings, it should have a good amount of salt as the beef has none. Preheat the oven to 350 F. When the beef is cold, slice it as thin as possible and lay the slices in a 9X9 baking pan. The thicker your slices are, the longer it will take in the oven, so slice thin. or your hungry ass will be waiting. Cover the beef with 2-3 cups of the gravy. Place into the oven 45 minutes to 1 hour, or until the beef is fall apart tender. Slice the bread in half lengthwise and lay both halves side by side. Slather a bunch of mayonnaise on both sides (I'll be the cholesterol devil on your shoulder: Come on, your doctor's not lookin', don't be stingy!). On the top half, add pickle slices, tomato slices, and 1 Cup of the lettuce. On the bottom half, add 1/2 of the beef and gravy mixture (please note, I super-sized the amount of beef in this recipe). Fold the top over the side with the beef and put on a sheet pan. Repeat with the second sandwich. Place the sheet pan in the oven for 2-3 minutes to crisp and warm the bread. Cut each sandwich in half and serve on paper plates for authenticity. Serve with your favorite cold beer, Barq's in a bottle, Zapp's chips, and a big ole' pile of napkins. Enjoy! Serves 2 hungry eating machines, or 4 light weights.

5 pounds short ribs
1 tablespoon chile powder
1 tablespoon ground coriander
1 tablespoon ground cumin
1 large onion, roughly chopped
2 large carrots, peeled, roughly chopped
6 cloves garlic
3 large slices ginger
4 whole Thai bird chiles
2 cups dry red wine
1 cup sweet soy sauce (kechap manis)
1/2 cup dark soy sauce
3 sprigs fresh thyme
1 to 2 quarts water to cover
1/2 cup chopped scallions
1/2 cup cilantro
Salt and black pepper to taste
Canola oil to cook
1/2 to 2/3 cup lard or duck fat/vegetable shortening
1 teaspoon baking powder
2 cups masa harina
1 teaspoon ginger powder
2/3 cup water plus extra
2 teaspoons salt
Corn husks, soaked and/or banana leaves
2 tablespoons butter
2 sweet potatoes*, fine 1/8-inch dice
2 minced shallots
Salt and black pepper to taste
1/2 cup white wine
1/2 cup chicken or vegetable stock

Steps:

  • Mix chile powder, coriander and cumin. Season the ribs with salt and pepper and rub the spice mix all over. On a hot, oiled grill, grill the ribs until all sides are well browned. Meanwhile, in a medium stock pot, coat with oil and brown onions, carrots, garlic, ginger and chiles. Deglaze with wine and reduce by 50 percent. Add back the ribs, soy sauces, thyme and water to cover. Check for seasoning. The flavor of the liquid will be the ultimate flavor of the ribs. Bring to a boil and simmer for 2 1/2 to 3 hours, until meat is tender and falling off of the bone. Remove ribs from liquid. Strain liquid and reduce by 20 percent. Return ribs to sauce, keep hot and add scallions and cilantro
  • Use a mixer fitted with a paddle at high speed and beat lard with baking powder until fluffy. While still beating, add masa and ginger powder gradually. Slowly add the water and salt. Final consistency should be of soft cake batter and shape should hold a spoon. Test: float a teaspoon of the mix in water. Fold in sweet potatoes*. Fold tamales like usual, and place in a bamboo steamer. Steam until coo

This is my mother's recipe, and a favorite of everyone who's ever tasted it. It takes a long time to cook, but very little prep. Start it in the morning, and you'll have a delicious meal waiting for you in the evening. Don't worry about using an expensive roast. The cheap tough ones turn out beautifully.

5 lbs round roast
1 (425 ml) bottle barbecue sauce (we prefer Bull's Eye original)
4 fresh garlic cloves, minced
pepper
18 kaiser rolls

Steps:

  • Place frozen roast in roasting pan.
  • Heat, uncovered, at 450 degrees for 45 minutes (30 minutes for smaller roast).
  • Remove roast from oven, and season with garlic and pepper.
  • Cover, decrease heat to 275 degrees, and roast for approx 4 hours until fork tender.
  • Pull apart roast with fork.
  • Layer ingredients into slow cooker (1 layer beef, 1 layer au jus from roasting pan, 1 layer BBQ sauce). Repeat until all ingredients have been added.
  • Heat on low until warmed through and bubbling (2-3 hours).
  • Spoon onto sliced Kaiser rolls, and enjoy!
