CUTE CRANBERRY TANGERINE MUFFINS

When my dad brought home a bag of cute little tangerines, I needed a way to use them up quickly, so I composed this yummy, crumbly muffin recipe filled with loads of tangerine sweetness and just enough cranberry tartness!

1 cup dried cranberries
¼ cup fresh tangerine juice
2 cups unbleached all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
2 tablespoons tangerine zest
1 cup white sugar
2 large eggs
½ cup milk
1 teaspoon white sugar, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper liners.
  • Simmer dried cranberries and tangerine juice in a small saucepan over medium heat; remove pan from heat and set aside to cool.
  • Whisk flour, baking powder, and salt into a bowl. Mix butter, tangerine zest, and 1 cup sugar in a separate large bowl, using an electric mixer, until mixture is light and fluffy, about 2 minutes. Scrape down sides of bowl and beat eggs into butter mixture, one at a time, until thoroughly combined.
  • Gently fold flour mixture into the butter mixture, alternating with milk in two additions, until batter is just mixed. Fold cranberries and juice into batter. Pour batter into prepared muffin cups and top with 1 teaspoon sugar.
  • Bake in the preheated oven until muffins are golden brown, 20 to 25 minutes. Cool in pan on a rack.

Number Of Ingredients 11

2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup vanilla yogurt
1 large egg, room temperature, lightly beaten
1/4 cup butter, melted
2 tablespoons 2% milk
1 cup diced peeled tangerine
1 tablespoon grated tangerine zest

Steps:

  • In a bowl, combine the first 5 ingredients. In a small bowl, combine the yogurt, egg, butter and milk until smooth; stir into dry ingredients just until moistened. Stir in tangerine and zest. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° until a toothpick comes out clean, 18-20 minutes. Cool for 5 minutes before removing from pan to wire rack

1 (8 ounce) carton vanilla yogurt
1 egg, lightly beaten
1/4 cup butter, melted
2 tablespoons milk
1 cup diced peeled tangerine
1 tablespoon grated tangerine peel

Steps:

  • In a bowl, combine first 5 ingredients.
  • In a small bowl, combine the yogurt, egg, butter and milk until smooth; stir into dry ingredients just until moistened.
  • Stir in tangerine and peel.
  • Fill greased or paper-lined muffin cups two-thirds full.
  • Bake at 400 degrees for 18-20 minutes.
  • Cool for 5 minutes before removing from pan to wire rack.

2 cups all-purpose flour
1 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon salt
2 teaspoons grated orange zest
1/2 cup shortening
3/4 cup orange juice
2 large eggs, room temperature, lightly beaten
1 tablespoon vanilla extract
1-1/2 cups coarsely chopped cranberries
1-1/2 cups chopped pecans

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, nutmeg, cinnamon, baking soda, ginger, salt and orange zest. Cut in shortening until crumbly. In a small bowl, combine the orange juice, eggs and vanilla. Stir into dry ingredients just until moistened. Fold in cranberries and nuts., Fill 18 greased or paper-lined muffin cups two-thirds full. Bake at 375° until a toothpick inserted in the middle comes out clean, 18-20 minutes. Cool in pans for 10 minutes before removing to wire rack. Serve warm.

2 cups all-purpose flour
3/4 cup packed brown sugar
2 teaspoons baking powder
2 large eggs
2/3 cup orange juice
1/3 cup vegetable oil
1 cup cranberries, coarsely chopped
1 cup chopped pecans

Steps:

  • preheat oven to 375°. In a large bowl, combine flour, brown sugar and baking powder. In another bowl, beat eggs. Add orange juice and oil; stir into the dry ingredients just until moistened (batter will be lumpy). Fold in cranberries and pecans. 2 cups all-purpose flour
2 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 cup milk
1/4 cup butter, melted
1 cup jellied cranberry sauce

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the eggs, milk and butter. Stir into dry ingredients just until moistened., Fill 12 greased muffin cups one-fourth full. Drop a rounded tablespoonful of cranberry sauce into each cup. Top with remaining batter., Bake at 400° for 12-15 minutes or until muffin tops spring back when lightly touched. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

  • Preheat oven to 375 degrees. Lightly grease the rims of your muffin tins and then line them with a paper liner. If you don’t grease the edges, the muffins will stick to your pan as they rise. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
  • In your electric mixer, beat together the butter and sugar until light and fluffy, about 3 minutes, scraping down the sides of the bowl about half way through. Add the eggs, one at a time, and scrape down the bowl after each egg is added.
  • Add half of the flour mixture and mix in, then mix in a third of the yogurt. Mix in half of remaining flour then half of the remaining yogurt. Repeat one more time with remaining flour mixture and yogurt. Do not over-mix! Add the cranberries and fold them in by hand with a rubber spatula.
  • Divide the batter evenly between your 12 muffins. The batter will be piled above the top of your liners, but that is how it is supposed to be. Bake for 25-30 minutes and golden brown. Remove from the pan to cool.
