Currywurst is a popular 'fast food' in Berlin, Germany. It is quick and simple and everyone loves it! If you're in a hurry, you can substitute ketchup for the sauce, or use your own recipe.

3 (15 ounce) cans tomato sauce
1 pound kielbasa
2 tablespoons chili sauce
½ teaspoon onion salt
1 tablespoon white sugar
1 teaspoon ground black pepper
1 pinch paprika
Curry powder to taste

Steps:

  • Preheat oven to Broil/Grill.
  • Pour tomato sauce into a large saucepan, then stir in the chili sauce, onion salt, sugar and pepper. Let simmer over medium heat, occasionally stirring; bring to a gentle boil and reduce heat to low. Simmer another 5 minutes.
  • Meanwhile, broil/grill kielbasa sausage for 3 to 4 minutes each side, or until cooked through. Slice into pieces 1/4 inch to 1/2 inch thick.
  • Pour tomato sauce mixture over sausage, then sprinkle all with paprika and curry powder and serve.

Created in postwar Berlin in 1949, currywurst originated as a "poor man's steak," cobbled together using sausages, canned tomatoes and curry powder. Today, it's a popular street food across Germany, although how you enjoy it depends on the vendor and your preferences: The sausages can be served with or without skin, and you can request your currywurst sauce to be scharf (hot) or even extra-scharf. In traditional German currywurst sauces, tomatoes and vinegar provide acidity, sugar or juice lend sweetness and mild curry powder adds spice (although some adventurous cooks add other aromatics and spices, like mustard powder, hot chile or even lemongrass). This recipe, adapted from Alfons Schuhbeck's "The German Cookbook" (Phaidon, 2018), is a great introduction, not too spiced or too sweet, and can be customized according to taste.

4 tablespoons olive oil
1 small yellow onion, finely chopped
1 1/2 tablespoons light brown sugar
1 tablespoon mild curry powder, plus more for sprinkling
1 teaspoon ground sweet paprika
1 (2-inch) cinnamon stick
1 small dried chile de árbol
2 tablespoons tomato paste
1 (14-ounce) can diced tomatoes with their juices
3/4 cup vegetable stock
2 tablespoons apple cider vinegar or white wine vinegar
Kosher salt, to taste
6 to 8 fresh bratwurst sausages, knockwurst sausages or hot dogs
1 tablespoon neutral oil, such as canola or vegetable
French fries, for serving (optional)

Steps:

  • Prepare the currywurst ketchup: In a large skillet, heat 1 tablespoon olive oil over medium. Add the onion and sauté, stirring occasionally, until softened, about 5 minutes. Add the brown sugar and cook, stirring occasionally, until the onion is caramelized, about 5 minutes. Stir in 1 tablespoon curry powder, paprika, cinnamon and chile and cook until just fragrant, about 1 minute. Stir in the tomato paste, then add the chopped tomatoes and their juices, stock and vinegar. Cook, stirring occasionally, until thickened, 10 to 15 minutes.
  • Discard the cinnamon stick and chile de arbol, then transfer tomato mixture to a blender and purée until smooth. Blend in the remaining 3 tablespoons olive oil in a steady stream. Season to taste with salt. (This makes about 2 cups of sauce.)
  • Meanwhile, using the tines of a fork, lightly poke a few holes in the skin of the sausages on all sides to allow air to escape as the sausages cook. Heat the neutral oil in a large skillet over medium heat. Add the sausages and pan-fry, rotating until lightly browned on all sides, about 8 to 10 minutes, depending on what type of sausage you select. Let rest for 5 minutes.
  • Slice the sausages on an angle into thick coins, if desired, and divide the sausages among the plates. Transfer the curry sauce to a squeeze bottle and drizzle on top of the sausages (alternately, you can simply drizzle the curry sauce on top using a spoon). Sprinkle with additional curry powder, if desired, and serve with French fries.

For ages now, I have been hearing tale of the fabled currywurst which is popular street food in parts of Germany. Our local supermarket (Lidls...German owned) briefly did a microwave version and we actually liked it a good deal. It is firmly in the good junk food category. I wanted to find a recipe for a 'real' version rather than one that goes ding in the microwave. So, I found this one and am putting it here for next time.

5 knockwurst
1 tablespoon butter
2 (8 ounce) cans tomato sauce
1 tablespoon curry powder
1 teaspoon paprika
1/2 teaspoon sugar
1/4 teaspoon onion powder

Steps:

  • Place butter medium saucepan and melt over medium heat.
  • Slice links in rounds about 1/2 inch thick. Place rounds into pan and brown, stirring often.
  • Stir in tomato sauce.
  • Add in all seasonings and mix well.
  • Lower heat to medium-low, cover and allow to cook for 10 minutes. Stir occasionally to prevent burning.
  • Check flavor and add curry at your discretion.
  • Lower temperature and simmer for 20 minutes more.
  • Serve with french fries on the side, adding enough sauce to dip fries. You may also like to sprinkle some curry onto the wurst for garnish.

1 (12 ounce) package hot dogs
3/4 cup ketchup
1/4 cup onion, diced (or onion powder)
1 tablespoon honey
1 tablespoon strawberry jam
1 tablespoon honey mustard
1 teaspoon Worcestershire sauce
1 teaspoon balsamic vinegar
1 teaspoon sugar
1 teaspoon curry powder
1 dash cayenne pepper
1 ounce water

Steps:

  • Dice onions very very small (or use onion powder) and saute in olive oil or butter.
  • Ad all other ingredients except the water and stir constantly while heating for 5 minutes.
  • Ad water and reduce heat to a small simmer.
  • Ad sugar if needed (the sauce should be on the sweet side with just enough kick from the curry and the cayenne).
  • Cut hotdogs into bite size pieces and saute golden brown. (if you use brats saute or grill brats in one piece and dice when done).
  • Pour curry sauce over sausage pieces on the plate, sprinkle some curry powder on top.
  • Best served with french fries.

  • Heat the oil in a small saucepan and cook the onions just until soft and translucent. Do not brown them. Add the garlic and cook for another minute. Add the curry powder, paprika, cloves and cinnamon and cook for 30 seconds. Add all remaining ingredients and bring to a simmer. Reduce the heat to medium, cover and simmer for 15 minutes, stirring occasionally. Use an immersion blender or transfer to a blender and puree until smooth. Let the mixture cool completely and then refrigerate for a day before using to allow time for the flavors to meld.
  • If the sausages are not pre-cooked, first poach them in lightly simmering water. The next step is to grill/fry them to finish them off. You can either grill or pan-fry the sausages.The important thing is to cook them until they develop a thick and crispy browned outer crust. (So if you're pan-frying, be sure to use enough oil.) Some curry wurst stands also cut vertical slits along the currywurst to prevent them from bursting open while cooking and then the sausages are sliced along the lines into bite-sized chunks before serving.
