Recipe video above. This will be an eye opener for you - an incredible creamy coconut curry made with just TWO spices! Hugely economical, this is essentially a streamlined version of Indian Dahl, delivering a similar intoxicating curry flavour but a whole lot less complicated.

50g (3 tbsp) butter (, unsalted (sub 2 tbsp neutral oil))
4 garlic cloves (, finely minced (Note 1))
1.5 tbsp ginger (, finely minced (Note 1))
1 onion (, finely chopped (white, yellow, brown))
2 tbsp curry powder (, mild or spicy (your choice!) (Note 2))
1/2 tsp tumeric powder
1/2 tsp cayenne pepper (, optional)
1 1/4 tsp salt
1/2 tsp black pepper
1 cup dried lentils (, green or brown (or any other dried lentils or split peas, Note 3))
400 ml / 14 oz coconut milk (, full fat)
400g/ 14 oz canned tomato (, crushed or diced)
3 cups (750 ml) water
1/2 cup coriander/cilantro (, finely chopped)
Yogurt (, optional)
Basmati rice ((or other rice))

Steps:

  • Saute onion: Melt butter in a pot over medium heat. Add onion, garlic and ginger. Slowly cook, stirring every now and then, for 10 minutes until tinged with gold and the onion is sweet.
  • Cook off spices: Turn heat up to high, add curry powder and turmeric, stir for 1 1/2 minutes.
  • Add everything else: Add remaining ingredients and stir. Bring to simmer, then place lid on and adjust heat to low / medium low so it's simmering gently.
  • Simmer: Simmer for 30 minutes, then remove lid and simmer for a further 10 minutes to reduce the sauce. {Note 2 for cook times of other lentils}
  • Lentils should be soft, sauce should be thickened and creamy. Too thick, add water. Too thin, simmer with lid off - thickens quickly.
  • Coriander: Stir through half the coriander, then taste and add more salt if needed.
  • Serve over basmati rice, sprinkled with more coriander and a dollop of yogurt. (Low carb option - cauliflower rice).

1 onion, chopped
2 ½ cups water
2 teaspoons curry powder
¾ teaspoon cayenne pepper
1 tablespoon vegetable oil

Steps:

  • In a medium saucepan combine the lentils, onion and water. Cover and bring to a boil. Reduce heat to low and simmer for 25 minutes or until lentils are soft. Pass lentils through a food mill or blend them in a blender.
  • Toast curry powder and cumin seeds in a small skillet over medium heat until fragrant. Add cayenne, oil and garlic. Saute for 1 minute.
  • Stir spice mixture into lentils and serve.

3 c. lentils (reconstituted or canned)
2 cloves garlic, chopped finely
2 tbsp. olive oil
1 tsp. finely chopped ginger root
2 tsp. curry powder
1 tsp. ground coriander
3 tsp. ground cumin
1/4 tsp. chili powder (or more to taste)
pinch salt

Steps:

  • Pour oil into a sauce pan on low heat. When the oil is hot, put in garlic and ginger root. Simmer until browned (2-3 minutes). If the oil starts spitting, pull the pan off the heat and turn down the element.
  • Do not let the oil smoke under any circumstances!
  • Slowly sift in the spices, stirring constantly. Let them simmer for 2-3 minutes. This allows the flavour of the spices to permeate the oil.
  • Finally, pour lentils into the sauce pan and stir, making sure the oil coats the lentils.
  • Allow to simmer at least 20 minutes on low heat. The longer you cook it, the more fully the spices permeate the lentils.
  • If you want a smoother dip, you can mash the daal with the back of a wooden spoon or potato masher before you take them off the heat. If you're feeling very ambitious, you can put it through a blender.
  • Makes 12 4-tbsp servings.

1 tablespoon refined or virgin coconut oil, (or a neutral-flavored oil)
4 cloves garlic, (minced)
2 inch piece of fresh ginger, (peeled and minced or grated)
1 tablespoon minced fresh turmeric, (or 1 teaspoon ground turmeric)
1-2 serrano peppers, diced ((see recipe note below on spice level) )
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon Indian red chili powder ((if you only have regular chili powder, which is a blend, use 1 teaspoon))
2 teaspoons curry powder
1 teaspoon garam masala
Kosher salt or sea salt to taste ((I use about 1 tsp kosher salt, and add more at the end))
Freshly cracked black pepper to taste
1 cup (180-190g) red lentils, (or split red lentils (the split variety will cook a bit quicker))
2 cups (480 mL) low-sodium vegetable broth
1 (14-ounce / 400g) can crushed tomatoes ((or half of a 28-ounce can))
1 (13.5-ounce/400 mL) can full-fat coconut milk
3 tablespoons unsweetened creamy almond butter
1/2 a small lemon, (juiced)
1/2 cup (~8g) fresh cilantro, (roughly chopped)
For serving: Basmati or Jasmine rice and Indian flatbread such as roti, paratha, or naan

Steps:

  • Rinse the lentils in cold water until the water runs clear.
  • Heat a large, deep skillet or large saucepan over medium-high heat and add the coconut oil. Once the oil is shimmering, add the garlic, ginger, fresh turmeric (if using), and Serrano pepper and cook for 2 minutes, stirring frequently to prevent garlic from burning.
  • Add the cumin, coriander, chili powder, curry powder, garam masala, salt, and black pepper to taste, and cook for 30 to 60 seconds until fragrant, tossing frequently to prevent burning. If using ground turmeric instead of fresh turmeric, add the ground turmeric now, along the the rest of the spices.
  • Pour in the vegetable broth, and use a wooden spoon or spatula to scrape up any browned bits on the bottom of the pot. Add in the lentils and the crushed tomatoes and mix well. Reduce the heat to low and cover the pan with a lid. Simmer for 20 to 25 minutes, or until the lentils are cooked through and have mostly softened. If you find that the lentils are not quite soft after 25 minutes, add a few spoons more of broth or water and cook for another 5 minutes.
  • Remove the lid and stir in the coconut milk, almond butter, along with salt and pepper to taste Continue cooking on low heat, uncovered for 5 to 8 minutes, until the curry has thickened and is creamy.
  • Finally, stir in the lemon juice and cilantro, and turn off the heat. If you want your lentils to even creamier and more on the puréed side, use an immersion blender to lightly purée the curry.
  • Serve the curry with rice and/or Indian flatbread and garnish with additional cilantro. Store leftovers in the fridge for 3-4 days.

Steps:

  • Rinse lentils in cold water until it runs clear. Boil 2 cups water in a small pot over medium heat, add lentils, bring to simmer and cook until the lentils are tender, about 20 minutes. Set aside to cool.
  • Combine all the ingredients in a blender or food processor. Blender gives better results.
  • Process until smooth. Add more lentil liquid or water for a smoother hummus. Adjust salt to taste.

2 tablespoons white sugar
1 ½ teaspoons kosher salt
1 large egg, beaten
3 tablespoons unsalted butter, melted
1 ¼ cups water
2 teaspoons vegetable oil
2 tablespoons unsalted butter
½ cup diced yellow onion
2 teaspoons grated fresh ginger
4 cloves garlic, minced
1 ½ teaspoons kosher salt, or more to taste
2 tablespoons curry powder
1 teaspoon ground paprika
1 teaspoon ground cumin
½ teaspoon black pepper
½ teaspoon cayenne pepper
¼ cup tomato paste
3 cups cold water
1 (14 ounce) can full-fat coconut milk
1 cup dried red lentils
¼ cup unsalted butter, melted, or more as needed
2 tablespoons chopped fresh cilantro
1 tablespoon finely chopped serrano pepper

Steps:

  • Combine bread flour, sugar, kosher salt, egg, melted butter, and water for roti canai in a mixing bowl. Mix with your hands until a shaggy dough forms. Transfer to a work surface and knead until a smooth, elastic dough forms, about 7 minutes.
  • Divide dough into 8 equal pieces and form each one into a ball. Coat each ball with vegetable oil, transfer to a plate, and cover with plastic wrap. Refrigerate for 8 hours, to overnight.
  • Melt butter for dip in a saucepan over medium-high heat. Add onion, ginger, garlic, kosher salt, curry powder, paprika, cumin, black pepper, and cayenne pepper; stir together and saute until onion has softened and spices are fragrant, 3 to 4 minutes. Stir in tomato paste and cook until it starts to toast and caramelize on the bottom of the pan, about 3 minutes.
  • Stir in cold water and coconut milk. Add lentils; stir and bring to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, until tender, about 40 minutes. Taste and adjust seasonings. Reduce heat to low and keep warm while you prepare the roti canai.
  • Place 1/4 cup melted butter in a bowl. Transfer rested dough balls onto a lightly oiled work surface. Flatten each ball slightly and rub a little melted butter on top. Cover dough with plastic wrap and let it warm up slightly, about 10 minutes.
  • Press on top of the plastic wrap to flatten warmed dough. Remove plastic wrap and add a bit more butter. Stretch each piece from the center out to get it as thin as possible (until almost see-through), adding more butter as needed. Don't worry if there are a few small tears.
  • Sprinkle on more melted butter, then pull two sides in towards the center until touching and overlapping slightly. Pull the other two edges in the same way to form a square. Cover with plastic wrap and flatten roti canai one more time.
  • Add some melted butter to a skillet set over medium or medium-low heat. Add roti canai and cook until browned, flaky, and crispy on the outside and fully cooked through on the inside, 3 to 4 minutes per side.
  • Remove from the skillet and smush it with your hands to fluff it up and separate the layers of dough. Repeat to cook remaining roti canai.
  • Sprinkle the curried red lentil dip with cilantro and sliced serrano peppers and serve alongside the roti canai.
