This is great for French fries, a base for chicken or shrimp salad, or to just dip vegetables or chips. We use it as a dip for shrimp cocktail instead of cocktail sauce. Let chill for 15 minutes before serving.

2 egg yolks
1/4 cup curry powder
1 1/2 tablespoons chutney
1 1/2 tablespoons tarragon vinegar
1 teaspoon freshly squeezed lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1 3/4 cup soy or light vegetable oil, approximately

Steps:

  • Put all the ingredients except the oil in a food processor or mixing bowl. If mixing by hand, it is advisable to chop the chutney into small pieces.
  • Puree or whisk together, slowly adding the oil to reach desired mayonnaise consistency. Taste and adjust salt and pepper seasoning.

Although this recipe states Beef Stock Cubes, my mother always used 'Gravy Salt'... She used to 'bulk' this out by adding more potatoes. When we kids were small and there wasn't much money; she made this with 1/4lb of mince and 5lb of potatoes. As a small child I STILL found it yummy!!

1 onion, chopped
1/2 kg carrot, sliced
1/2 kg minced beef
1 kg potato, cut into small pieces
beef bouillon cube (to personal taste)

Steps:

  • In a large saucepan heat oil over medium heat.
  • Fry carrot & onion in heated oil until onion is soft & translucent.
  • Add mince & stir gently until browned, taking care not to break mince up too much.
  • Barely cover with water and add stock cubes.
  • Add potatoes and more water if necessary to barely cover.
  • Simmer for as long as possible, stirring regularly and adding more water if necessary.
  • Serve with bread and butter.

1/2 cup mango chutney (preferably Major Greys)
1 cup mayonnaise
4 scallions, finely chopped (use whole scallions)
1 tablespoon curry powder
2 -3 limes, juice of
cayenne pepper, ground
1/4 cup yogurt (or sour cream) (optional)

Steps:

  • Chop the chutney if it's chunky and stir it into the mayonnaise along with scallions, curry, and enough lime juice to make it tart but nicely balanced in taste.
  • Stir in a pinch of cayenne, or more if desired. Add yogurt or sour cream if using.
  • Cover and refrigerate for at least 1 hour.
  • Taste before serving to make sure balance is correct and add a little more lime juice if it seems too sweet. Enjoy!
