1 loaf (1 pound) French bread
4 cups chicken, ham or tuna salad
1 package (8 ounces) cream cheese, softened
Yellow liquid or paste food coloring
2 ripe olive slices
3 pimiento strips
1 medium green pepper, sliced into rings
2 medium carrots, shredded

Steps:

Cut the top fourth off the loaf of bread. Carefully hollow out top and bottom of loaf, leaving a 1/2-in. shell (discard removed bread or save for another use). Fill shell with salad mixture. Replace bread top. Combine cream cheese and food coloring; spread over top and sides of loaf. Place olives at one end for caterpillar's eyes. Arrange pimiento strips to form a mouth. Cut one pepper ring into two 3-in. pieces; insert above eyes for antennae. Cut each remaining pepper ring in one place; place over loaf a few inches apart, trimming ends if necessary. Sprinkle carrots next to the rings. Serve immediately.

These squiggly little sandwiches are almost too cute to eat, but budding entomologists gobble them up with enthusiasm! They look great on small rectangular plates and kids just love them. This is a great recipe for kids of all ages to help prepare. They take about 20 minutes to assemble....and minutes to devour.

1 medium green peppers or 1 medium yellow sweet pepper
6 spinach tortillas (7-8 inches)
3/4 cup peanut butter or 3/4 cup cream cheese
1/3 cup grape jelly or 1/3 cup strawberry jelly
6 cherry tomatoes
cheddar cheese, cut into matchstick pieces

Steps:

Use a vegetable peeler to peel carrots, Use a sharp knife to cut carrot crosswise into fourths. Cut 1-inch matchstick pieces of carrot or pepper (you should have 48 sticks).
Use a table knife to spread each tortilla with 2 tablespoons of the peanut butter or cream cheese and about 1 tablespoon of the jelly. Roll up tortillas to form spirals; press lightly to seal.
Put the rolled tortillas on a cutting board. Cut each tortilla crosswise into five pieces.
On each of the six plates, arrange five tortillas pieces side to side, in a wavy line, with cut side down to resemble a caterpillar. To make a caterpillar head put a tomato at the end and insert pieces of cheddar cheese in tomato for antennae. To make legs, arrange four carrot sticks on each side of caterpillar.

This is a great cake to do after a unit on bugs, wildlife, etc. Have the kids help decorate it! Use licorice whips for antennas, or gumdrops. Spread icing around caterpillar and sprinkle green tinted coconut for grass. Use any flavor cake mix or any Bundt cake recipe.

1 (18.25 ounce) package yellow cake mix
1 (16 ounce) package vanilla or colored frosting
½ cup flaked coconut

Steps:

Prepare cake according to package instructions and bake in a Bundt pan. Cool and invert onto cutting board.
Cut a piece of cardboard large enough to accommodate two Bundt pans. Cover with aluminum foil.
Carefully cut the cake in half and place on cardboard in an "S" shape.
Decorate with colored icing, candies, etc.
